How To make Pumpkin Black Walnut Biscuits
2 c Unbleached all purpose flour
1/4 ts Ground allspice
2 tb Sugar
1/2 c Butter, cold
1 tb Baking powder
1/3 c Finely chopped black walnuts
1 t Baking soda
2/3 c Canned or mashed cooked
-pumpkin 1/4 ts Salt
1/2 c Buttermilk, or a bit more if
-needed 1/4 ts Ground cinnamon
1/4 ts Grated nutmeg
Sugar "A batch of these intriguingly flavored biscuits is a nice addition to any meal. This particular biscuit has a tendency to overbrown on the bottom, so use a light-colored metal baking sheet instead of a nonstick sheet. Serve the biscuits hot with butter." Preheat oven to 450 F. Sift together the flour, sugar, baking powder and soda, salt, and spices into a large bowl. Cut in the butter (or use food processor) until the mixture resembles coarse crumbs. Add the nuts. In a small bowl, whisk together the pumpkin and buttermilk. Add it to the flour mixture and stir to combine. The dough will be quite stiff and not all the flour will be incorporated. Turn the dough out onto a lightly floured cloth and knead gently a few times to work in the rest of the flour. Roll out the dough to a 1/2 inch thickness and cut with a 2 inch round cutter. Transfer the biscuits to a lightly oiled shiny baking sheet, and sprinkle tops with sugar. Bake for 10 minutes--do not let them get too brown. Serve immediately with butter. Ingredients:
- 113 grams butter (1/2 cup)
- 1/4 teaspoon salt
- 100 grams of sugar (1/2 cup)
- 1/2 teaspoon vanilla extract
- 1 egg white (25 grams)
- 100 grams of walnuts
- 180 grams all-purpose flour (1 cup)
- 1 teaspoon baking powder
Additionally:
- 20 grams of powdered sugar
- 20 halves of walnuts
Bake in preheated 350°F (180°C) oven / 17 minutes.

Old Fashioned Black Walnut Bread Recipe
Yield: 12 slices
Prep Time: 10 minutesCook Time: 1 hourTotal Time: 1 hour, ten minutes
Old fashioned goodness, with a rich, nutty taste.
INGREDIENTS:
2 cups all purpose flour
1 cup granulated sugar
1 cup black walnuts
1 cup buttermilk
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
DIRECTIONS:
Adjust baking rack so that it is in the center of your oven.
Preheat oven to 350 degrees.
Grease and flour a loaf pan.
In a large bowl whisk the flour, sugar, baking soda and salt together till they are well blended. Stir in the nuts, making sure that they are evenly distributed.
In a small bowl, whisk together the buttermilk and egg.
Slowly, (a bit at a time) add the liquid to the dry ingredients till well mixed.
Pour into pan and put place on the rack in the middle of the oven.
Bake for 1 hour. Test to see if a toothpick comes out clean after an hour, if not, bake a few minutes longer, but do not over bake.
Remove from oven and place on cooling rack. As soon as possible, remove from pan and let cool. Place in a plastic bag and store for a day before serving. Bread will keep for a week in the refrigerator.
