Lemon Blueberry Stacked Cake
I wanted to make a stacked cake, and got the idea from one of Donna Hay's books. I like the idea of a stacked cake because they are simpler than having to frost an entire cake, and they can still look really nice.
I did not follow the recipes exactly, but I got the recipe for the Brown Sugar Sponge Cake from WhatKateBaked.com, and the Honey Lemon Curd recipe from CookieandKate.com.

Blueberry Crepe Cake by Dish Everyday
INGREDIENTS ????
2 cups - flour
2 jumbo - eggs
¼ cup - oil
2 tbsp - vinegar
2 tsp - baking powder
3 cups - water
1 cup - blueberries
½ cup - water
½ cup - sugar
¼ cup - lemon juice
METHOD ????
1. In a bowl, whisk together flour, eggs, oil, vinegar, baking powder & water.
2. Rest Crepe batter while moving along to the next step.
3. In a nonstick skillet, add the water, blueberries, sugar and lemon juice.
4. Bring up to a simmer until blueberries have broken down into a sweet sticky sauce.
5. Remove from heat and leave aside to cool down.
6. In a small nonstick skillet add a portion of the batter to form a thin layer.
7. Once the bubble starts to surface, flip the Crepe over to the other side.
8. Golden delicious is the ideal colour.
9. Stack Crepes one on top of the other and slices out the middle with a round cookie cutter.
10. Pour the Blueberry sauce into the middle and cover with one last Crepe

The cakes have blueberry and lemon zest in them, with a cream cheese lemon topping, mini pancake stack topped with more blueberries and maple syrup, seriously gorgeous, hope you try them!

Viral Crinkle Cake Recipe: Blueberry Lemon Crinkle Cake

Ingredients
1 pound (#4) phyllo pastry
1/2 pound unsalted butter, melted
1 -2 cups blueberries
For the Custard:
2 cups heavy whipping cream
1 14oz (400g) sweetened condensed milk
2 eggs
2 teaspoons pure vanilla extract
zest of a lemon
Instructions
Preheat the oven to 350 °F, 180 °C.
Stack 2 phyllo sheets together and gather them to create an accordion shape. (See video) Place them into a 9 by 13-inch baking pan.
Drizzle and brush the melted butter over the phyllo and bake on the center rack of the preheated oven for 20 minutes.
Prepare the custard by combining all of the ingredients together. Whisk well until the egg is incorporated.
Pour the custard over the toasted phyllo and top with the blueberries.
Return the oan to the centr rack of the oven and bake for an additional 30 minutes or until golden.
Dust with confectioner's sugar and serve. Kali Orexi!
Notes
Substitutions: The berries can be substituted for strawberry slices, blackberries, or raspberries.
Leave the berries out altogether and add ground pistachios or sliced almonds.
