How To make Banana Coconut Crunch Cake
1 pk Banana Supreme cake mix
1 pk Banana instant pudding mix
16 oz Fruit cocktail; undrained
4 Eggs
1/4 c Oil
1 c Coconut
1/2 c Pecans; chopped
1/2 c Brown sugar
GLAZE:
3/4 c Sugar
1/2 c Butter
1/2 c Evaporated milk
1 1/3 c Coconut
Preheat oven to 350~, grease and flour oblong pan. For cake, combine cake mix, pudding mix, fruit cocktail with juice, eggs and oil in large bowl. Beat for 4 minutes. Stir in 1 cup coconut. Pour into pan. Combine pecans and brown sugar in small bowl. Stir until well blended. Sprinkle over batter. Bake at 350~F for 45-50 minutes. GLAZE: combine sugar, butter and evaporated milk in medium saucepan. Bring to a boil, cook for 2 minutes, stirring occasionally. Remove from heat, stir in 1 1/3 c. coconut, pour over warm cake. Serve warm or at room temp. Serves 12-16

Coconut Crunch Banana Bars

So I just thought that I wasn’t a huge coconut cake fan, BUT this recipe CHANGED MY MIND! So much so that I would consider this coconut cake to be one of my new favourites – it’s that good!
This recipe consists of super soft and moist coconut cake layers, topped with an incredibly delicious coconut cream cheese frosting. It’s finished off with shredded coconut added to the outside of the cake which adds amazing texture to the cake – YUM!
INGREDIENTS:
Coconut Cake
- 2¼ cups (280 g) flour - regular, all purpose
- ¼ cup (30 g) cornstarch - also known as cornflour
- 1 tbsp baking powder
- ½ tsp salt - omit if using salted butter
- ½ cup (113 g) unsalted butter - room temp
- 3 tbsp unflavoured vegetable oil - I use canola oil
- 1⅔ cups (332 g) white granulated sugar
- 3 large eggs - room temperature
- 1½ tsps vanilla essence/extract
- 1 tsp coconut essence/extract - can substitute with 1/2 tsp almond essence/extract (see note 1)
- 1¼ cups (275 g) canned coconut milk
- 1 cup (80 g) shredded coconut - dried, also called threaded coconut
Bake at 160 °C (320°F) with the fan on for 33 minutes, or until a toothpick comes out clean. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F) ????
Coconut Cream Cheese Frosting
- 1 cup (225 g) unsalted butter - room temperature
- 4½ cups (570 g) icing sugar - also called powdered/confectioners sugar
- 1½ cups (335 g) cream cheese - cold, firm type (see note 2)
- 1½ tsps vanilla essence/extract
- 1 tsp coconut essence/extract - can substitute with 1/2 tsp almond essence/extract (see note 1)
- 1½ cups (120 g) shredded coconut - dried, for decorating (recommended for texture - see note 8). Also called threaded coconut

2-3 large ripe bananas, mashed will equal to around 1 cup (approx. 8 oz.)
1-3/4 cups (210 grams) all purpose flour
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt or a pinch
1/3 cup (2.6 oz.) softened butter
2/3 cup (133 grams) granulated sugar
2 eggs, room temperature
2 tbsp. milk, room temperature
1/2 cup (64 grams) chopped walnuts for batter + 1/4-1/2 cup walnuts for topping
1 tbsp. quick oats for topping (optional)

Perfectly Moist Banana Bread Recipe
4 ripe Bananas
1 cup of White Sugar (you can use less according to desired sweetness)
1 cup of Brown Sugar (you can use less according to desired sweetness)5 Eggs
1 cup of Butter
2 teaspoons of Vanilla Extract
2 teaspoons of Almond Extract
1 cup of All Purpose Flour
1 cup of Almond Flour or Almond meal
2 teaspoons of Baking Soda
Mash bananas and add sugar and then beat in butter and then eggs and extracts, then combine in the remaining ingredients. Divide mixture into two greased loaf pans and baking in a preheated 350 degree oven for 1 hour. Then cool and enjoy!!
