2 tablespoons (30 grams) olive oil
1 large onion chopped
2 medium carrots chopped
2 ribs celery chopped
4 cloves garlic grated
2 teaspoons cumin ground
1 teaspoon chipotle powder or ½ teaspoon red pepper flakes
2 bay leaves
3 cans (15-oz each) (3 cans (720 grams)) black beans
3 cups (720 grams) vegetable broth
1 can (15-oz) (1 can (400 grams)) diced tomatoes
1 teaspoon salt
¼ teaspoon black pepper

BLACK BEAN SOUP WITH SMOKED SAUSAGE & SWEET POTATOES: Savory Soup/Alaska from Scratch Cookbook
I'm calling this Black Bean Soup with Smoked Sausage & Sweet Potatoes, but the real name of this recipe is Black Bean Soup with REINDEER Sausage & Sweet Potatoes. I just don't have access to reindeer sausage where I live, and I'm guessing that may be the case for many of you who are watching. I came upon this recipe on my recent trip to Alaska. While visiting a close friend of mine, who now lives in North Kenai, I browsed through one of her cookbooks called, Alaska from Scratch. The photography in it was gorgeous. The recipes all looked scrumptious. And best of all, I loved the personal stories that were so beautifully woven throughout the book. It was written by Maya Wilson. She's a chef, a food blogger, and a food columnist. As soon as I returned home, I made one of her soups, and it was so good, I decided to contact her directly and ask her permission to share this recipe with you. I was so thrilled when she got back to me right away with a yes! So, if you happen to have some reindeer sausage in your freezer, pull it out, or just grab your favorite smoked sausage (beef, chicken, or turkey) and get ready to enjoy one of the most delicious and satisfying savory soups anywhere.
Black Bean Soup with Smoked (Reindeer) Sausage & Sweet Potatoes
1 lb. smoked sausage, sliced
1 onion, chopped
3 garlic cloves, minced
8 oz. sweet potatoes, peeled & chopped
2 tsp. chili powder
2Tbsp. ketchup
1 Tbsp. Worcestershire sauce
1/4 tsp. liquid smoke
salt & ground pepper to taste
1 (14.5 oz.) can chicken broth
1 (14.5 oz.) can fire roasted diced tomatoes
4 (15 oz.) cans black beans, drained & rinsed
1/4 cup fresh cilantro, chopped
juice of half a lime
Serve with:
corn chips
sour cream
more lime juice & cilantro
Heat large pot or dutch oven on stove with burner set to medium-high heat. Add in 1 Tbsp. cooking oil, then cook sliced sausage until browned. Add the onion and cook for 2 minutes, or until tender. Add the minced garlic and cook for 1 minute.
Toss the sweet potato in the pot and add the chili powder, ketchup, Worcestershire sauce, liquid smoke, and salt and pepper to taste. Stir until the sausage and vegetables are coated with the seasonings.
Pour in the chicken broth, tomatoes, and black beans. Stir, cover, and reduce the heat to medium-low. Simmer for 15 minutes, or until the sweet potato is tender.
Turn off the heat. Add the cilantro and lime juice. Taste for seasoning and add more salt as needed. Serve hot with sour cream, corn chips and more chopped cilantro, with lime wedges on the side.

We love Soup year round, when the weather turns cold Soup is definitely a favorite meal and sure hits the spot.
This recipe for Black Bean and Sweet Potato Soup is very easy to make and is so flavorful.
This hearty Soup is Vegetarian, I did use Sour Cream for a garnish,, you can leave that out or add a non-dairy cream. It is naturally Gluten Free.

Potato and Black Bean Stew
1 c. dried black beans,
13.5 oz. peeled potatoes,
3.5 oz. onion,
2.5 oz. celery,
1 T. minced garlic,
1 tsp. pink salt,
1 tsp. sriracha hat chili sauce,
1 oz. bacon,
2.5 oz. carrots,
1/2 tsp. smoked paprika,
1/2 tsp. ground thyme,
1/4 tsp. ground bay leaves,
2 T. tomato sauce,
add 1/4 c. leafy parsley,
scallions or cilantro 3 minutes before serving.

Black Bean and Sweet Potato Chili by Foster's Market Durham
Ingredients:
1 Tbsp olive oil
1 onion, chopped
2 medium sweet potatoes, diced
1 red bell pepper
1 green bell pepper
2 jalapeño peppers, seeded and diced
3 garlic cloves, minced
3 Tbsp chili powder
2 tsp ground cumin
2 tsp dried basil
1 tsp dried marjoram
1 tsp crushed red pepper flakes
3 bay leaves
1 tsp kosher salt
½ tsp ground pepper
6 cups low-sodium veg broth
1 (28oz) can chopped tomatoes
1 (12oz) beer
½ cup bulgur or barley
2 (15oz) cans black beans, rinsed and drained
Garnish: cilantro, scallions, avocado, sour cream, cheese, lime wedges
Directions:
1. Heat the olive oil in a large saucepan over med heat until sizzling hot and add onion. Reduce to low and cook, stirring often, ~10 mins. Add sweet potatoes, bell peppers and jalapeños, stirring occasionally, 5 mins more. Stir in garlic and cook, stirring, 1 min longer.
2. Add chili powder, cumin, basil, marjoram, red pepper flakes, bay leaves, salt & pepper and cook, stirring, ~2 mins. Add broth, tomatoes, beer and bulgur (I used farro!) and stir to combine, bringing to a low boil. Reduce to simmer and cook uncovered, stirring occasionally, ~40 mins.
3. Remove bay leaves from chili and discard. Add beans, stir to mix and continue to cook, stirring occasionally, until beans are heated through, ~15 mins. Garnish with cilantro and scallions (avocado, sour cream, and cheese, if you have them! Maybe blue corn chips, yum) and serve warm with wedges of lime to squeeze into chili.
