How To make Berry Banana Bread
1/3 c Margarine
softened
2 Egg whites :
whipped
1 c Bananas mashed
1 c Berries :

1 3/4 c Flour
2 ts Baking powder
1/4 ts Salt
2/3 c Granulated sugar
Preheat oven at 350. Prepare a 9 x 5 x 3" loaf pan with cooing spray and flour. In a mixing bowl, combine margarine, egg whites, bananas, and berries. In another mixing bowl, combine flour, baking powder, salt and sugar. Mix dry ingredients with wet ingredients just until moistened. Pour mixture into prepared pan. Bake for 50 minutes. If you’re looking for a banana bread recipe that is super moist and bursting with banana flavour, then this recipe is it! It comes together so easily, and is finished off with an optional topping of walnuts that add great crunch and texture to the banana loaf – so so good!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
▢1½ cups (339 g) mashed bananas - about 3 large bananas, must be ripe bananas (the riper the better!)
▢1⅔ cups (200 g) all purpose flour
▢2 tbsp (16 g) cornstarch - also known as cornflour in some countries
▢1 tsp baking powder
▢¾ tsp baking soda
▢½ tsp salt - omit if using salted butter
▢¾ tsp ground cinnamon
▢¾ cup (150 g) soft brown sugar
▢¼ cup (56 g) unsalted butter - room temperature
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢1½ tsp vanilla essence/extract
▢1 large egg - room temperature, size 7 egg
▢¼ cup walnuts - you can add more or less
Bake at 160 °C (320°F) with the fan on (convection mode) for 1 hour, or until a skewer or knife comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).

225g self raising flour
1 tsp baking powder
2 tbsp milk
Combine ingredients and bake for 1 hour at 180 degrees, 350 F, Gas Mark 4.

Blueberry Banana Bread - Quadruple Batch - Freezer Banking
Today, I made a quadruple batch of Blueberry Banana Bread and I thought I would share it with you. Below, I will be sharing the recipe for ONE loaf of bread. This way, you can decide how many loaves you want to make. In the video, I do share the ingredient amounts for my quadruple batch.
Recipe:
1/2 cup of butter (or 1 stick) softened
1 cup sugar
2 eggs
1 tablespoon vanilla extract
2 or 3 ripe bananas
2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
2 or 2.5 cups blueberries (fresh or frozen.....if using frozen allow them to thaw first)
Bake 350 for 50-60 min

EGGLESS BLUEBERRY BANANA BREAD
This is a moist flavorful banana bread that is studded with delicious blueberries, and topped with a crunchy sweet cinnamon streusel.

Ingredients
2 ripe bananas
2 tbsp milk
100 g baking spread
150 g plain flour
150 g caster sugar
1 tsp baking powder
1 tsp baking soda
2 eggs
100 g dark chocolate chips
Instructions
You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.
Lightly grease the loaf tin and line it with non-stick baking parchment.
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended; an electric mixer is best for this but of course can also beat by hand with a wooden spoon.
Spoon the mixture into the prepared tin and level the surface.
Bake for about an hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.
Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.
