RED BEAN SOUP in 35 Minutes! Recipe by Always Yummy!
Try delicious and easy red bean soup. You can take canned beans or dry ones to cook it. If you prefer to use regular dry beans, then rinse it, soak in water for a night, rinse well and boil until readiness. This way it can be used for cooking such a soup.

✅ Ingredients:
• canned red beans – 1,8 lb | 800 g
• onion – 7 oz | 200 g
• potato – 12 oz | 350 g
• garlic – 4 cloves
• butter – 1 oz | 30 g
• vegetable oil – 2 tbsp
• tomato paste – 2 tbsp
• fresh cilantro – ½ oz | 15 g
• water – 3,3 cup | 800 ml
• ground black pepper – ½ tsp
• curry– 1 tsp
• red chili flakes – 1 tsp
• salt – 2 tsp
✔︎ You will need:
• stockpot
• carving board
• potato masher
???? Preparation:
1. Dice the onion and potato finely, mince the garlic and chop up the cilantro.
2. Heat the vegetable oil in a stockpot, add the onion and butter, fry over low heat until readiness for about 6 minutes until translucent.
3. Add the potato and 3,3 cup | 800 ml of water, stir, bring to a boil, cover with a lid, and cook for 15 minutes over low heat until readiness.
4. Then add 1,8 lb | 800 g of canned red beans with its juice, tomato paste, salt, red chili flakes, black pepper and khmeli suneli, stir, bring to a boil and cook over low heat for 10 minutes.
5. Sprinkle the bean shechamady with the minced garlic and cilantro, stir, switch off the heat, remove the lid and puree the part of soup.
6. Serve the shechamady hot.

8 cups fresh cold water
On high heat bring beans and water to a boil. Reduce heat to simmer. Cover bean and cook for 1 hour.
In large skillet on medium heat add...

2 cups onions, chopped

1/2 cup green pepper. chopped
2 bay leaves
!/2 cup sherry cooking wine
1 tablespoon apple cider vinegar

1/2 teaspoon fresh black pepper
Remove from heat for 1 hour.
Remove bay leaves and puree some for the black beans for a hearty soup.
Return beans back to medium heat to warm. Serve.
Tips: Serve over cooked rice, puree to make Black Bean Dip.

Slow Cooker Black Bean and Rice Soup
Slow Cooker Black Bean and Rice Soup is a hearty yet plant-based recipe that's backed with veggies and fiber! This recipe is great for meal prep. Make once then divide into individual sized storage containers to reheat for lunch all week long. Add a splash of extra broth then microwave until warm. Hello, easy, healthy lunches!

INGREDIENTS:
2, 15oz cans black beans, drained and rinsed
2 bell peppers, seeded and chopped (I use 1 green and 1 red)
1 - 2 jalapeno peppers, seeded and minced
1/2 yellow onion, chopped
3 garlic cloves, minced
1 Tablespoon chili powder
1-1/2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon dried oregano
1 cup salsa (see notes)
3-3/4 cups gluten-free chicken or vegetable broth, divided
3/4 cup long grain white rice
juice of 1/2 lime
Toppings: tortilla chips, corn chips, chopped cilantro, guacamole, chopped avocado, sour cream
DIRECTIONS:
1. Add ingredients — black beans through salsa — to a 6-quart slow cooker then add 2-1/2 cups broth and stir to combine. Cover then cook on HIGH for 3-4 hours or LOW for 5-6 hours (depending on how big the peppers were chopped.) Scoop approximately 1/3 or 1/2 of the soup into a blender then blend until very smooth. NOTE: you may need to do this in batches as hot liquid expands while blending. Add blended soup back into the slow cooker then stir to combine.
2. When the soup has 20 minutes left to slow cook, bring rice and remaining 1-1/4 cups broth to a boil in a small saucepan. Place a lid on top then turn the heat down to low and simmer for 10 minutes or until tender. Fluff with a fork then scoop into the soup and stir to combine. Taste then add additional lime juice and/or salt if needed then let soup sit and thicken for 15 minute before serving with toppings.
