Black Bean Salad with Sweet Potato

⭐️ Ingredients
FOR THE SALAD
1 cup (180 grams) cooked black beans
1½ pound (680 grams) sweet potatoes peeled and chopped into 1-Inch cubes
1 cup (120 grams) green bell pepper diced
1 medium avocado diced
½ cup (100 grams) corn
½ red onion chopped
¼ cup pickled jalapeños chopped
FOR THE CILANTRO LIME DRESSING
1 cup packed (25 grams) cilantro
⅓ cup (72 grams) extra virgin olive oil
¼ cup (60 grams) lime juice
2 tablespoons (30 grams) maple syrup
½ clove garlic
½ teaspoon grated ginger
½ teaspoon salt

The Perfect Summer Dish ☀️???? Black Bean & Corn Salad ????????????????
You can make this salad a day in advance to bring to your weekend get together or perfect for a weeknight. It's vegan so you won't have to worry about keeping it under constant refrigeration while you're out enjoying the sunshine!
Black Bean & Corn Salad
2 15oz. cans Black Beans, rinsed & drained
1 16oz (1lb) package frozen Corn
1 bunch Green Onions, thinly sliced
½ Large Red Onion, small dice
1 Red Bell Pepper, small dice
2 Jalapenos, seeded, fine dice
1 bunch Cilantro, chopped
Dressing:
Juice of 2 Limes, approximately ¼ cup
½-2/3 cup Extra Virgin Olive Oil
1 ½ teaspoons Cumin Seed, toasted (dry frying pan on medium heat, until fragrant)
2 cloves Garlic, minced
1 teaspoon Kosher Salt
1 teaspoon Black Pepper
Combine salad ingredients together in large bowl.
For dressing: Whisk together lime juice, garlic, cumin, salt & pepper. Slowly drizzle in EVOO while whisking until emulsified. Stop after you’ve added ½ cup of EVOO & taste. Adjust salt/pepper to taste & drizzle in the remaining EVOO as needed.
Add to salad & mix well. Cover & refrigerate at least 2 hours so flavors can marry. This salad is perfect to make a day in advance. Remove from fridge about 15 minutes before serving

Today, it's about how to feed our microbiome a delicious, satisfying dish that you could take to any party or festival or any gathering during the summer or winter. And you probably already have half of the ingredients. So we're only going to need to pick up a few things in the store. And most importantly, your gut is going to say, thank you. And when your gut says thank you with this specific food, it then feed your brain for amazing results with memory, energy and focus.
What I got at the grocery store was black beans, and I'm actually going to double a recipe, it's called a black bean salad. And black beans actually what they have in them, they just the nutritional value is enough in there to help feed your microbiome, not just your digestive system in the upper digestive system in your stomach, but also in your colon.
Now remember the black beans so they go in and they feed the microbiome. And when the microbiome is fed well, it keeps it creates kind of a coating on your digestive tract, and that keeps foreign invaders from invading and causing autoimmune issues or food sensitivity issues.
Now two secret ingredients. One is the cilantro. And next is freshly squeezed lime juice.
Stir that up really well. I want you to recognize black beans, black beans are very good for helping your body to create short chain fatty acids, short chain fatty acids, such as butyrate are going to go into your gut, they're going to talk to your microbiome and say, Hey, let's help her think better. Let's help her have more energy in her mind. Let's help her have a heart stronger immune system. You know, let's just help her do a better life, you know, live a better life. That's what short chain fatty acids do.

Healthy Chickpea And Black Bean Salad
Recipe
2 Cans Black Beans /drained and rinsed
2 Cans Chickpeas /drained and rinsed
1/2 Red Onion /chopped
20 Cherry Tomatoes /halved
1/2 Cup Fresh Parsley /chopped
1/2 Cup Fresh Mint /chopped
1/4 Cup Olive Oil
1/4 Cup Apple Cider Vinegar
1/4 Cup Lemon Juice
Salt and Pepper
Crumbled feta Cheese
In a large bowl combine the chickpeas, black beans, red onion, cherry tomatoes, fresh parsley and fresh mint.
In a small bowl mix together olive oil, vinegar, lemon juice, salt, and pepper. Pour over the salad and toss to coat.
Top with crumbled feta cheese. Enjoy!

• 3 (15-ounce) cans beans, drained and rinsed or use 4 ½ cups cooked beans
• 1/2 medium onion, finely chopped (about 3/4 cup)
• 1 medium cucumber, finely chopped (about 2 cups)
• 3 tablespoons drained capers
• 1/2 cup (60 grams) finely chopped fresh parsley, see notes
• 3/4 teaspoon dried oregano, see notes
FOR THE DRESSING
• 1/4 cup (60 ml) red wine vinegar
• 1/4 cup (60 ml) extra-virgin olive oil
• 1 teaspoon Dijon mustard
• 1 to 2 teaspoons honey or maple syrup, optional
• 3/4 teaspoon fine sea salt, plus more to taste
• 1/4 teaspoon fresh ground black pepper
