PICK ASPARAGUS ROADSIDE Grows WILD !! -- 5 ONAFARM Ohio
Did you know asparagus grows CRAZY GOOD in the wild all by itself? Take a walk on a nearby bike trail or country road, look VERY closely at the grasses beside the road or trail and I'll betcha you'll find Wild Asparagus growing!!
Check out the stash of wild asparagus I picked on the way home from work tonight. We have a nice little patch that grows wild beside our road! I struggle buying asparagus from the grocery stores when I know I can find it growing wild!
If you can find some asparagus growing wild, take it home and wash it very well. Trim off the woody ends. Spray an oven safe casserole dish with Pam olive oil spray. After you chop off the ends, toss with diced sweet potatoes, onion, carrots, and green bell peppers. Sprinkle with your favorite seasoning (I used Wildtree's Rancher Steak Rub) then bake for approx. 20-30 minutes in the oven.

Perfect Pot Roast

Yield: 6 servings
Ingredients
Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme
Directions
Preheat the oven to 275 degrees F.
Generously salt and pepper the chuck roast.
Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
Add in the onions and the carrots, along with the fresh herbs.
Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

CHICKEN & POTATOES BAKE in CREAMY GARLIC PARMESAN SAUCE
Recipe;
1.5 lbs. chicken thighs, skinless & deboned
salt ,pepper to taste
Italian seasoning
2 large size potatoes (coarsely chopped)
GARLIC PARMESAN SAUCE:
Chopped onion
4 cloves mince garlic
salt & pepper
1/2 tsp Italian seasoning
1tsp dried thyme
1 tsp dried basil
1 cup chicken broth/stock
1/2 cup half & half (you cal also use heavy cream if available)
1/2 cup milk
1/2 cup grated parmesan cheese
3-4 cups baby spinach
10-12 grape tomatoes
Bake 400 degree F oven for 20-25 minutes.
