How To make Toasted Coconut Rum Banana Bread
1/2 c Butter
at room
Temperature 1/2 ts Baking soda
1/2 ts Salt
2/3 c Sugar
1 c Banana :
(about 3
Medium)mash 2 Eggs
3 tb Dark rum
1 c Coconut -- toasted 5-8
Minutes In 350 F oven 1/2 ts Almond extract
2 c All-purpose flour
1 ts Baking powder
Preheat the oven to 350 F. Grease and flour 9 1/2 x 5 1/2 inch loaf pan or three 5 3/4 x 3 1/2-inch loaf
pans. In a large mixing bowl, cream the butter and sugar. Beat in eggs, rum, and almond extract. In another bowl, stir the flour, baking powder, soda, and salt together, then add to the creamed mixture. Blend in the banana and coconut. Turn into prepared pan or pans. Bake 55 to 60 minutes for the large loaf , or 45 to 55 minutes for the smaller loaves, or until they test done. Cool in the pan 5 minutes, then turn onto a rack. Recipe By : -----

Today I'm making Hawaiian Banana Bread (Aloha Loaf), a recipe from the Del Monte Kitchens Cookbook. This turned out to be AMAZING and maybe the best banana bread recipe I have ever tried. It's my new go-to!

ALOHA LOAF (Hawaiian Banana Bread)
1/2c butter, softened
1c sugar
2 eggs
1/2c mashed ripe banana
2c flour
1t baking powder
1/2t baking soda
1/2t salt
1 - 8oz can crushed pineapple
1/2c shredded coconut
Cream butter and sugar until light and fluffy. Add eggs; mix well. Stir in banana. Sift together flour baking powder, baking soda, and salt. Add to creamed mixture; mix well. Fold in pineapple and coconut. Pour into greased and floured 9 x 5 loaf pan. Bake at 350 for 1 hour and 10 minutes (I had to bake mine for an extra 8 minutes). Let stand for 10 minutes. Remove from pan and allow to cool.

2 tbsp neutral oil
½ cup granulated sugar
¼ cup greek yogurt / sour cream / or cream cheese
2 eggs
¼ cup coffee liquor
Dry:
2 cups AP flour
1 tsp baking soda
1 teaspoon kosher salt
Toppings:
2 tbsp turbinado sugar for toppings
¼ cup crushed pecans for toppings
Bake at 350F for 50 minutes
Make sure to grease a 9 x 5 inch loaf pan with butter or nonstick spray
