How To make Black Bean & Salmon Appetizer
8 Corn tortillas;
16 oz (1 cn)Corn black beans;
-rinsed and drained 7 oz (1 cn) pink salmon; w bones,
-drained 2 tb Safflower oil;
1/4 c Fresh lime juice;
1/4 c Fresh parsley; chopped
1/2 ts Onion powder;
1/2 ts Celery salt;
3/4 ts Ground cumin;
3/4 ts Garlic; minced
1/2 ts Lime zest; grated
1/4 ts Red pepper flakes; dried
1/4 ts Chili pepper;
Preheat oven to 350 degrees. Cut tortillas in triangles and toast oven until crisp, about 5 minutes. Combine the beans and salmon, flaking the salmon with a fork. Mix remaining ingredients; chill to blend flavors. Serve with tortilla chips. (How making these into tacos? I enjoy cooking but not that much.) The hearty, vegetable-based recipe – including black beans, yellow corn, and fresh green scallions – is sure to brighten your table, while a touch of apple cider vinegar and feta cheese add a tang that really complements the taste of the sweet corn. Other versions of this dish calls for quite a bit of oil, but we like it better with less, so we scaled it back a bit and definitely prefer our updated version. If you want even less, don’t be shy about reducing the oil again; down to 1-2 tablespoons would still be fine, but be sure to at least let the mixture marinate in all the liquid ingredients before you serve – this ensures you’ll get maximum flavor. Just drain off most of the dressing when you’re ready to serve so your ingredients don’t get too soft, then you’re good to go!

Sprinkle a generous amount of salt and pepper on a serving plate and place the salmon slices on top, adding more salt and pepper to finish. Cover the dish in plastic wrap and refrigerate until it's time to add the garnish of your choice and serve. Jacques uses capers, onion, scallion, and basil here. Serve with bread.
