2/3 c Blueberries,fresh or frozen
Not thawed 1 1/2 c Flour
1/3 c Yellow cornmeal; preferably
Stone ground 1 1/2 ts Baking powder
1/2 ts Salt
1/2 c Yogurt; plain,non fat,PLUS
1 tb Of same
1 tb Lemon juice; fresh
2/3 c Sugar
2 ts Sugar
1/4 c Oil; plus more for preparing
Pan 1 ts Lemon zest; grated
1 Egg; large
1 Egg; white
1/4 ts Cinnamon; ground
This recipe is from Maine's Cook & Tell newsletter.... Toss blueberries with tablespoon flour and set aside.. Stir together remaining flour,cornmeal,baking powder and salt in mixing bowl.Combine yogurt and lemon juice in another small bowl. Whisk together 2/3 cup sugar,oil and lemon zest in medium mixing bowl.Beat in whole egg,then egg white,beating well after each addition.Alternately add dry ingredients and yogurt mixture,begining and ending with dry ingredients.Mix until just combined.Gently fold in blueberries.Spoon batter into lightly oiled 8" x 4" loaf pan.Combine remaining 2 teaspoons sugar and cinnamon in small bowl and sprinkle over batter.. Bake on center rack at 350 deg.After 25 minutes of baking,loosely cover pan with aluminum foill.Bake until cake is golden and wooden pick inserted into center comes out clean.50 to 60 minutes total baking time.. Cool cake in pan on wire rack 10 minutes,then turn out onto rack and cool completely.( For best flavor,wrap cake and store overnight before serving.)Makes 10 servings.....

1 cup all purpose flour
3/4 cup whole wheat flour
2 tsp baking powder
1 cup granulated sugar
1/8 tsp salt
1/2 tsp cloves
1 cup sour cream
1/4 cup vegetable oil
2 large eggs
1 tsp pure vanilla extract
2 Tbsp orange juice
zest of 2 oranges
2 cups blue berries
Handful of natural walnuts (optional)
Bake @ 350F for 1hr 15mins or until a toothpick comes out clean of biscuit topping

blueberry corn cake ???????? she’s a vegan, gluten free wonder daaaarrrllinnggg!! Packed full of hearty oats, corn, and blueberries AND topped with a maple butter cream ???? She’s one beauty I can’t get enough of!
Inspired by the lovely @sophia_roe for this one ???? she recently posted this gorrrgeous blueberry corn cake that I cannot stop dreaming about ✨ it’s so gorgeous ????
Dry ingredients:
2 cups oat flour (I just blend up oats)
1 1/4 cup corn meal, I used @bobsredmill
1 tbsp baking powder
1 tsp salt
1/3 cup blueberries
Wet ingredients:
1 1/2 cups vegan buttermilk (1 1/2 cups almond milk + 1 tbsp apple cider vinegar)
1/4 cup olive oil
1/2 cup organic cane sugar
2 tsp vanilla
Maple buttercream:
1/3 cup vegan butter, I used @kitehillfoods
3/4 cup powdered sugar
2 tbsp @minkdogblends maple whip (can also use maple syrup)
Directions: preheat oven to 375 F + in a bowl add in vegan buttermilk ingredients and let sit for 5 min to curdle + in a separate bowl, mix together dry ingredients expect blueberries + pour remaining wet into buttermilk, then pour wet into dry and mix + gently fold in blueberries + parchment line a cake tin and spray well with oil + pour in batter + bake for 30-35 min + remove from oven and allow to cool before careful removing from pan + for frosting: whip together butter until fluffy, add in maple next, then gently pour in powdered sugar + frost the cooled cake, slice and enjoy!

●1/4 (dry measuring) cup Unsweetened Applesauce
●1/2 cup Soy Yogurt, blueberry flavor 2 tablespoons Vegetable Oil Spread, melted
●1/2 tablespoon Apple Cider Vinegar
●1 teaspoon Vanilla Extract
●1/4 teaspoon Almond Extract
●1 cup Blueberries, fresh or frozen (I used fresh)
●1/2 cup Sliced Almonds
●1 tablespoon Brown Sugar
●1/4 teaspoon Ground Cinnamon

147 grams cornmeal
150 grams all purpose flour
156 grams sugar
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup melted butter
¼ cup oil
1 teaspoon vanilla
½ cup milk
Zest from 1 lemon
280 grams blueberries
2 tablespoons sunflower seeds
1. Zest 1 lemon into a large bowl.
2. Add the eggs and sugar to the bowl and whisk until combined.
3. Add melted butter, oil and vanilla and mix.
4. Take one tablespoon of flour from the 150 grams and add it to the blueberries. Give it a mix. This is to prevent the blueberries from sinking while baking.
5. Add the flour, cornmeal, baking powder, baking soda and salt to the wet ingredients.
6. Whisk Everything together while adding the milk. Then fold in the blueberries.
7. Spray 8 ramekins with cooking spray and add the batter ¾ of the way full. Then Sprinkle the top with sunflower seeds. You can also add the batter to a 9 inch cake pan.
8. Preheat the air fryer then add the ramekins in. Bake at 300°F for 20-30 minutes depending on your air fryer.
9. Take the ramekins out of the air fryer to cool. Eat straight out of the ramekins or take them out onto a plate. Enjoy!
