I've never had clafouti before - it's a light, custard-like French dessert. And it's delicious!
I had to rewrite an old WW recipe from 2003 to make this. Their recipe in today's recipe builder was 10 points. Mine is only 4! (5 if you are on the diabetic plan because I have to count the fruit).
Super easy as everything gets thrown in a blender and poured into ramekins.
My ramekins are 4 1/2 inches in diameter. The brand is Our Table from Bed Bath and Beyond - they are a 4-pack.
Ingredients:
2 cups blueberries 1/2 cup unsweetened cashew milk (or milk of choice) 1/8 cup sugar 1/2 cup Splenda 2 large eggs 1 tablespoon light butter 1 teaspoon ground cinnamon 1 tablespoon baking powder 1 teaspoon lemon juice 2 teaspoons confectioners sugar
Heat oven to 375. Place ramekins in a baking sheet. Spray with avocado oil spray.
Place 1/2 cup blueberries into each ramekin. Place the milk through lemon juice into a blender and blend well. Divide that mixture between the ramekins and bake for 30 minutes.
Let cool for 30 minutes. Sprinkle 1/2 teaspoon powdered sugar over the top. Enjoy!
This was light, delicious and was my breakfast with some chicken sausage. This would be a quick and easy dessert for Valentine's Day too!
Clafoutis is almost like a cross between cake and custard. You can use this batter to make pancakes too. For my recipe I have used blueberries, you can use any fruits of your choice. The temperature I used 180 C equal to 356F
