3 c All-purpose flour 1 tb Cinnamon 1 tb Baking soda 1 ts Salt 1 1/4 c Vegetable oil 3 x Eggs 1 c Sugar 2 c Fresh strawberries/blueberry 1 c Chopped nuts Makes 2 loaves Combine the flour, cinnamon, baking soda, and salt; set aside. In large bowl of electric mixer, combine oil, eggs, and sugar, mixing well. Gradually add dry ingredients to creamed mixture, stirring until just moistened. Stir in berries and nuts. Spoon mixture into 2 greased and floured loaf pans. Bake at 1 hour at 350 deg F or until tested done. Cool in pans 10 minutes; remove to wire racks to cool completely. These freeze well; make multiple loaves with extra berries.

Super Moist Blueberry Loaf Cake
How to make a foolproof velvety and moist Blueberry Loaf Cake. Still moist for days or even from the fridge. This is the only loaf cake recipe you'll ever need.
Here's what you'll need: 1 tsp vinegar 1/2 cup milk (125ml) 1 cup sugar (200g) 1/2 cup softened butter (115g) 1 tbsp oil (15ml) 2 eggs 1 tsp vanilla (5ml) 2 tsp lemon extract/juice (10ml) 1 and ½ cup all purpose flour (190g) 1 and 1/2 tsp baking powder (7g) 1/2 tsp salt (3g) 1 cup blueberries (fresh or frozen)
Glaze: (optional) 1/3 cup icing sugar (50g) 1 tbsp lemon juice (15ml)

Super moist and soft Banana Bread Mary Berry's Recipe/relaxing baking
2 ripe bananas 2 tbsp milk 100 g baking spread 150 g plain flour 150 g caster sugar 1 tsp baking powder 1 tsp baking soda 2 eggs 100 g dark chocolate chips
Instructions
You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.
Lightly grease the loaf tin and line it with non-stick baking parchment. Pre-heat the oven to 180°C/350°F/Gas Mark 4. Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended; an electric mixer is best for this but of course can also beat by hand with a wooden spoon.
Spoon the mixture into the prepared tin and level the surface.
Bake for about an hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean. Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.
