3 c All-purpose flour 1 tb Cinnamon 1 tb Baking soda 1 ts Salt 1 1/4 c Vegetable oil 3 x Eggs 1 c Sugar 2 c Fresh strawberries/blueberry 1 c Chopped nuts Makes 2 loaves Combine the flour, cinnamon, baking soda, and salt; set aside. In large bowl of electric mixer, combine oil, eggs, and sugar, mixing well. Gradually add dry ingredients to creamed mixture, stirring until just moistened. Stir in berries and nuts. Spoon mixture into 2 greased and floured loaf pans. Bake at 1 hour at 350 deg F or until tested done. Cool in pans 10 minutes; remove to wire racks to cool completely. These freeze well; make multiple loaves with extra berries.

This mixed berry loaf bread recipe is packed with berries, very moist, and topped with a buttery crumb topping! This mixed berry loaf bread is very easy to make and comes together in only a few minutes. You can use fresh or frozen berries of your choice to make this moist and delicious mixed berry loaf bread. You can spread some butter onto this mixed berry loaf bread or eat it plain for breakfast, an afternoon snack, or dessert.
Mixed Berry Loaf Bread Ingredients 3 cups all-purpose flour 1 tbsp all-purpose flour 1/2 cup granulated sugar 1 tsp baking powder 1 tsp baking soda 1 tsp ground cinnamon 1/8 tsp salt 1/3 cup vegetable oil 1 tsp vanilla extract 2 eggs 1 1/4 cup 2 % milk 2 cups mixed berries (fresh or frozen)
Crumb Topping 1/2 cup all-purpose flour 1/2 cup granulated sugar 2 tbsp brown sugar 4 tbsp unsalted butter (cold & diced)
Directions 1. In a large bowl of a hand or stand mixer, add granulated sugar, vegetable oil, 2 eggs, one at a time, and vanilla extract and mix with a paddle attachment. Start adding the all-purpose flour to the wet ingredients in small increments until it is all added and continue mixing. 2. Add salt, baking soda, baking powder, ground cinnamon, and milk, and continue mixing the ingredients. The mixture should have a cake batter like consistency. 3. In a small bowl, lightly coat the berries with all-purpose flour to prevent them from sinking to the bottom of the mixture. You can use fresh or frozen berries in this loaf cake. Add the berries into the mixture and gently fold them in. Once you start to see color in the mixture, stop mixing, so the berries are still intact. 4. Pour the batter in a greased 9 x 5 inch loaf pan. Smooth out the top to create a nice flat surface for the crumb topping. 5. Make the crumb topping by adding granulated sugar, brown sugar, all-purpose flour, and diced cold butter into a bowl. Using your hands or a pastry cutter, mix these ingredients together until you have a crumb consistency. Sprinkle the crumb topping onto the loaf cake, covering the entire top of the cake. 6. Bake the loaf cake in a 350 °F preheated oven for about 45 minutes or until a toothpick comes out clean.

150g/5oz mixed sultanas or raisins
75g/3oz brown sugar
1 lemon or orange, finely grated zest
8 thin slices white bread
100g/4oz butter, melted 230 ml fresh milk
1 egg
You will need an ovenproof dish. I used a lasagne solo sized pan and use half of the ingredients for each pan. You can also use a regular baking pan and do the layers in one pan. Don’t put too much fruits on top as this might burn. The bread pudding will puff while baking so make sure your pan is at least 1 1/2 to 2 inches in height.
My measuring cups: 1 cup - 250ml (8 fl oz) 3/4 cup- 180ml (6 fl oz) 2/3 cup - 150ml (5 fl oz) 1/2 cup - 120ml (4 fl oz) 1/3 cup - 75ml (2 1/2 fl oz) 1/4 cup - 60ml (2 fl oz) 1 tblsp - 15ml (1/2 fl oz) 1 tsp - 5ml (0.17 fl oz)
