Smoky BBQ Beef Sandwich | BBQ Tri-Tip | Ballistic BBQ | Backyard Life
Smoky BBQ Beef Sandwich made with smoked tri-tip! I made this incredible sandwich on my 22 kettle grill for Exmark's Backyard Life Campaign utm_source=ambassador&utm_medium=social&utm_campaign=EX20_Backyard&content=mrvich-greg Tri Tip smoked over hickory wood low and slow, then finished with a reverse sear.
BBQ Beef (Tri Tip) Sandwich with Southwestern BBQ Sauce and Pickled Onion, Hatch Chili Relish Links, and recipe below.
Ingredients:
1 3-4 pound tri-tip roast, trimmed of all exterior fat and silver skin
Equal amounts of kosher salt, black pepper, and garlic powder, are mixed into a rub. About ¼ - ½ cups in total.
Pickled Onion, Hatch Chili Relish
Perfect amount of heat, acid, and a little crunch for the perfect sandwich!
Prep Time 10 minutes
Total Time 40minutes
Servings 15 servings
Ingredients:
¾ Cup red onion, finely chopped
¼ Cup fresh Hatch chili (or any green chili) finely chopped
1 Teaspoon kosher salt
¾ Cup apple cider vinegar
¼ Cup water
1-2 Tablespoons agave nectar
Instructions:
1. Heat the vinegar mixture. In a small saucepan, stir together the vinegar, water, salt and your desired amount of sweetener. Cook over medium-high heat until the mixture reaches a simmer. (Alternatively, you can heat the mixture in the microwave.)
2. Combine in a jar. Place the thinly-sliced onions in a mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture.
3. Marinate. Let the onions marinate for 30 minutes. (You may need to press the onions down with a spoon so that they are all submerged under the vinegar mixture.)
4. Serve. Serve immediately, or refrigerate the onions in a sealed container for up to 2 weeks.
BBQ Sauce Recipe
For this sandwich, I mixed about 1 cup of BBQ sauce (use your favorite!), 1 ½ tablespoon of chopped chipotle peppers in adobo sauce, and 1 tablespoon of chopped mild Hatch chili peppers.
BBQ Tri Tip Roast
Set up the grill for low indirect heat, between 225ºF and 250ºF, with the cooking wood of your choice. Season the tri-tip liberally on both sides and place on indirect side of your cooker. Flip roast once it hits 90ºF. Remove tri-tip from the cooker once the internal temperature hits 125ºF, loosely cover with foil and allow to rest while you get the grill ready for searing the roast. Once the grill is ready, and the tri-tip has rested at least ten minutes, sear the roast for about 1 minute per side. Rest another 10 minutes, then slice across the grain.
Assembling Sandwich
Toast the sandwich rolls of your choice, I used bolillo rolls for my sandwiches. Layer and a nice amount of sliced tri-tip on the bottom bun, followed by sauce and then the relish. “Crown” with the top bun and enjoy!

Chopped Beef Sandwich | Chuck Roast Recipes
We fired up our Cotton Gin Smoker and made some rich & flavorful chopped beef sandwiches for this video. A simple recipe that packs big flavors!
• 3 LBS of Chuck Roast
• 4 TBSP Worcestershire Sauce
• 3 TBSP of Killer Hogs TX Brisket
• 3 TBSP of Killer Hogs The BBQ Rub
• 1 Cup of Beef Stock
We ran our Cotton Gin fueled with Jealous Devil Charcoal at 300 degrees. Trimmed any hard fat off the edges of the roast. Coated the outside with the W Sauce as our binder. We layered on the TX Brisket seasoning and then the rub. Let it sit for 30 minutes. Place on the smoker until the meat reaches 180 degrees. Once temp is hit remove from smoker, place in a half foil pan and add 1 Cup of beef stock. Wrap the pan in foil, run your meat probe under the foil, not through the top. Place back on the smoker until the internal temp reaches between 208-210 degrees, remove and let rest. Chop the beef and serve on your favorite rolls.

BEEF BRISKET SANDWICH RECIPE
Hosting a hungry crowd? Make this BEEF BRISKET SANDWICH RECIPE.
Fair warning, lovers of delicious food: prepare to be amazed. Both Carol and I have made this BEEF BRISKET SANDWICH RECIPE in our respective cottages for family and friends, and every single person has said, “Wow! Is this ever good!” This recipe for homemade beef brisket sandwiches has a few more claims to fame; here’s what sets it apart from other beef sandwich recipes:
- You need very little prep time to make it; just rub the brisket with our BUTCHER’S BLEND seasoning and a bit of brown sugar.
- The brisket is cooked until tender in a no-fuss slow cooker.
- The meat easily pulls apart and gets tossed with our tangy original BBQ SAUCE.
- All it takes to assemble these simple sandwiches are some large buns, the flavourful beef brisket, and slices of Swiss cheese.
Before we present the details on making these sandwiches, a reminder to check out our line of food products available for purchase. Our SPICE BLENDS, RUBS and DIPS are just the thing to add a pop of flavour to any recipe, and our famous BBQ SAUCE works with everything.
