How To make Beef Kofta In Cream Sauce
BEEF KOFTA 2 lb ground beef
2 tbsp whipping cream
2 tsp ginger root
chopped fine
2 chiles, red or green :
fresh, chopped fine
3 garlic cloves chopped fine
1 1/2 tsp coriander seed :
ground
1 1/2 tsp garam masala
1 1/4 tsp cumin ground
1 tsp mango powder
salt
CREAM SAUCE 1 tbsp vegetable oil (I used ghee <made from butter>)
1 tsp cumin seed
2 bay leaves
2 tsp ginger root :
chopped fine
2 chilis, red or green chopped fine
3 garlic cloves
1 1/4 c whipping cream
1 1/4 tsp coriander seed :
ground
1 1/4 tsp cumin seed ground
1 tsp mango powder
1/2 tsp turmeric :
ground
1/2 tsp garam masala
1 bunch cilantro -- leaves, chopped fine
To make kofta, place beef, cream, ginger, chilies, garlic, ground coriander, garam masala, cumin, mango powder, and salt to taste in a bowl and mix well to combine. Take spoonfuls of mixture and, using wet hands, mold mixture into oval shapes or balls and place in a steamer. Three-quarters fill a saucepan with water and bring to the boil. Place steamer over saucepan, cover and steam for 15 to 20 minutes, or until kofta is just cooked.
Remove kofta from steamer and place in a shallow ovenproof dish. Set aside.
To make sauce, heat oil in a saucepan over low heat, add cumin seeds, bay leaves, ginger, chilies and garlic and cook for 2 minutes. Stir in cream, ground coriander, cumin, mango powder, turmeric and garam masala and cook, stirring constantly, for 5 to 7 minutes. Remove sauce from heat, stir in cilantro, and season to taste with salt. Spoon sauce over kofta, cover and bake at 300 degrees F for 20 minutes.
The health conscious can try using spinach in the sauce in place of the cream. You will need 2 bunches (2lb) tender, young spinach. Chop the spinach, then steam or microwave until tender. Drain, place in a food processor or blender, and process until smooth. Simply use the spinach puree in place of the cream.

250 ml liquid cream

Ingredients::
1 cup Onion
1 cup Paneer
1/2 Kg Chicken Boneless
3-4 Green Chilies
1 cup Coriander
3 Bread Slices
4 tbsp roasted chickpea powder
1 tsp Ginger garlic paste
1 tsp Coriander powder
½ tsp Turmeric
1/2 tsp Garam Masala
1 tsp Cumin powder
Salt to taste
Oil for frying
Ingredients for Gravy:
½ cup Oil
1 cup Tomato puree
1 cup Onion Paste
1 tsp ginger Garlic paste
2-3 green chilies
2 tbsp Cashew nut powder
½ tsp Garam Masala
½ tsp Turmeric
1-2 tsp Red chili powder
Salt to taste
1 cup Yogurt
½ cup Cream
¼ cup water
1-2 tbsp Coriander for garnishing
Direction for Malai Kofta:
- In a chopper add all kofta ingredients and mix all together well.
- Grease your hand with oil and make a ball of kofta mixture.
- Heat oil in a pan and cook koftas on medium low flame until light golden brown.
- In a pan heat oil add onion paste and cook for 2 minutes. Now add ginger garlic paste then green chilies and cook for a minute.
- Add tomato puree and cook for 2-3 minutes.
- All spices and cook for a minute. Now add water. Mix it well.
- Add yogurt and cook for about -4 minutes. Add cream and mix it well.
- Add fried Kofta in the gravy.
- Cover the lid and let it simmer for 4-5 minutes.
- Garnish with cream and coriander.
- Serve with Naan or roti.
Preparation Time: 10-12 minutes
Cooking Time: 20 minutes
Severing: 4-5

کھانے کا تیل فرائی کے لئے
گریوی کے اجزاء:

پسے ہوئے ٹماٹر 1کپ
پیاز پیسٹ 1کپ
ادرک لہسن پیسٹ 1چائے کا چمچ

کاجو پاؤڈر 2کھانے کے چمچ
گرم مصالحہ آدھا چائے کا چمچ
ہلدی آدھا چائے کا چمچ
لال مرچ پاؤڈر 1-2چائے کے چمچ
نمک حسبِ ذائقہ
دہی 1کپ
کریم آدھا کپ
پانی 1چوتھائی کپ
دھنیا 1-2کھانے کے چمچ (گارنش کے لئے)
ترکیب:
ایک چوپر میں کوفتے کے تمام اجزاء ڈال کر اچھی طرح مکس کر لیں۔
ہاتھوں پر آئل لگا کر کوفتے کے مکسچر سے گول کوفتہ بنا لیں۔
ایک پین میں کھانے کا تیل گرم کر یں اور کوفتے ہلکی درمیانی آنچ پر گولڈن براؤن ہونے تک پکائیں۔
پھر ایک برتن میں کھانے کا تیل گرم کریں اس میں پیاز پیسٹ ڈال کر 2منٹ کے لئے پکائیں۔
اب ادرک لہسن پیسٹ اور سبز مرچیں ڈال کر 1منٹ کے لئے پکالیں۔
پھر پسے ہوئے ٹماٹر ڈال کر 2-3منٹ کے لئے پکائیں۔
اب گریوی کے تمام اجزاء اور پانی ڈال کر 1منٹ کے لئے اچھی طرح پکائیں۔
پھردہی اور ڈال کر 4منٹ کے لئے پکائیں اور کریم ڈال کر 1منٹ مزید پکائیں۔
اب گریوی میں فرائیڈ کوفتہ ڈالیں اور ڈھانپ کر 4-5منٹ کے لئے دم پر رکھ دیں۔
دھنیا اور کریم کے ساتھ گارنش کر کے نان یا روٹی کے ساتھ سرو کریں۔
