How To make Blueberry Streusel Cake
2 1/2 c All-purpose flour; sifted
1 ts Baking powder
3/4 ts Baking soda
1/2 c Oat bran
1/2 c Brown sugar, packed
1/2 ts Ground nutmeg
1 ts Ground cinnamon
1/3 c Canola oil
1/4 c Honey; + 1 tab.
1 c Skim milk
1 ts Vanilla extract
5 lg Egg whites; at room temperat
2 tb Granulated sugar
1 pt Fresh blueberries; wash & dr
Vegetable cooking spray
streusal topping:
--combine the following til 3/4 c All-purpose flour
3/4 c Rolled oats; quick
1/2 c Brown sugar, packed
2 tb Vegetable oil
1 tb Shortening
2 tb Honey
Recipe by: Let Them Eat Cake by Virginia N. White Preheat oven to 350F. Spray a 9x13 inch pan with vegetable cooking spray. Sift the flour, baking powder, and baking soda together in a large bowl. Stir in the oat bran, sugar, and spices. Set aside. Beat the oil, honey, milk, and vanilla together and stir well into the dry ingredients. Beat the egg whites until soft peaks form. Fold into the batter. Spread the batter into the prepared pan. Sprinkle the granulated sugar over the blueberries and spread them over the batter. Sprinkle all the streusel topping over the blueberries and batter. Bake for 40 minutes or until cooked through. Let cool. Serves 12. -----

Bake @ 350 degrees F (180 degrees C) for 40-50 mins
Streusel Topping:
50g of Flour
50g of Brown Sugar (optional u can use white)
1 tsp ground Cinnamon
50g cold unsalted Butter
Cake Batter:
50g soften unsalted Butter
20g soften Cream Cheese
80g white Sugar
1 Egg
1 tsp Vanilla Extract
130g of Self Raising Flour (All purpose flour + 1tsp baking powder + 1/4 salt)
70ml Milk
125g of Blueberries

INGREDIENTS:
For the Cake:
3/4 cup sugar
1/4 cup butter, room temperature
1 egg
1.5 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1-2 Tablespoons flour for tossing blueberries
1.5 cups fresh blueberries
For the Cream Cheese Layer:
8 ounces cream cheese at room temperature
1/3 cup sugar
1 egg
1 teaspoon vanilla
For the Topping:
1/4 cup butter (cold and cut into small pieces or frozen & grated)
1/4 cup brown sugar
1/4 cup sugar
1/3 cup all purpose flour
1/2 cup chopped pecans (optional)
INSTRUCTIONS:
For the Cake:
1. Cream butter and sugar together until blended. Add egg and mix well.
2. Blend 1.5 cups flour, baking powder and salt in separate bowl.
3. Toss blueberries in 1-2 Tablespoons of flour in small bowl.
4. Alternate adding and blending the flour mixture with the buttermilk into the egg mixture until well blended.
5. Gently fold in the blueberries and pecans, if desired.
For the Cream Cheese Filling:
1. Blend all ingredients together until smooth.
For the Topping:
1. Blend sugars and flour. Cut butter in with a pastry blender or toss frozen and grated butter into flour mixture.
Assemble and Bake:
1. Spread cake batter in a 9x9 inch square baking pan that has been greased and floured, or sprayed with baking spray like Bakers Joy.
2. Spread cream cheese filling mixture on top.
3. Sprinkle crumb topping over cream cheese layer.
4. Bake 40-50 minutes in a 350 degree (F) oven.
