How To make Barbequed Beef Sandwiches
4 pounds boneless beef chuck
2 cups water
1 onion stuck with 3 whole cloves
2 bay leaves
2 tablespoons butter
1/2 cup finely chopped onion
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon dried mustard
1 cup ketchup
2 tablespoons cider or white vinegar
2 tablespoons Worcestershire sauce
Place meat, water, onion, bay leaf in pressure cooker. Cook 30 minutes, allow vent to cool down on its own. (Or, if preferred, double the amount of water and simmer in a heavy saucepot until tender, about 3 hours). Remove meat and reserve one cup of broth. Discard the onion and bay leaves. Cut and (or) shred beef into bite-sized pieces. In small pan melt butter, saute chopped onion until tender and golden.
Add all the remaining ingredients, along with the reserved broth, to the onions and simmer for 5-10 minutes. Pour sauce over meat. Simmer 30 minutes. Serve on rolls or bread. (Keeps well in a crockpot - can be taken to picnics, potlucks, etc. Leftovers freeze well). Serves 10-12.

INGREDIENTS:
• 2 1.75lb Chuck Roasts
• Heath Riles BBQ Beef Rub
• 1-2 tbsp Heath Riles BBQ Sweet BBQ Sauce
• 1/2 cup Bear and Burton's The W Sauce
• 1 whole Sliced Onion
• 4 Carrots Chopped
• 5 Celery Stalks Chopped
• Ciabatta French Bread
• Provolone
• 1 cup Red Cooking Wine
• 32oz Beef Broth
• 12 Garlic Cloves
• 1/2 stick of Butter
• Blue Plate Mayonnaise
DIRECTIONS:
1. Get your grill up to 275º.
2. Chop all your vegetables, this includes your carrots, celery, and onion. We didn't chop our garlic cloves.
3. Take your chuck roasts out of the pack and season both sides with Heath Riles BBQ Beef Rub.
4. Place your chuck roasts on your grill.
5. Assemble your broth. Add your vegetables, butter, beef broth, cooking wine, and W sauce in a dutch oven. Sprinkle some more Heath Riles BBQ Beef Rub over the top.
6. Add your pot to the grill with your chuck roasts.
7. Once our chuck roasts were hitting between 150-160º after almost 2 hours, we added it to our broth and let it simmer for another 2 hours. You want your beef to be fork tender.
8. Butter and toast your bread the last 15 minutes your chuck roasts are cooking.
9. After about 4 hours, we took our chuck roasts off the grill and shred them with two forks in a pan.
10. Add a couple tbsp of broth and 1-2 tbsp of Heath Riles BBQ Sweet BBQ Sauce to your pulled beef and mix.
11. Assemble your pulled beef sandwiches how you like. We added Blue Plate Mayo, provolone cheese, and some of the onions from our broth.
12. Place the sandwiches back on your grill so the cheese can melt.
13. Once the cheese is melted, remove from the grill and serve. We had about a 4 hour total cook time.

Pit Beef Sandwich Recipe
Ingredients:
- 5# bottom round roast
- 2 Tablespoons olive oil
- 1/4 cup Killer Hogs AP Seasoning
- 1 Tablespoon onion powder
- 1 Tablespoon chili powder
- 1 Tablespoon paprika
- 1 teaspoon mustard powder
- kaiser rolls for serving
- 1 thinly sliced sweet onion- Tiger Sauce (recipe below)
Tiger Sauce
- 3/4 cup Blue Plate Mayonnaise
- 1/4 cup prepared horseradish
- squeeze of lemon wedge
- 2 teaspoons Killer Hogs AP Seasoning
Mix all together in a small bowl and refrigerate for at least 1 hour.
Directions:
1. Combine AP Seasoning with onion powder, chili powder, paprika, and mustard powder in a small bowl. Drizzle olive oil over the bottom round roast for a binder and apply the seasoning to the outside.
2. Prepare a charcoal fire for direct grilling over lump coal.
3. Place the seasoned bottom round fat side down on the pit and sear for 2-3 minutes. Rotate the roast and continue to sear on all sides turning often.
4. Keep searing and turning the roast until all sides have a nice dark color and the internal temperature in the center of the roast reaches 120°F. (the outer edges will be a little more done but the center should be perfect)
5. Remove the pit beef from the grill and rest for 20 minutes before slicing thin across the grain.
6. To assemble the sandwich. Spread Tiger Sauce on the bottom bun, pile on the sliced pit beef, add thinly sliced onion and the top half of the bun. Enjoy!

Ingredients Needed:
- I used 4 lbs total of Chuck Roast and Boston Arm Roast (1 each) any roast will do!
- 4-6 Cups of beef broth (depending on how much gravy you want.
- Good Bread for the sandwiches
- Garlic Powder 1 Tsp
- Garlic Cloves (I used 10)
- Basil 1/2 Tsp
- Oregano 1/2 Tsp
- Black Pepper 1/4 Tsp
- Mozzarella Cheese
- Pepperoncini (or banana peppers)
- DON'T FORGET THE HOT GIARDINIERA MIXTURE! Get it HERE:
Directions:
- Sear your roast(s) in a hot pan with oil on ALL sides seasoning with salt and pepper
- Preheat your slow cooker (with beef broth in it) to LOW
- Place half the spice mixture (see video for clarification) into the broth and mix
- Place roasts into broth them add remaining ingredients (see video)
- Allow to cook ON LOW for 6+ hours or until fork shred tender
- Shred beef and allow meat to continue to absorb flavors in cooker for 1-2 hours for best taste
- Build your sandwich and ENJOY!!!!
