How To make Lamb Kofta with Yogurt Sauce
1 lb Ground lamb
2 Eggs, lightly beaten
1 1/4 c Stale breadcrumbs
2 Onions, grated
2 tb Chopped fresh parsley
1/2 ts Ground cinnamon
1 ts Ground cumin
1/2 ts Chili powder
2 ts Tumeric
1 ts Ground allspice
Blend or process all ingredients until smooth and pasty. Shape 1/4 cup lamb mixture around skewer in and elongated (3 to 4 inch) sausage shape along length of skewer; repeat with remaining mixture. Tip: if using wooden skewers, soak in water before shaping meat. Just before serving, grill or barbecue kofta until cooked. Serve with yogurt sauce. Yogurt Sauce: 1/2 cup plain yogurt 2 tsp lemon juice 2 Tbsp tahini paste 1 clove garlic,

EASY LAMB KOFTAS WITH MINT YOGURT DIP
Kitchen Wisdom Lamb Kofta with Yogurt Sauce
Kofta Recipe:
1/2 cup almonds - toasted in oven
1 onion
3 cloves garlic
1/4 red pepper 1/4 yellow pepper 1/4 orange pepper
handful fresh cilantro
Process almonds in food processor until finely chopped but not ground. Put into large bowl.
Process onion, garlic, peppers and cilantro until finely chopped. Put veggies in a sieve and push out moisture content. Add veggies to bowl.
Then add to bowl:
I lb. ground lamb, beef, beyond beef or other ground meat.
1 tsp cinnamon
1 tsp cardamom
1 tsp cumin
1 tsp salt.
Mix together well. Shape into small patties and grill.
Serve with Yogurt sauce;
Mix together
3/4 cup Greek plain yogurt
1/2 chopped cucumber
1/4 cup crumbled feta
1/4 cup chopped cilantro
1 clove garlic (optional)
salt and pepper
Add some grilled pita or naan, hummus and a green salad and that's dinner!

Lamb Kofta:
500g minced lamb
1 small onion, minced
Handful coriander & mint, chopped
3 cloves garlic, minced
1 tsp cumin
1 tsp cinnamon powder
1 tsp paprika
1/2 dried chilli flakes
salt & pepper
Olive Oil (for frying)
Yoghurt Sauce:
5 spoonful greek yoghurt
3-4 mint leaves
4 cloves garlic
1 tsp cumin
small lemon, half
salt & pepper
Makes 8-9 skewers

Follow this recipe for the most delicious Lamb Koftas.
Ingredients:
1 pound of ground lamb
1/2 yellow onion
3-4 garlic cloves
Parsley
olive oil
2 teaspoons cumin
2 teaspoons of coriander
2 teaspoons of smoked paprika
1 1/2 to 2 teaspoons of cinnamon
1/4 to 1/2 teaspoon of cayenne pepper
Salt
Black Pepper
Yogurt Sauce:
Greek Yogurt ( a small container)
2 minced cloves of garlic
1/2 teaspoon of cumin
1 tablespoon of lemons juice
pinch of salt

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
