This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Apple Crumble - Betty's Special Baked Dessert
Professional cooking instructor, and former caterer, Betty Bannerman Busciglio bakes a great dessert for a cold winter's day. Easier to make than pie and just as good. Perfect for a beginning baker. Apple Crumble
For the Crumble:
2 ¼ cups flour
¾ cup unrefined brown sugar (demerara)
7 ounces butter, cubed, at room temperature
1 cup crushed Ameretti cookies
For the filling:
1½ lbs. apples
¼ cup unrefined brown sugar, or to taste
1 tablespoon flour
1 teaspoon cinnamon
In a medium bowl, combine the sugar and flour and gradually rub in the butter cubes using your fingers until mixture resembles crumbs. Toss in the crushed cookies.
Peel and dice apples, combine sugar, flour and cinnamon and toss with apples.
Place in a buttered 2 quart baking dish, or individual dishes, top with crumbs and bake at 350° for 40 to 45 minutes or until bubbly. Allow to cool slightly and serve with vanilla ice-cream.
The crumble freezes well.
Notes: If you can't find Demerara sugar, substitute brown sugar. If you can't find Amaretti, ginger snaps would work well or you can simply eliminate the cookies altogether.
You can also make the crumble in a food processor but you would want the butter to be very cold.

Ingredients
For The Filling
2 lbs Apples approx 6 medium apples (at room temperature) peeled, cored, and cut into wedges)
2 tablespoons lemon juice
2 tablespoons all-purpose flour
½ cup light-brown sugar
¼ cup granulated sugar
1 tablespoon ground cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
2 tablespoons butter melted
2 teaspoons vanilla extract
For The Topping
1½ cups all-purpose flour
1 cup brown sugar packed
1 tablespoon ground cinnamon
½ teaspoon salt
6 tablespoons butter melted
Instructions
Preheat the oven to 375 degrees and position the oven rack one level below the center. Butter a 12 by 8-inch baking dish (or medium casserole dish of similar size), and set aside.
For The Filling
Mix the apples with the lemon juice in a small mixing bowl. Add the flour, brown sugar, sugar, cinnamon, nutmeg, and salt and toss to evenly coat. Mix in the melted butter and vanilla.
Pour apple mixture into a prepared baking dish and spread into an even layer.
For The Topping
Mix the flour, brown sugar, cinnamon, and salt in a medium bowl. Add the warm melted butter and stir to blend. Squeeze a handful of the topping into your hand; if it doesn't clump together, add some more melted butter until it does.
Hand-squeeze small handfuls of topping together and crumble clumps evenly over top of apples.
Bake in the preheated oven until the top is golden brown and apples are tender when pierced with a fork, about 30 minutes.

Betty's Cheddar Apple Crisp
Betty demonstrates how to make one of her favorite comfort food recipes, Cheddar Apple Crisp. It is made with apple pie filling and topped with a lovely and delectable topping of a brown sugar/Cheddar cheese mixture.

Cheddar Apple Crisp
20.5 oz. can of apple pie filling (I used Comstock More Fruit apple pie filling.)
1/2 cup flour
3/4 cup brown sugar
1/2 stick butter or margarine, softened
3/4 cup shredded Cheddar cheese
Empty apple pie filling into a pie plate or other oven-proof dish. In a small mixing bowl mix 1/2 cup flour, 1/2 stick butter, and 3/4 cup brown sugar with a fork or pastry blender until crumbly. Stir in 3/4 cup shredded Cheddar cheese. Pour this crumbly mixture over the top of the apples in the pie plate. Bake in an oven that has been preheated to 350 degrees about 15 to 20 minutes. Serve while warm. Umm, umm good!!!
