How To make Banana Crunch Cake

1/2 c Pillsbury BEST all-purpose
-or unbleached flour 1 c Coconut
1 c Rolled oats
3/4 c Brown sugar, firmly packed
1/2 c Pecans, chopped
1/2 c Margarine or butter
1 1/2 c Bananas, sliced very ripe
1/2 c Sour cream
4 Eggs
1 pk Pillsbury Plus Yellow
-cake mix Heat oven to 350~F. Grease and flour 10-inch tube pan. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, coconut, rolled oats, brown sugar and pecans; mix well. Using fork or pastry blender, cut in margarine until mixture is crumbly; set aside. In large bowl, combine bananas, sour cream and eggs; blend until smooth. Add cake mix; beat 2 minutes at high speed. Spread 1/3 of batter in greased and floured pan; sprinkle with 1/3 of coconut mixture. Repeat layers twice using remaining batter and coconut mixture, ending with coconut mixture. Bake for 50-60 minutes or until toothpick inserted near center comes out clean. Cool upright in pan 15 minutes; remove from pan. Place on serving plate, coconut side up. Cool completely. Ingredients:
•3 ripe bananas
•2 stick unsalted butter
•1 cup sugar
•2 eggs
•1 teaspoon vanilla extract
•2 tablespoons sour cream
•2 ½ cups all purpose flour
•2 teaspoons baking powder
•½ teaspoon salt
•1 cup brown sugar
•¾ teaspoon cinnamon
Directions:
•Preheat an oven to 350 degrees.
•Spray a 9x13 inch pan with cooking spray.
•Mash 3 ripe bananas in a bowl.
•In a separate bowl, whisk together a stick of butter and the sugar until combined.
•Mix in the mashed bananas.
•Mix in the eggs, vanilla extract and sour cream.
•Mix in 1 ½ cups of all purpose flour, the baking powder and salt until just combined. Be careful to not over mix.
•Pour the batter into the prepared pan.
•In a bowl mix together a stick of butter, a cup of all purpose flour, the brown sugar and cinnamon until it forms a crumble that resembles wet sand.
•Sprinkle the entire crumble over the batter to form a thick top layer.
•Bake in a 350 degree oven for 40 minutes or until golden brown.
•Let cool before serving.
