How To make Rinderrouladen(Beef Rolls)
4 ea Sandwich or roll steaks
*
2 ts Mustard :
dijon-style
1/2 ts Salt
1/4 ts Pepper
2 ea Pickles **
2 oz Salt pork :
** or
2 ea Bacon strips **
1 ea Onion :
large, chopped
1/4 c Vegetable oil
1 1/2 c Beef broth -- hot
4 ea Peppercorns
1/2 ea Bay leaf
1 tb Cornstarch
* Sandwich or roll steaks should weigh about 6 oz each. ** Pickles, Salt Pork or Bacon should be cut into long thin strips. +++++++++++++++++++++++++++++++++++++++++++++++++++++++ ++++++++++++++ ++++ Lay steaks on a flat surface. Spread each with mustard; sprinkle with salt and pepper. Divide pickles, salt pork (or bacon), and onion among the steaks equally. Roll up steaks jelly-roll fashion; secure with beef-roll clamps, toothpicks, or thread. Heat oil in a heavy saucepan, add the steak roll, and brown well on all sides, about 15 minutes. Pour in hot beef broth, peppercorns, and
bay leaf. Cover and simmer for 1 hour and 20 minutes. Remove beef rolls, discard clamps, and arrange on a preheated platter. Blend cornstarch with a small amount of cold water, stir into gravy and bring to a boil. Boil until gravy is thick and bubbly. Correct seasonings and serve separately.

The ingredients :
-Beef thin slices according to the number of people, usually 2 per person
-Salt and black pepper
-Mustard

Bacon + slice of pickled cucumber + onions + carrots (optional)
Option 2
Cold beef slices + pickled cucumber + onions + carrots + celery
Option # 3
Pickle + onion + carrot + celery + garlic + oregano + dry parsley
Cooking twine
Butter
Olive oil
To make the sauce
A tablespoon of butter
1/2 cup onion chopped very small
1/2 cup carrots chopped very small
1/2 cup celery chopped very small
1/2 cup optional red wine
3 cups beef stock
2 cloves of garlic
3 bay leaves
You can add a small cinnamon stick
Starch about 2-4 Tbsp. depending how much liquid you have
Instant Pot : 6 qt
Pressure cooking time : 30 minutes
NPR: 10-15 minutes

German Beef Rouladen Recipe + Homemade Spaetzle
This amazing beef rouladen is stuffed up with mustard, pickles, and onions and served with a delicious easy to make beef gravy. You will love how simple this is to prepare and just how flavorful it is.
Rouladen is a classical German recipe consisting of thinly sliced and pounded out beef that is stuffed with salt, pepper, mustard, bacon, onions, and pickles. You sear the beef and then simmer it in a flavorful beef sauce until it is tender.
This is a recipe I used to make at one of the restaurants I worked at when we had a lot of leftover chunks of meat. It’s easy to make and it really packs a punch in the flavor department, however, you will need to allow some time for them to cook in the oven.

Ingredients for the Rouladen:
For the Rouladen:
• 2 pounds top round beef, cut into 8 large slices
• 1/3 cup Dijon or German mustard
• 8 slices of bacon, cut in half
• ½ peeled and thinly sliced yellow onion
• 5 small-medium size pickles, julienne
• salt and pepper
For the Sauce:
• 2 thinly sliced leeks
• 1 peeled and large diced yellow onions
• 2 peeled and large diced carrots
• 2 large diced celery stalks
• 6-8 parsley stems with leaves
• 2 tablespoons tomato paste
• 1 cup cabernet sauvignon wine
• 4 cups beef stock
• 2 tablespoons unsalted butter
• salt and pepper to taste
• 2 tablespoons of red currant jelly, optional
Ingredients for the Spaetzle:
• 3 cups all-purpose flour
• 5 large eggs
• ¾ cup water
• 1 teaspoon salt
• ¼ cup unsalted butter

So geht‘s:
1 EL Bratöl und 1 EL Butter in einer Pfanne erhitzen. Zwiebeln darin ca. 10 Minuten glasig braten und abkühlen lassen
Rouladenfleisch mit Gewürzsalz, Pfeffermix und Würzkraft würzen. Untere zwei Drittel der Rouladen mit Senf bestreichen. Je 2 Scheiben Speck darauflegen. 2 Rouladen mit 2 Gurken, 2 Rouladen für mit je 1 Karotten- und Selleriestreifen sowie 1 Gurke belegen, Zwiebelstreifen darauf verteilen. Fleisch seitlich etwas über die Füllung schlagen, dann jeweils von der unteren Seite fest einrollen. Rouladen mit Zahnstochern feststecken oder mit Küchengarn zusammenbinden. Rouladen mit Würzsalz und Pfeffermix von außen würzen
1 EL Bratöl in einem Topf erhitzen. Rouladen darin rundherum kräftig anbraten. Rouladen herausnehmen. Zwiebel-, Karotten- und Selleriewürfel im Bratsatz mit 2 EL Bratöl unter Wenden ca. 5 Minuten anrösten. Mit Gewürzsalz und Pfeffermix würzen. Tomatenmark zufügen und unter Rühren ca. 2 Minuten anrösten. Mehl darüberstäuben und ca. 1/2 Minute mitrösten. Mit Wein ablöschen und Bratsatz loskochen. Rouladen daraufsetzen und leicht eindrücken. Heiße Brühe zugießen. Rouladen zugedeckt ca. 2 Stunden schmoren
Rouladen aus dem Schmorfond heben. Schmorfond in ein feines Sieb über einen Topf geben und mit einer Kelle durchdrücken. Sauce nochmals aufkochen. 1 EL Butter zufügen und darin unter Rühren schmelzen. Rouladen und Sauce anrichten. Dazu schmecken Petersilienkartoffeln

3 Zwiebeln, gewürfelt
1 EL Tomatenmark
1 EL Mehl
200 ml HSN Rotwein
250 ml HSN Gemüsebrühe

Rouladen- German Beef Roulades
Rouladen- German Beef Roulades
This is our recipe for Rouladen. Although it may not be 100% authentic, we have used as many authentic ingredients as we could source.
Our Rouladen is made with a Top Round beef roast that we asked the butcher to slice thin for Rouladen.
We sourced German gherkins and German mustard. We used a stone ground mustard. I believe a more authentic dish uses German yellow or dijon mustard.
My wife’s family is of German descent and this dish has been in her family for almost a Century, although I accidentally said decade in the video.
We topped or beef with mustard, smoked bacon, sautéed onions and the gherkins and rolled into a roulade. We browned our roulades and used the fond from the pan to deglaze carrots, celery and onions with red wine and beef stock.
We then placed our roulades into a 325 degree oven for 2 hours. The roulades were then set aside and the vegetable were strained from the liquid. We added a corn starch slurry to thicken and placed the roulades back into the sauce before serving.
