How To make Beef Rolls
4 Sandwich Or Roll Steaks *
2 ts Mustard, Dijon-style
1/2 ts Salt
1/4 ts Pepper
2 Pickles, **
2 oz Salt Pork, ** OR
2 Bacon, Strips **
1 Onion, Large, Chopped
1/4 c Vegetable Oil
1 1/2 c Beef Broth, Hot
4 Peppercorns
1/2 Bay Leaf
1 tb Cornstarch
* Sandwich or roll steaks should weigh about 6 oz each. ** Pickles, Salt Pork or Bacon should be cut into long thin strips. ~------------------------------------------------------------------------- Lay steaks on a flat surface. Spread each with mustard; sprinkle with salt and pepper. Divide pickles, salt pork (or bacon), and onion among the steaks equally. Roll up steaks jelly-roll fashion; secure with beef roll clamps, toothpicks, or thread. Heat oil in a heavy saucepan, add the steak roll, and brown well on all sides, about 15 minutes. Pour in hot beef broth, peppercorns, and bay leaf. Cover and simmer for 1 hour and 20 minutes. Remove beef rolls, discard clamps, and arrange on a preheated platter. Blend cornstarch with a small amount of cold water, stir into gravy and bring to a boil. Boil until gravy is thick and bubbly. Correct seasonings and serve separately.

Beef Rouladen - Delicious Beef Rolls from Germany
Rouladen is a German dish made of beef that is rolled up with bacon, onion, and pickles inside. It is simple to make and only requires a few ingredients. I’ve given this recipe a slight French twist.
First, the beef is pounded thin and then seasoned with salt and pepper. Then spread meat with ½ tbsp Dijon mustard. I used Dijon, but traditionally you would use German mustard. Next, bacon or smoked ham, onion, and pickles are placed on top of the beef before it is rolled up and secured with toothpicks or kitchen twine. The Rouladen is then browned in a pan before being simmered in beef broth until tender.
This dish is typically served with potatoes and gravy. For a French twist, Rouladen can also be made with veal instead of beef. Being French, I like it served with mashed potatoes and green beans.

How to make Goan Beef Roulade | Goan Stuffed Beef and Pork Rolls Recipe
►A much-loved goan festive dish, thin slices of meat are marinated with ground masala paste and wrapped around sausage meat, pork fat and vegetables, rolled up and braised until tender
Ingredients:
For Beef Rolls:
650 gms beef (thinly sliced & tenderized)
125 gms pork fat
150 gms chorizos or goan sausages
1 onion (sliced)
1 potato (julienne cut)
1 carrot (julienne cut)
1 capsicum (julienne cut)
2 onions
1 tomato
2 dried kashmiri red chillies
4 Tbsp. cooking oil
salt to taste
toothpicks (to secure beef rolls)
For Masala Paste:
10 garlic cloves
1” ginger
8 cloves
1” cinnamon stick
¼ tsp. cumin seeds
¼ tsp. turmeric powder
¼ cup vinegar
2 pinches of salt
¼ tsp. sugar
Serves: 6-8

Stuffed Steak Rolls
Here is what you will need!
Makes 6
Ingredients
2 tablespoons canola oil, divided
3 tablespoons chopped garlic
2 sweet onions, such as Vidalia, chopped
2 cups mushrooms, thinly sliced
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
2 pounds flank steak
Kosher salt
Freshly ground black pepper
1 (4-ounce) package baby spinach
9 slices Provolone cheese
Preparation
Preheat oven to 350° Fahrenheit.
Heat 1 tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
Lay the flank steak on a cutting board. Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of Provolone. Press down lightly to compress the spinach. Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use 6 toothpicks to secure the steak roll. Slice the steak roll into 6 equal rolls.
Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for 1-2 minutes, then flip. Sear the second side for about 1 minute, then bake for 10-15 minutes, until medium-rare.
Remove the toothpicks, then serve!
