How To make Black Bean Soup2
1 lb Black beans
1 1/2 lb Slab bacon or 2 smoked
-ham hocks (1 1/2 to 2 lb) 8 c Water
2 ts Celery salt
2 c Chicken/beef broth
1 1/2 tb Olive oil
1 1/2 c Finely chopped seeded
-cored green peppers 1 1/2 c Finely chopped onions
1 1/2 tb Finely minced
-garlic 1 t Ground cumin
1 cn (19-oz) tomatoes peeled
-diced with juice about -2 1/2 cups 1/4 c Red wine vinegar
2 tb Finely chopped fresh
-coriander optional 1 ea Sieved hard cooked egg
Place beans, bacon or ham hocks, water and celery salt in heavy kettle. Bring to boil; cover and simmer about 2 1/2 hours
or until beans are thoroughly tender. Remove bacon or ham hocks; set aside. Drain beans and reserve along with meat and cooking liquid. There should be about 6 cups of beans and 4 cups of liquid. Add enough broth to make 6 cups liquid. Combine the beans with liquid in large bowl. Heat oil in heavy kettle; add peppers, onions, garlic and cumin. Cook, stirring, until onions are wilted. Add tomatoes and vinegar. Let simmer about 15 minutes. Meanwhile, remove and discard skin from
bacon, or skin and bones from ham hocks. Chop ham; set aside. Add beam mixture to cooked tomato mixture. Add chopped meat and coriander. Simmer until thoroughly heated. Serve in soup bowls; garnish with sieved hard cooked egg, if desired.

Carne Asada with Black bean Soup
Ingredients for marinade
2 lbs. Skirt, flank or similar steak
¼ cup olive oil
¼ cup fresh lime juice
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground dried sage
1 teaspoon cumin powder
½ teaspoon dried mustard
1 teaspoon paprika
½ teaspoon black pepper
½ jalapeño pepper finely chopped
½ cup finely chopped fresh cilantro
1 teaspoon chili powder
Whisk all the ingredients together and pour into a zip top bag with steak. Massage well so the meat gets covered and refrigerate overnight.
Ingredients for Black Bean Soup
2 cans of Black beans drained and rinsed
2 cups of Beef or vegetable broth
½ jalapeño finely chopped
1/3 cup red onions finely chopped
¼ cup fresh chopped cilantro
1 teaspoon cumin powder
1 Tablespoon tomato paste
½ cup diced roasted peppers
½ teaspoon garlic powder
Salt and pepper to taste
Cooking Directions
In a large pan heat up olive oil. (I used cast iron). When pan is hot add steaks and cook about 3-4 minutes per side or until desired doneness. Set aside and cover. In the same pan start the black bean soup by adding the onion, tomato paste and jalapeño. Stir for a minute or so and add the rest of the ingredients saving the salt and pepper towards the end to see how much are needed. Cook on medium heat about 20 minutes and smash the beans with the back of a large spoon to thicken the soup. You can mash as much or as little as you want to suit your taste. Serve in a bowl topped with sour cream and chopped cilantro next to the steak and Pico de gallo (2 cups fresh diced tomatoes, ½ jalapeño finely chopped, ¼ cup red onions chopped, ¼ cup cilantro chopped and the juice of a half of a lime. Add salt right before serving). Enjoy!!!!

We will be making a hearty black bean and sweet potato soup, perfect to stay warm during these cold months. In addition, this soup is completely vegetarian and it's full of veggies and beans that keeps you full all day.

Ingredients you will need to make this soup:
-2 (15oz) cans of black beans (rinsed and drained)
-2 to 3 small sweet potatoes
-1 small onion
-1 jalapeno
-1 (8oz) can of tomato sauce or puree
-4 cups of veggie broth (low sodium)
-2 tsp of minced garlic
-1 tsp cumin
-1 tsp oregano
-1 tsp paprika
-1 tsp black pepper
-2 tsp salt

Ingredients:
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Serving:4
Serving size: 2 cups
2 Cans of Organic Black Beans
½ cup Onions chopped
½ cup Celery chopped
½ cup Carrots chopped
½ cup Bell peppers chopped
½ cup Tomatoes chopped
½ cup Corn
4-5 Cloves of Garlic chopped
1 tablespoon Oil
1 tablespoon ground cumin
Salt and Chill Powder taste
4 cups of Water
Directions:
First heat the Soup Pan. Add 1 tablespoon of oil.
Sauté in garlic first, followed by all the chopped vegetables. Sauté everything for 1-2 minutes.
Add black beans and 4 cups of water next, stir in everything together and turn off the stove.
Use an immersion blender to blend half the soup. (if you don’t have an immersion blender use regular blender)
Now mix everything together with salt and chill powder as per your taste.
Bring the soup to boil with medium to high flame. Boil it for 7-8 minutes
Heart Healthy soup is ready to serve
Enjoy with: Tortilla chips and topping like
Sour Cream, Cubes of Avocado, Mexican cheese Green onions, salsa
