Ingredients: makes 25 taquitos
1/2 white onion; chopped
1 jalapeño;chopped
1 1/2 lean ground beef
2 roma tomatoes
2 potatoes;chopped
1 tbsp New Mexico chili powder
Salt, I used 2 1/2 tsp
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1/2 tsp ground cumin
7.4 oz el pato tomato hot sauce
For the salsa
6 tomatillos
2 roma tomatoes
Chile de árbol, I used 15
1/4 onion
2 garlic cloves
Handful of cilantro
Salt, I used 2 tsp
Infused oil(I only use 1/2)
3/4 cup oil
1 tbsp New Mexico chili powder
2 tsp Cajun seasoning

At a time where the supermarket shelves are unusually scarce, learning to create healthy, nutritious recipes from easy to source and affordable ingredients is as important as ever.
This burrito recipe is a quick and easy base for a variety of delicious meals. The mince and bean sauce mix can be used to make delicious burritos or you can even serve over rice or pasta. This dish features a good source of meat and vegetables that provide protein, iron and fibre. The recipe uses mainly long life shelf products that your pantry may already have!
RECIPE
Serves 6 people.
Tip: make extra portions and freeze them for another meal.
INGREDIENTS:
• 500g beef mince
• 1 x brown onion, diced
• 1 x 400g can diced tomatoes
• 1 x 420g can kidney beans (or other beans of your choice)
• 150g tomato salsa (1/2 jar)
• 1 x tablespoon of oil of your choice
• 6 x wholemeal tortilla wraps
METHOD:
• Heat oil in a non-stick fry pan over a medium heat on your stove top.
• Add your mince to the pan and cook until completely browned.
• Add onion and cook for a further minute or two, until the onion is soft and becoming transparent.
• Add remaining ingredients to the pan.
• Cook simmering, uncovered for 8-10 minutes.
• Lay tortilla wraps onto individual dinner plates, evenly distributing the mince mixture between the 6 wraps. Wrap up and enjoy!
• Alternatively, cook rice or pasta to the packet directions and serve with your mince mixture.

1 Can (400g-14.1oz) - Corn Kernels, Drained
2 - Tomatoes, Diced
1/2 - Red Onion, Diced
1 - Jalapeño, Diced
7g (0.25oz) - Coriander (Cilantro), Roughly Chopped
2 - Small Limes, Juiced
Seasoning To Taste
Spiced Beef Mix -
2 tsp (10ml) - Olive Oil
750g (1.65lbs) - Beef Mince (Ground Beef)
1 tsp (2.5g) - Ground Cumin
1 tsp (1.5g) - Dried Oregano
1 tsp (2.5g) - Smoked Paprika
1/2 tsp (1g) - Chilli Powder
2/3 Cup (150ml) - Beef Stock
3 - White Root End Spring Onions (Scallions), Thinly Sliced
Seasoning To Taste
Remaining Ingredients -
1 Can (400g-14.1oz) - Black Beans, Drained & Rinsed
120g (4.23oz) - Cheddar Cheese, Grated
350g (12.35oz) - Basmati Rice, Washed
700ml (700g) - Cold Water
