Ingredients:
-1/2 cup white sugar
-1/4 cup brown sugar
-3/4 cups quick oats
-1 cup flour
-1 egg yolk
-1/2 cup butter, melted
-2 cups frozen OR fresh blueberries
-3 tbsp lemon juice
-1/2 cup white sugar
Bake at 350F for 35-40 minutes; top will be a light golden brown
Make sure that the dish has completely cooled off before slicing! This will ensure the bars will not crumble apart :)

Blueberry Crunch Cake Recipe | Tea Time Cakes | The Sweetest Journey
Learn how to make a sweet cake topped with fresh blueberries and a crunchy topping perfect for having with a warm cup of tea or coffee.
Ingredients:
1/2 Cup Milk or Milk Substitute (120ml)
1/2 Cup Sour Cream or Plain Yogurt (120g)
1 Tablespoons Lemon Juice (15ml)
1 Cup Flour (120g)
2 Teaspoons Baking Powder (10g)
1/2 Teaspoon Salt (3g)
1/3 Cup Sugar (64g)
Topping:
1 Cup Blueberries (152g)
1/4 Cup Flour (30g)
1/3 Cup Sugar (64g)
1/2 Teaspoon Cinnamon (1.5g)
1/3 Cup Chopped Walnuts or Pecans (37g)
2 Tablespoons Soft Butter or Margarine (28g)
Directions:
1. For the topping, combine in a bowl, the flour, sugar, cinnamon, walnuts, and butter. Set aside.
2. In another bowl, whisk together the milk, sour cream, and lemon juice. Set aside.
3. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the milk mixture, just until well combined. Line a square (8in. x 8in.) baking pan with parchment paper. Spoon the batter into the pan and smooth out top. Top the batter with blueberries. Sprinkle the topping mixture onto the blueberries. Bake in a preheated oven at 350F for about 40 minutes or until an inserted toothpick comes out clean. Cool for about 15-30 minutes before serving.

BLUEBERRY CRUMB CAKE RECIPE
Makes 9 squares

INGREDIENTS:
½ cup (120g) of butter
¾ cup (150g) sugar
2 eggs
1 tsp (5 ml) vanilla
2 cups (240g) of flour
2 tsp (10 ml) baking powder
½ tsp (2.5ml) salt
½ cup (120 ml) milk
2 cups (300g) fresh blueberries
Topping:
1 cup (200g) of sugar
½ cup (60g) flour
1 tsp (5 ml) cinnamon
½ cup (120g) butter
METHOD:
Preheat oven to 350F (175C).
Spray a square 10” x 10” (25cm x 25cm) pan with baking spray. Set aside
In the bowl of an electric mixer beat together butter and sugar until smooth and fluffy, add eggs one at a time and beat well until light and fluffy, add vanilla. Set aside.
In a small bowl combine flour, baking powder and salt whisk together. Add flour mixture in thirds, alternating with the milk until a batter forms. Remove bowl from the mixer.
Fold in blueberries. Transfer batter to pan. Set aside.
In a small bowl whisk together the topping. Add the sugar, flour and cinnamon. Whisk to combine. Cut in butter with hands until small crumbs form. Sprinkle topping on top of batter until a layer is formed and batter is fully covered.
Bake 40-45 mins until golden brown and a toothpick comes out clean. Allow to cool completely. Run sharp knife along perimeter of cake to loosen before removing it. Cut into 9 squares and serve!

Claire Saffitz Makes The Perfect Blueberry Buckle | Dessert Person
One of Claire's favorite things about summer is spending time on Cape Cod with her family and eating her mom’s blueberry buckle. It’s a Martha Stewart recipe from many years ago, and it was her introduction to buckles, a category of streusel-topped cakes that incorporate lots of fruit. What Claire loves about Martha’s recipe is that it’s almost more fruit than cake, featuring clusters of berries barely held together by a tender batter. She wanted to create a similar blueberry buckle that incorporated the flavors and textures of corn, since corn and blueberries are natural partners. Claire does this two ways: First, crushed cornflakes are mixed into the streusel topping, contributing a light and satisfying crunch, and second, cornmeal is added to the batter, providing some textural contrast against the soft berries. Follow along with Claire Saffitz and serve the buckle with vanilla ice cream for dessert and then enjoy again for breakfast the next morning.
