How To make Banana Coconut Bread
1 c Currants
1/2 c Dark rum
3 c Flour
1 t Salt
1 t Baking soda
1 t Baking powder
2 t Cinnamon
1/2 t Grated nutmeg
2/3 c Sweetened coconut
1/2 c Vegetable shortening
1 c Packed brown sugar
2 ea Eggs beaten lightly
1/3 c Buttermilk
1 c Mashed ripe banana
Heat rum and place in bowl with currants 1 hour. In separate bowl, sift together flour, sal, baking soda, baking powder, cinnamon, nutmeg, and 1/2 cup of the coconut. In a large bowl, cream vegetable shortening and brown sugar till combined. Add eggs and beat well. Stir in buttermilk, banana and currant mixture. Combine well. Add flour mixture and stir till just combined. Spoon batter into greased loaf pan 9"x5"x2 3/4". Sprinkle with remaining coconut and bake in preheated 350 F degree oven 60 to 70 minutes or till don . Makes 1 loaf.

Easy recipe for Banana and Coconut Bread, a moist bread that combine so good the taste of bananas walnuts and coconut flakes. Instead of walnuts you can use macadamia nuts or almonds. Enjoy it alongside your morning coffee or a cup of milk.

Ingredients
1 cup (125g) flour
1/4 tsp (2g) baking soda
2 tsp (8g) baking powder
1 tsp (3g) cinnamon
1/4 tsp (2g) salt
3/4 cup (150g) sugar
2 eggs
1 stick (113g) butter, room temperature
3 or 4 ripe bananas (about 1 1/4 cup (300g) puree)
1/3 cup (70g) sour cream
1 tsp (5g) vanilla extract
3/4 cup (75g) walnuts, chopped
1 cup (70g) unsweetened coconut flakes
1.Preheat the oven to 350F (180C).
2. In a medium bowl combine flour, coconut flakes, salt, baking powder, baking soda and cinnamon.
3. In a large bowl, using an electric hand mixer, cream together the butter and sugar until creamy. Add in the eggs and mix well. Add sour cream and vanilla extract and mix until well incorporated.
4. Mix in the mashed bananas. With mixer on low speed incorporate the flour mixture. Stir in walnuts.
5. Lightly grease a 13 x 4 inch (35 X 12 cm) loaf pan. Line the bottom with parchment paper. (9 X 5 inch - 23X 13 cm loaf pan would be good too.
6. Pour the batter into the prepared loaf pan and sprinkle chopped walnuts on top. Bake for about 50-60 minutes until golden brown and a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes, and then invert onto a wire rack.

Its slightly different from the classic pound cake like banana bread. This version inspired by the many tips on serious eats, has shredded coconut, coconut oil, toasted nuts and lots more spice. The resulting loaf is a caremelly, bananey, nutty goodness, that you want to snack on morning and evening.
The bread is like a less sweet pound cake with amazing texture. I like to toast the walnuts and the coconut for deeper flavor. Add spices of choice. I use cinnamon, cardamom, nutmeg. These Bakery style Banana bread is great as is or with a drizzle of maple. If you use very ripe bananas and add in dried fruit like dates and currants, you can omit the added sugar.

Ingredients needed:
3 overripe bananas
1 tbs vanilla
1/2 tsp grated nutmeg
1 tsp cinnamon powder
1 1/4 cup coconut milk
1 egg
1 cup brown sugar
1/2 stick soften butter
1/4 cup vegetable oil
3 cups ap flour
1 tsp salt
1 tbs baking powder
1/2 cup coconut flakes
Topping:
2 tbs melted butter
2 tbs brown sugar
1/3 cup coconut flakes
Bake @350 degrees Fahrenheit
For 1 hr 15 minutes
