So I give you The Blueberry Muffin with Crunchy Streusel Topping. These are the perfect quick, simple and delicious treat for when you just need to get your bake on!

Ingredients -
For the Streusel Topping...
45g plain flour
2 tbsp demerara sugar
2 tbsp melted butter
1/4 tsp cinnamon
pinch of salt
For the Muffins...
2 lg eggs
320g buttermilk
70g oil
70g melted butter
270g plain flour
135g caster sugar
65g soft brown sugar
1.5 tsp baking powder
zest of half a lemon
150g frozen blueberries

Ingredients
Makes 12 muffins
1 3/4 cups (220g) all-purpose flour
2/3 cup (135g) sugar
1/4 tsp (1g) salt
2 tsp (8g) baking powder
1/2 cup (110ml) vegetable oil
2 eggs
1/2 cup (120g) buttermilk
1 tsp (5g) vanilla extract
Lemon zest from 1 lemon
7 oz (200g) fresh or frozen blueberries
Crumb Topping
3 tbsp (45g) sugar
1/4 cup (30g) all-purpose flour
2 tbsp (30g) butter, melted

How to Make LOADED Blueberry Streusel Muffins
Anna cooks up a soft, chewy blueberry muffins. This recipe makes 12 regular-sized muffins or 8 jumbo muffins. Click SHOW MORE for recipe instructions and cooking guide.
Streusel Topping Ingredients:
⅓ cup (50 g) all-purpose flour
¼ cup (50 g) packed light brown sugar
¼ tsp (0.75 g) baking powder
¼ tsp (0.75 g) ground cinnamon
3 Tbsp (45 g) cool unsalted butter, cut into pieces
Muffins Ingredients:
½ cup (115 g) unsalted butter, at room temperature
1 cup (200 g) granulated sugar
1 tsp (5 mL) finely grated lemon zest
2 large eggs, at room temperature
2 ½ cups (375 g) all-purpose flour
2 tsp (6 g) baking powder
¼ tsp (1.5 g) salt
¼ tsp (0.75 g) ground nutmeg
½ cup (125 mL) 1% or 2% milk
2 cups (250 g) fresh blueberries
DIRECTIONS
Streusel Topping
1. Preheat the oven to 375 ºF (190 ºC) and line a muffin tin with paper liners.
2. For the streusel topping, stir the flour, brown sugar, baking powder and cinnamon together in a small bowl. Work in the butter with your fingertips until the mixture is roughly crumbled and no large pieces of butter are visible. Set aside.
Muffins
1. In a large mixing bowl, beat the butter, sugar and lemon zest together, until well combined. Add the eggs one at a time, mixing well after each addition.
2. In a separate bowl, sift the flour, baking powder, salt and nutmeg. Add half of this to the butter mixture and stir until blended. Add the milk, stir well and then stir in the remaining flour until smooth. Gently stir in the blueberries.
3. Scoop the batter into the prepared muffin tin (they will fill right to the top of the muffin cups) and sprinkle the streusel mixture overtop. Bake the muffins for about 35 minutes, until a tester inserted in the centre of a muffin comes out clean. Cool the muffins in the tin for 15 minutes, then turn out onto a cooling rack to cool completely.
Cooking tips:
The muffins will keep in an airtight container for up to 3 days.

Blueberry Streusel Muffins Recipe
This recipe makes 12 muffins while the demo shows 6 (my family couldn't eat so many at one go, so yes you can certainly halve the recipe!). These Blueberry Streusel Muffins are soft, fluffy and crunchy with that caramelized streusel! Easy to make, they are a quick, delish snack!
I like them especially when infused with the fragrance of cinnamon. However, should you want to give the streusel a miss, this recipe still produces moist & fluffy Blueberry Muffins for you to enjoy.
