Til Laddu & Peanut chikki -
Shakar/ Namak Pare -
ANJEER KHAJUR ROLL
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 2
Ingredients
½ tbsp Ghee, घी
½ cup Dates, soaked, paste, खजूर
1 cup Figs, soaked, paste, अंजीर
For Filling
¼ cup Walnuts, corsaley ground, अखरोट
¼ cup Almonds, corsaley ground, बादाम
¼ cup Pistachios, coarsely ground, पिस्ता
¼ cup Cashew Nut, coarsely ground, काजू
6-8 Figs, chopped, अंजीर
10-12 Saffron strands, केसर
2 tbsp Cashew powder, काजू पाउडर
½ cup Poppy seeds, roasted, for coating, खस खस
Process
1. In a kadai, heat ghee, add dates paste, fig paste and cook on medium flame, until the water evaporates and it starts to leave the sides of the pan.
2. Transfer it to a bowl and let cool to room temperature.
3. Flatten the mixture on a clean surface, add the prepared filling and roll it into long cylinder shape.
4. Coat it with poppy seeds and gently roll to make a uniform shape. Let it set for 10-15 minutes.
5. Cut the Anjeer Khajur roll and serve.
For Filling
Add walnuts, almonds, cashew nuts and pistachios to a mixer- grinder and grind coarsely.
Remove it in a bowl, add chopped figs, saffron strands, cashew powder and a spoon full of dates and kajur mixture and mix everything well.

Brown Butter Pecan Chocolate Chip Cookies

Things you will need
sheet pan or cookie sheet
parchment paper ( not wax paper )
Saran Wrap

1 large bowl
1 ice cream scooper
medium pot
whisk

Preheat oven to 350
INGREDIENTS:
2 sticks butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tbs vanilla extract ( imitation vanilla is fine )
1 teaspoon kosher salt or table salt
1 teaspoon baking soda
3 teaspoon cornstarch
-2 cups all purpose flour plus two tablespoons
-1 1/2 cups semi sweet chocolate chips ( you canadd chocolate chunks if you want, plus more for topping )
-1 cup chopped pecans or walnuts ( plus more for topping )
* 1 ice cream scooper *
Note* if you decided to use a smaller scooper instead of the 2 1/4 scooper like I did .. please adjust cooking time. Bake cookies for 8 mins instead. * Please understand that the cookies will seem a bit under cooked once removed from the oven, but dont be alarmed they will Harden as they cool *
* Please cook larger cookies for 9-10 mins (same size as cookies in v video *

*if using a mini scooper bake cookies for 6-7 mins *
* you can also freeze this cookie dough to use at a later time *
Christmas Monkey Bread
Nothing is more tempting than this classic, sticky and sweet Monkey Bread. Pull it apart or sliced it up; either way, it will disappear before your eyes.
Ingredients
24 Rhodes Dinner Rolls, dough thawed but still cold
1/2 cup sugar
1 Tablespoon Cinnamon
1 cup brown sugar
1/2 cup butter
Instructions
Combine white sugar and cinnamon in a bowl.
Cut dinner rolls in quarters then dip into cinnamon sugar. Arrange coated rolls in bundt pan. Sprinkle any remaining cinnamon sugar over the top.
Place butter and brown sugar into a small sauce pan. Over medium-low heat, melt together until a syrup is formed.
Pour syrup over rolls. Cover with plastic wrap and let rise about 30 minutes or until roll are even with top of bundt pan.
Bake at 350ºF for 30-40 minutes with a pan on the rack below to catch any drippings. Cover with foil for the last 10 minutes of baking if browning too quickly.
Immediately after baking, loosen from sides of the pan with a knife and invert onto a serving plate.
