Dal rice- isn’t it one of the most comforting meals?
My mom, undoubtedly makes the BEST DAL EVER! Hands down, no competition there. There are cousins/relatives who request her to make it every time they visit. It’s just so delicious, and funny part is that she keeps it crazy simple. But I can’t get it right no matter how hard I try! And then there’s @kiran.lobo who makes the second best, and I’m jealous. I’ve been cooking far longer than him and he gets it better how? :/
But I’m not complaining as I get to eat it☺️
So here’s my recipe inspired by these two loves of my life!❤️
Ingredients I used:
- 1 cup toor dal, washed and soaked in water for 15-20 mins + water for boiling
- 1 onion, roughly chopped
- 1 large tomato, roughly chopped
- 2 to 3 green chillies, slit as shown
- 1/2 inch ginger, finely chopped
- 2 to 3 cloves of garlic, mashed roughly
- 1 sprig of curry leaves
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- pinch of hing
- salt
- 1/2 tsp turmeric
- generous amount of coriander leaves (or as preferred)
Procedure:
- Cook soaked dal in a pressure cooker (I use double the quantity of water but really depends on your pressure cooker too) along with chopped onions, tomatoes, green chillies and ginger.
- Once done, mash it up with a ladle.
- Heat oil in a pan and give tadka with mustard seeds, cumin seeds, garlic and curry leaves.
- Fry till the garlic has changed colour and add your cooked dal.
- Add cooked dal, water (if and as needed), salt and turmeric and give it a good boil.
- Once boiled garnish it with chopped coriander leaves.
Serve with hot rice and any sides of your choice, pickle, papad. Top it with ghee, and enjoy!

Healthy chicken tortilla soup✨
▪️2 tsp Olive Oil▪️2 Chicken Breasts▪️1 Yellow Onion, diced▪️3 Cloves Garlic, minced▪️1 Jalapeño, diced half seeds removed▪️1 tsp Cumin▪️1 tsp Chili Powder▪️1 tsp Salt▪️14.5 oz. Can Fire Roasted Diced Tomatoes, with juice▪️4 Cups Chicken Broth▪️14.5 oz Can Black Beans, drained▪️1 Cup Frozen Corn▪️2 Limes, Juice▪️1/3 Cup Cilantro, minced▪️

On Top:▪️Crushed Tortilla Chips▪️Mexican Cheese▪️Avocado, diced▪️

????Vegan Modification: Sub in veggie broth for chicken broth and diced potatoes (and/or extra beans or corn) for chicken

1️⃣ In a large pot over medium high heat, sear chicken in 1 tsp olive oil until browned on both sides (2-3 min per side) and remove from the pot (it will continue cooking at a later step)
2️⃣ Add another tsp oil and sauté onion, garlic, jalapeño, cumin, chili powder, and salt for 3-4 mins
3️⃣ Add the tomatoes, chicken broth, beans, and chicken back in; bring to a boil and then cover and simmer on low for 15 minutes
4️⃣ Remove the chicken and shred with two forks or you fingers and add back to the pot along with the corn; bring to a boil to heat the corn through
5️⃣ Add the lime and cilantro and then turn off the heat and serve with avocado, crushed tortilla chips and cheese on top - enjoy!

100g Chopped Cucumbers
35g Chopped Cilantro
250g Halved Cherry Tomatoes (1 container)
540g Drained Kidney Beans (1 can)
540g Drained Black Beans (1 can)
2 ¼ cup Drained Corn (1 can)
2 TBSP Sherry Vinegar
1 TBSP Olive Oil
Juice of 1 Lime
Salt, Pepper & Garlic Powder to Taste
Cilantro Lime Chicken (instant pot)
(makes 8 servings) 29P 5F 0C
2.2lb Chicken Breast
½ Cup Chicken Broth
2 TBSP Olive Oil
½ Cup Chopped Cilantro
Juice of 1 lime
Salt, Pepper & Garlic Powder to taste
Season chicken breast with salt, pepper & garlic powder
Add chicken to instant pot with olive oil, ¼ cup cilantro, juice of ½ lime, and chicken broth
Set to high pressure cook for 20m
Let out steam
Shred chicken, add remaining cilantro & lime
Salt & pepper to taste

The Recipe I refer to is from Ottolenghi. If you haven't heard of Ottolenghi and his team, then consider me a match maker from heaven. You're going to LOVE their recipes.
ROAST @ 375 for 30-45 mins (I turned on the broiler after 30 mins to speed along the process
Tomatoes
Fennel
Chickpeas
ROAST DRIZZLE
Olive oil
Balsamic
Maple syrup
S+P
BLENDED DRESSING DRIZZLE
In a blender combine
Cilantro
Basil
Black olives
Lemon juice
S+P
When the veggies are browned, plate em' up. Drizzle the blended dressing and sprinkle with red pepper flakes. Enjoy!

*2 bags of black beans soaked overnight & rinsed
cook in 10-12 cups of water until tender (remove all foam)
saute then add to tender beans: onions, peppers, celery, , green onions ( I would add zucchini, carrots or any other veg I had lying around)
spices: * this is really up to your TASTE BUDS... add more, don't suffer through bland food EVER!
2 teaspoon salt - I like Himalayan pink salt (taste as you go along and add more if need)
4 cloves of garlic
2 teaspoon of cumin seeds (ground together with salt & garlic)
spoon out some of the beans & mash up & put back in the soup to thicken.
garnish with avocado, green onion, cilantro & lime.
