How To make Berry Banana Bread
1/3 c Margarine
softened
2 Egg whites :
whipped
1 c Bananas mashed
1 c Berries :

1 3/4 c Flour
2 ts Baking powder
1/4 ts Salt
2/3 c Granulated sugar
Preheat oven at 350. Prepare a 9 x 5 x 3" loaf pan with cooing spray and flour. In a mixing bowl, combine margarine, egg whites, bananas, and berries. In another mixing bowl, combine flour, baking powder, salt and sugar. Mix dry ingredients with wet ingredients just until moistened. Pour mixture into prepared pan. Bake for 50 minutes. Ingredients
2 ripe bananas
2 tbsp milk
100 g baking spread
150 g plain flour
150 g caster sugar
1 tsp baking powder
1 tsp baking soda
2 eggs
100 g dark chocolate chips
Instructions
You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.
Lightly grease the loaf tin and line it with non-stick baking parchment.
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended; an electric mixer is best for this but of course can also beat by hand with a wooden spoon.
Spoon the mixture into the prepared tin and level the surface.
Bake for about an hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.
Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.

Ingredients:
3 large (310 mL) mashed ripe bananas (or thawed frozen)
1 large egg at room temperature
1/2 cup (100 g) light packed yellow sugar
1/3 cup (90 mL) melted coconut oil, or vegetable oil
1 tsp pure vanilla extra (optional) - add to liquid mixture, if using
1 1/2 cups (200 g) all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp coarse salt (if fine salt, use less)
1 cup of fresh (or unthawed frozen) blueberries
12 large or jumbo size muffin liners
Bake at 350 degrees F or 180 degrees C for about 18-22 minutes (or until inserted skewer comes out clean).
Ps. Dark baking pan may require less baking time.

Ingrédients:
3 grosses bananes mûres (310 ml) écrasées (ou décongelées congelées)
1 gros œuf à température ambiante

1 cup fresh or frozen blueberries
1 cup = 250 ml

How to Bake Banana & Raspberry Bread
Add a simple twist to that breakfast favourite -- banana bread with raspberry.

Ingredients
3 very ripe bananas, extra for topping
2 ½ flour
¼ cup honey or maple syrup
¼ cup extra virgin oil
1 tsp vanilla extract
½ tsp ground cinnamon
3 free range eggs, beaten
½ tsp baking soda
1 tb lemon juice
½ cup frozen raspberries (thawed) or fresh raspberries, extra for garnish
1 tsp chia seeds
Slivered almonds to garnish.
Method:
Preheat your oven to 180°C. Prepare a loaf tin with baking paper.
To make the raspberry coulis, gently mash the raspberries and chia seeds in a bowl and set aside to set.
In a bowl add the banana and smash until it forms a thick paste.
Combine honey, oil, cinnamon, vanilla, eggs, baking soda, and lemon until combined. The lemon will activate the baking soda.
Add the flour and mix well until combined.
Gently smear the raspberry coulis on top of the batter – be careful that it doesn’t mix fully into the batter. Top with banana and garnish with slivered almonds. Place in the oven and bake for 45 -50 minutes.
Remove from the oven and allow to cool before serving.
