Pasta Frijole! A Mexican style bean & pasta soup with chorizo. Snackin' With Ortega 132

We're wrapping up soup season with an Ortega Original Recipe. We googled, we searched and could not find this or a similar recipe anywhere. Not saying it's not out there, just saying, our team couldn't find anything. That being said, as of March 25th, 2023.Ortega claims Pasta Frijole as his own creation!! So it is written, so it shall be.

WHAT YOU NEED!
* 2 cups short tubular pasta like ditalini, tubetti or small shells
* 1 cup fine diced white onion
* 1 cup fine diced celery
* 2 cups carrot diced or in rounds
* 1/2 cup ea. small diced poblano, jalapeno orange & red bell pepper
* 2 serranos diced (seeds & spine removed)
* 28oz can diced tomato
* 15oz can black beans
* 15oz can pinto beans
* 6 cups chicken or vegetable stock
* 1lb chorizo
* 1tsp lime juice
* 2 cans enchilada sauce
* 1 Tsp black pepper
* 1 pack Goya sazon
* 1 Tsp Mexican oregano
* 1/4 cup chopped cilantro (more for soup garnish)
WHAT YOU DO!!
- cook your chorizo and drain grease. Transfer to a bowl & set aside
- mix together the pepper, sazon & oregano, set aside
- Get you soup pan over hi heat & add 2tbl oil
- Saute the onion, celery, carrots & all the peppers 4-5 min
- Add the beans, diced tomatoes (juice and all)
- Add the chorizo, stock & enchilada sauce ,cover and bring to a boil.
- When boiling remove lid and add corn, seasoning blend, lime juice,
cilantro & pasta
- Cover and keep on a low boil until pasta is nearly al dente
- Remove from heat & keep covered until pasta is properly cooked
- Ladle up a bowl grab a spoon and enjoy!
(Perhaps garnish with fresh cilantro, sour cream or tortilla chips)

Ingredients:
1 & ½ Lbs Of Jumbo Shrimp, Washed and Deveined
2 TBSP Of Cooking Oil
½ Red Onion Diced
1 Stalk Celery
3 Heads of Minced Garlic
3 Pieces of Auyama (Calabaza/Jamaican Pumpkin) *Or Carrots
½ Red Bell Pepper Diced
½ Aji Cubanelo/Cubanelle/Italian Pepper Diced
5-6 Olives
2 Tsp Black Pepper
1 TBSP Dried Oregano
1 TBSP Sofrito
2 Chicken Bouillon Cubes
2 Orange Seasoning Packet (Condiment Packet with Cilantro & Achiote)
6 Cups of Water
1 Cup of Washed Rice
Cilantro
1 Lime *finishing touch at the very end!

Akhhi masoor dal recipe | whole masoor dal #recipevideo
Have you ever had akkhi masoor dal?
It’s extremely healthy, tastes delicious and super simple to make!
Ingredients I used:
- 2 tbsp oil
- 6 to 7 big cloves of garlic
- 1 medium sized onion, finely chopped
- 1 and 1/2 medium sized tomato, finely chopped
- 1 green chilli (optional)
- 1 cup masoor dal + water (for soaking)
- salt
- 1/4 tsp turmeric
- 1/2 to 1 tsp red chilli powder
- 1 and 1/2 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala
- water as needed
- coriander leaves for garnish (optional but recommended)
Procedure:
- Soak masoor dal in sufficient water for 2 hours.
- Heat oil in a pressure cooker and add garlic. Sauté well till garlic has turned golden.
- Add onions, green chilli and fry well till onions then brown.
- Add tomatoes and mix well. Fry till tomatoes are well cooked.
- Add salt, turmeric, red chilli powder, coriander powder and cumin powder. Mix well.
- Add masoor dal and mix well.
- Add water as required and garam masala and cook till the dal turns mushy.
- Garnish with coriander leaves.

Party Potato Salad / Simple Recipe
This easy to make Potato Salad looks very presentable on any table, be it a party or a family dinner. You can always double or triple the ingredients of the salad , if you decide to invite more people.
INGREDIENTS:
+ Boiled Potatoes - 1 kg;
+ Red Beans - 1 can (540 ml), drained & rinsed;
+ Red Onion - 1 large;
+ Sweet Bell Peppers - 1-3 medium sized, diced into
small cubes or strips;
+ Cilantro - 1/2 of bunch; Basil - 3-5 leaves;
+ Fresh Lime or Lemon Juice - 3 tbsp;
+ Olive Oil - 3 tbsp;
+ Salt, Black & Chili Peppers - by taste
PREPARATION:
- Boil 1 kg of Potatoes, cool them down & cut into 2-3 cm cubes;
- Drain & rinse 540 gr of Red or Black Beans
- Dice Sweet Red, Yellow, Orange Bell Peppers into small cubes or long strips
- Chop Fresh Cilantro & Basil. You can add some other Herbs
- Squeeze fresh juice from 1 Lemon & 1 Lime or choose only one Citrus
- Gradually add Potatoes, Beans, Onions, Bell Peppers, Cilantro, Basil &
Seasoning in a bowl. Mix gently.
- Pour the Lemon/Lime juice & Olive Oil.
it is ready to serve right away or the next day . Enjoy!

Beef Kebabs With an Easy Mint (Pudina) Chutney
These Beef Mince Kebabs are a family and party favourite! This recipe creates a kebab that has moist, cooked beef that holds the flavours of fresh Coriander (cilantro) & Mint, with uncomplicated and accessible spices and herbs. Oh, but before the taste is the aroma... it dances in the air to whet one's appetite! And the Mint Chutney (better known as the Pudina Chutney) is an excellent complement to these delicious Kebabs???? The only way to test this, is to try it yourself :)

Ingredients:
For the Kebabs:
1/2 Kg (500 grams) Minced Beef
A handful of fresh Coriander
A handful of Mint Leaves
1 medium-sized Onion, finely chopped
2-3 Green Chillies
1 piece of Ginger
2-3 Garlic cloves, crushed
A heaped teaspoon of Salt (or as you see sufficient for the meat & onions)
Some Crushed Black Peppercorns
1 teaspoon Red Chilli flakes
1/2 teaspoon Roasted Cumin Powder
1 Tablespoon Oil
Oil for shallow-frying
For the Chutney:
1/2 Cup Fresh Coriander leaves
1/4 Cup Mint leaves
1 Tablespoon Powdered Sugar
2 Tablespoons Hung Curd
Salt to taste
