3/4 lb Sausage, pork
2 c Flour
1 t Baking powder
1/2 ts Baking soda
1/2 c Butter
1/2 c Sugar
1/4 c Sugar, brown
2 Eggs
8 oz Sour cream
1 c Blueberries
1/2 c Pecans, chopped
Day before: Cook sausage and drain well. Stir together flour, baking powder, and baking soda. In large mixing bowl, beat butter until fluffy. Add sugars and beat until well-blended. Add eggs, one at a time, beating well after each. Alternate adding flour mixture and sour cream to creamed ingredients; mix well. Fold in sausage and berries. Pour batter into ungreased 13"x9"x2" baking pan. Sprinkle pecans on top. Refrigerate overnight. Preheat oven to 350. Bake 35-40 minutes, until done. Cool on wire rack. Sylvia's notes: With two young kids, I didn't want to use chopped nuts, so I sprinkled raw oats on top. Then, I didn't have a 13"x9" pan, so used two 8"x3-3/4" pans. And my oven was broken so I used my
toaster oven and baked one pan 35 minutes at 350. The batter is so thick it's very hard to work with; I need to add more liquid next time. Blueberry Monkey Bread | Breakfast Casserole
I used to make this Blueberry Monkey Bread for my friends in college! I would invite them to my apartment for Sunday brunch, and this was my go-to sweet treat. This tasty breakfast casserole couldn’t be easier to throw together and is easily doubled to feed a crowd!
Blueberry Monkey Bread (Breakfast Casserole)
adapted from Paula Deen’s Granite Steps Country Blueberry Coffee Cake
1- 12 oz. pkg. buttermilk biscuits
½ c. light brown sugar
½ tsp. cinnamon
1 stick unsalted butter, melted and cooled slightly
1 cup quick cooking oats
1 ½ c. fresh blueberries
¼ c. sugar
Preheat oven to 375 degrees. Cut the biscuits into quarters. In a small bowl, mix the brown sugar and cinnamon together, breaking up any clumps. Dip the biscuit pieces into the melted butter then roll in the brown sugar cinnamon mixture. Place the biscuits into a greased 9in. baking dish in a single layer. Sprinkle the oats over top. Mix the blueberries with the ¼ c. white sugar and scatter overtop of the oats. Drizzle any remaining melted butter over the top. Bake at 375 degrees for 20-25 minutes or until the biscuits are cooked through (check the pieces right in the center as they will take the longest to cook). Cool slightly and ENJOY!

I love using Bundt pans for breads or desserts or really anything since they always come out perfect and in a pretty shape???? I made two options, one sweet version, a Blueberry Muffin Bundt Cake and a savory option, a Bacon, Egg & Cheese Bundt Bread. I will link the recipes down below! 1 sweet potato in slices.

Sausage stuffed blueberry muffins
1 bag of blueberry muffin mix $1.25
8 small sausage patties $2.50
1/2 cup of milk $1.25
Mix the blueberry muffin mix with milk per the package instructions. Grease 8 muffin tins. Place a small amount of batter in the bottom of each of the 8 muffin tins.
Lay a sausage patty on top of the bottom layer of batter and divide the remaining batter on top. Use a spoon if needed to press the sausage patty flat and spread the batter out evenly on top. Bake at 350 degrees for 22 to 25 minutes or until lightly brown on top.
Let cool for 10 minutes before unmolding to help prevent the layers from coming apart.
No bake energy bites
Oatmeal $1.25
Peanut butter $1.25
Honey syrup $1.25
Trail mix (or chocolate chips) $1.25
Finely chop trail mix and place in a bowl along with 2 cups of oats. Remove the seal from the peanut butter and microwave for 45 seconds until pourable.
Add the peanut butter along with the entire jar of honey syrup (approximately 2/3 cup of syrup, you could instead use real honey, pancake syrup, agave, etc.) Stir this until well combined, then cover and refrigerate for 1 to 2 hours.
Spoon out a small amount of the mixture and roll into balls. Makes 20 to 24 balls. Best eaten chilled.
Smoked sausage breakfast skillet
1 16 oz bag of steak cut french fries $1.25
Smoked sausage $1.25
Pepper Stir fry $1.25
Cheese $1.25
Thaw the fries and the frozen pepper stir fry in the fridge overnight. The next day, cut the thawed french fries down into cubes, cut the smoked sausage into bite sized pieces, and grate the cheese. Fry the diced potatoes in a skillet preheated with oil until golden brown. Season well with salt and pepper. Remove from the skillet.
Add a splash more oil and fry the smoked sausage along with the drained pepper stir fry until lightly browned. Toss back in the potatoes and saute together for 2 to 3 minutes.
Top with shredded cheese
Mini Pancake Bites (3 ways!)
1 box of pancake mix $1.25
3 choices of mix ins $3.75-I used bacon, chocolate chips, and yogurt covered cranberries
If using bacon or sausage start by frying that up. Mix 1 & 1/2 cup of pancake mix according to the box instructions and divide this into a well greased mini muffin tin. Add toppings of your choice and lightly stir into the muffins. Bake at 350 degrees for 14 to 17 minutes or until lightly brown on top.
Blueberry French Toast Casserole with Cream Cheese
Bake a blueberry French toast casserole with cream cheese and a cinnamon streusel topping. Quick and easy overnight breakfast recipe that tastes so amazing!
Ingredients -
Casserole:
8 ounces cream cheese
1/4 cup light brown sugar
20 ounces sourdough bread*
2 cups fresh blueberries*
8 large eggs
2 cups whole milk*
1/4 cup maple syrup*
1 tablespoon vanilla extract
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
Streusel Topping:
4 tablespoons salted butter
1/3 cup light brown sugar
1/3 cup all-purpose flour*
1 teaspoon cinnamon
Instructions:
1. Before you get started layering your recipe, go ahead and grease a 9″x13″ baking dish with cooking spray.
2. Combine the cream cheese and brown sugar in a mixing bowl, and set aside.
3. Cube the bread into small 1-inch cubes, and add 1/2 of your bread cubes to the bottom of the baking dish.
4. Spoon small dollops of the cream cheese mixture onto the bread cubes until you've used it all.
5. Sprinkle half the blueberries over the bread and cream cheese.
6. Add the remaining bread cubes on top of the blueberries.
7. Then sprinkle on the rest of the blueberries, sprinkling them evenly all over the casserole.
8. In a large bowl or glass measuring cup, whisk together the eggs, milk, maple syrup, vanilla extract, salt, cinnamon, and nutmeg.
9. Pour the egg mixture over the bread in the baking dish, making sure to soak every single piece of bread.
10. At this point, you can either cover and chill the casserole for at least 4 to 6 hours or overnight.* Or you can go ahead and mix up the streusel topping and bake it.
11. When you're ready to bake your blueberry French toast bake, go ahead and preheat your oven to 350° F.
12. In a small mixing bowl, combine the salted butter, brown sugar, flour, and cinnamon with a pastry blender.
13. Crumble the topping over the entire French toast casserole.
14. Cover the baking dish with aluminum foil, and bake at 350° F for about 45-50 minutes. Then uncover and bake an additional 15 to 20 minutes.*
15. Allow it to cool for at least 10 to 15 minutes after baking. Then slice it and serve it with powdered sugar, maple syrup, blueberry sauce/syrup, or more blueberries.
