Turkish Style Kofta with Yogurt Sauce | English subtitled
Ingredients:
½ Kg Ground Beef, Chicken or Mutton
1 Medium Onion
1 tb Garlic
1 tb Ginger
2~3 Green Chillies
2 tb Coriander Leaves
½ tsp Salt
½ tsp Turmeric Powder
1 tsp Red Pepper
1 tsp Garam Masala
½ Cup Bread Crumbs or Chickpeas Powder
For Sauce:
300 ml Yogurt
1 Pinch Salt
½ tsp Garlic
For Serving:
Potato Fries

Method:
Chop Onion, green chilies, coriander leaves, garlic, ginger in chopper.
Now add mince, bread crumbs, dry spices & chop again.
Make meatballs of this above mixture.
Add 2~3 tbs oil in pan and fry the meatballs.
Now add 3~4 tbs water in meatballs pan, dry spices, cover the pan & put it on low flame for 3~4 minutes.
Method to make Yogurt Sauce:
Add milk, salt and garlic to the Yogurt and mix well.
Serving:
Put Potato Fries in a serving bowl, then add meatballs, yogurt sauce and the gravy of meatballs from the pan.

Kitchen Wisdom Lamb Kofta with Yogurt Sauce
Kofta Recipe:
1/2 cup almonds - toasted in oven
1 onion
3 cloves garlic
1/4 red pepper 1/4 yellow pepper 1/4 orange pepper
handful fresh cilantro
Process almonds in food processor until finely chopped but not ground. Put into large bowl.
Process onion, garlic, peppers and cilantro until finely chopped. Put veggies in a sieve and push out moisture content. Add veggies to bowl.
Then add to bowl:
I lb. ground lamb, beef, beyond beef or other ground meat.
1 tsp cinnamon
1 tsp cardamom
1 tsp cumin
1 tsp salt.
Mix together well. Shape into small patties and grill.
Serve with Yogurt sauce;
Mix together
3/4 cup Greek plain yogurt
1/2 chopped cucumber
1/4 cup crumbled feta
1/4 cup chopped cilantro
1 clove garlic (optional)
salt and pepper
Add some grilled pita or naan, hummus and a green salad and that's dinner!

LAMB KOFTA & YOGURT SAUCE

buat yang mau weekend di rumah dan mau coba menu masakan berbeda, coba resep saya lamb kofta with yoghurt sauce.
Kali ini saya memakai potongan lamb leg. Daging domba ini suka banyak rumor yang salah, padahal daging domba ini merupakan daging merah yang sama nutrisinya dengan daging sapi.
Apalagi daging domba Australia dipelihara di alam bebas dan secara alami diberi makan di padang rumput, jadi rendah lemak dan empuk.
Plus, Aussie Lamb bebas dari aditif buatan dan promotor pertumbuhan hormon.
Kebab / Kofta:
500g lamb leg, cincang halus
1 bawang bombay, cincang
2 siung bawang putih, cincang
1/4 cup peterseli, cincang
1/4 cup pistachio nuts ground
11/2 sdt garam
1 sdt merica hitam
1 sdm jinten bubuk
1 sdm paprika bubuk
1 sdt cabai bubuk
1 sdm minyak zaitun
Yoghurt sauce:
100ml plain greek yoghurt
1/2 siung bawang putih, cincang halus
1 sdm lemon juice
1/2 sdt garam
1/4 sdt merica putih
Couscous:
100g Couscous
1 sdm minyak zaitun
1/2 bawang bombay, cincang halus
2 siung bawang putih, cincang halus
1/4 sdt ketumbar bubuk
1/4 sdt kunyit bubuk
1/4 sdt jinten bubuk
150ml kaldu ayam
1/4 sdt garam
Pelengkap:
1 Lemon, wedges
1/2 cup peterseli, cincang
1/2 cup cherry tomato, grilled

Easy and delicious kofta kebab recipe without an oven with two delicious sauces.
المكونات:
لحم غنمي مفروم (1 كيلوجرام)
ربع كوب بقدونس (10 جرام).
ملعقة كبيرة ثوم (15 جرام).
ملعقة صغيرة من الملح والفلفل الحلو والكمون ورقائق الفلفل الأحمر ونصف ملعقة صغيرة فلفل اسود
حبة بصل مبشورة (100 جرام) مع تصفية العصائر
نصف حبة فلفل أحمر (50 جرام) مقطعة مع تصفية العصائر
للصلصة الخضراء: نصف كوب زبادي (120 جرام) ، كزبرة (10 جرام) ، زنجبيل (5 جرام) ، ثوم (5 جرام) ، فلفل حار
(كمية اختيارية) ، ربع ملعقة صغيرة كمون ، ملح ، وفلفل الأسود
للصلصة الحمراء الحارة: ثلاث ملاعق كبيرة من مسحوق الفلفل الأحمر (45 جرام) ، ملعقة كبيرة من رقائق الفلفل الأحمر (15 جرام) ، أربع ملاعق كبيرة من الخل (45 مل) ، ملعقة كبيرة زيت زيتون ، ملح
يقطع البصل إلى أربع ، والطماطم المقطعة إلى أربع ، والفلفل الطويل للتحميص
زيت نباتي للقلي
الخبز المفضل لديك للتقديم
التعليمات:
في وعاء للخلط ، يُمزج اللحم المفروم والبقدونس والثوم والملح والفلفل الحلو والكمون ورقائق الفلفل الأحمر والبصل المبشور والفلفل الأحمر المفروم. تخلط جيدا حتى تمتزج جميع المكونات جيدا. غطي الوعاء بغلاف بلاستيكي وضعيه في الثلاجة لمدة 30 دقيقة.
أثناء نقع اللحم ، قم بتحضير الصلصات. بالنسبة للصلصة الخضراء ، اخلطي الزبادي ، والكزبرة ، والزنجبيل ، والثوم ، والفلفل الحار (في حالة الاستخدام) ، والكمون ، والملح ، والفلفل الأسود في الخلاط حتى يصبح المزيج ناعمًا. انقلي الصلصة إلى وعاء وضعيها في الثلاجة حتى وقت اللتقديم.
بالنسبة للصلصة الحارة الحمراء ، اخلطي مسحوق الفلفل الحار الأحمر ورقائق الفلفل الأحمر والخل وزيت الزيتون والملح في وعاء صغير. تخلط جيداً وتوضع في الثلاجة حتى وقت التقديم.
سخني مقلاة على نار متوسطة. اشوي البصل والطماطم والفلفل الطويل حتى يتفحموا قليلاً. يرفع عن النار ويوضع جانبا.
بلل يديك بالماء وشكل خليط اللحم على شكل فطائر مستديرة. تأكد من أنها متساوية الحجم حتى تطبخ بالتساوي.
في نفس المقلاة المستخدمة لشوي الخضار ، أضيفي القليل من الزيت النباتي واقلي فطائر الكفتة حتى تنضج بالكامل ويصبح لونها بنياً ذهبياً من الجانبين.
قدمي الكفتة كباب مع الخضار المحمصة والصلصة الخضراء والصلصة الحارة الحمراء وخبزك المفضل.

Ingredients:
Minced lamb (1 kilogram)
One fourth of a cup of parsley (10 grams)
One tbsp of garlic (15 grams)
One tsp each of salt, paprika, cumin, and red chili flakes, and half a tsp of black pepper
One grated onion (100 grams) with the juices strained
Half a red bell pepper (50 grams) chopped with the juices strained
For the green sauce: Half a cup of yogurt (120 grams), coriander (10 grams), ginger (5 grams), garlic (5 grams), hot pepper (optional amount), one fourth of a tsp of cumin, salt, and black pepper
For the red hot sauce: Three tbsps of red chili powder (45 grams), one tbsp of red chili flakes (15 grams), four tbsps of vinegar (45 ml), one tbsp of olive oil, salt
Onion cut into fours, tomatoes cut into fours, and long peppers for roasting
Vegetable oil for frying
Your favorite bread for serving
Instructions:
In a mixing bowl, combine the minced lamb, parsley, garlic, salt, paprika, cumin, red chili flakes, grated onion, and chopped red bell pepper. Mix well until all the ingredients are well combined. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
While the meat is marinating, prepare the sauces. For the green sauce, blend the yogurt, coriander, ginger, garlic, hot pepper (if using), cumin, salt, and black pepper in a blender until smooth. Transfer the sauce to a bowl and refrigerate until ready to serve.
For the red hot sauce, mix the red chili powder, red chili flakes, vinegar, olive oil, and salt in a small bowl. Mix well and refrigerate until ready to serve.
Preheat a pan on medium heat. Roast the onion, tomatoes, and long peppers until they are slightly charred. Remove from heat and set aside.
Wet your hands with water and shape the meat mixture into round patties. Make sure they are evenly sized so that they cook evenly.
In the same pan used for roasting the vegetables, add a little bit of vegetable oil and fry the kofta patties until they are cooked through and golden brown on both sides.
Serve the kofta kebab with the roasted vegetables, the green sauce, the red hot sauce, and your favorite bread.

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
