Fried Pork Tenderloin Sandwich | Hoosier Favorite
A delicious, if not perfectly authentic, Indiana favorite: the fried pork tenderloin sandwich. Depending on who you talk to, the tenderloin can be either pork loin, which we’re using, or the actual tenderloin. Both are butterflied and pounded thin to nearly the size of a dinner plate. Marinated in buttermilk and a few choice spices, coated in crumbs and fried to perfection, this Hoosier tradition might just become an instant tradition in your house too. I know it immediately became one in mine.

Fried Pork Tenderloin Sandwich
1 double thick pork loin chop, per person, trimmed, butterflied and pounded thin
1-2 cups buttermilk, for the 5 loins, I used close to 2 cups
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon cayenne powder
7-8 cloves garlic, minced
Marinate the pork loins in the refrigerator 4 hours or overnight.
1 sleeve saltines, crushed 1 cup all-purpose flour Combine the flour and cracker crumbs. Place crumb mixture in a large dish. Drain each pork loin and coat liberally in crumbs. Place on a platter to dry for 10 minutes. Heat 1 inch of canola oil or other mild vegetable oil to 365°F, 190°C. Fry one at a time turning once, about 6 minutes total.
Use regular sized hamburger rolls, pork will be much larger than the bun. Use roasted garlic aioli or mayo, tomatoes, lettuce and dill pickles.

Recipe: Fried Pork Tenderloin Sandwich
1 Pork Tenderloin cut into 1&½ inch thick slices pounded down to 3/8 inch thick.
4 Eggs
1 Cup Milk
1 Cup Flour
2 to 3 Cups Panko Bread Crumbs
Coriander
Onion Powder
Salt
Black Pepper
Cooking Oil About ½ inch deep in your fry pan
Buns (Hamburger Buns work well for this)
Sandwich Toppings such as Lettuce, Onion, Tomato, Cheese, Mayonnaise, Mustard, Etc.
Start by cutting the tenderloin into 1 ½ inch thick slices. Place slices into a plastic bag, using a meat mallet or the bottom of a pan pound the slices down until they are about 3/8 of an inch thick. Season the meat with the salt black pepper coriander and onion powder. Break eggs into a bowl and beat together with the milk. After seasoning place cutlets into flour and coat well, next dip cutlets into egg and milk mixture, next coat cutlets in the bread crumbs. Place breaded cutlets into oil at 325 degrees and fry until golden brown on both sides. After cooking place cutlets on a draining rack to drain excess oil and to cool a little.
Now make your sandwich using the toppings you prefer and enjoy what could possibly be the best sandwich you have ever had.

2t. Salt (can be changed more or less to your liking)
2t. Pepper
2t. Garlic Powder
2t. Onion powder
BBQ Sauce
1 can Pineapple slices
Lettuce/Tomato
Hamburger buns
~Slice Pork Tenderloin into 1/2 in - 3/4 in slices.
~Tenderize and flatten pork slices. (use a ziploc bag or plastic wrap to cut down the mess)
~Season pork slices with half of your spices.
~Flip over pork slices and season with remainder of your spices.
~Grill Pork slices 3-4 minutes per side.
~Seer Pinapple.
~Toast Buns.
~Brush Pork Slices with BBQ sauce
~Assemble sandwiches and Enjoy!!
