Ham & Cheese Macaroni Croquettes | Relaxing Home Cooking
The ham & cheese macaroni croquettes mixture is an explosion of pure flavor. The grandma’s creamy béchamel recipe is one of the memories I cherish the most. The richness of the sauce transforms your leftovers in something special. These croquettes are easy to make, they can be served as appetizer but also as a side dish. When the gold and crispy croquettes will show up on the table the party is set.

???? INGREDIENTS (12 croquettes)
250g (8.8 oz) macaroni - or other pasta type
150g (1 ⅓ cup) grated emmental
100g (3.5 oz) ham, strips or dice
cooking oil - to fry
130g (1 cup) bread crumb
2 eggs, beaten
salt
Bechamel:
60g ( 2.1 oz) butter
60g (½ cup) flour
300ml (1 ¼ cup) water
1 chicken stock cube
200ml (¾ cup + 1 tbsp) milk
salt
pepper
nutmeg

***Easy Baked Macaroni & Cheese***
3 tbsp. butter, melted
1 ½ c. uncooked macaroni
1 qt. whole milk
8 oz. shredded cheddar cheese
1 tsp. salt
¼ tsp. pepper
Stir together uncooked macaroni and melted butter. Add remaining ingredients. Bake uncovered at 300 degrees for 1½ hours in a lightly greased 9x13” pan.
Erica’s note: I love how simple this dish is. It’s always a hit when I bring it to our church potluck.
***Seasoned Thick-Sliced Ham***
½ c. brown sugar, packed
2 tsp. dried basil
1 ½ tsp. salt
1 tsp. chili powder
2 tbsp. vegetable oil
2 lbs. black forest ham, half-inch sliced
⅓ c. horseradish
In a small bowl, combine the sugar and spices. Gradually stir in oil until crumbly, then mix in the horseradish to create rub; spread over both sides of the ham. Grill until heated through, or fry in 1 tbsp. vegetable oil in a large skillet over medium heat for 1 minute. Turn, spread side with a spoonful of rub and fry for an additional 3 minutes.
Erica’s note: The horseradish adds moisture and a distinct flavor without being overpowering. The ham is already pre-cooked, so this recipe is super fast, yet delectable!

How To Make Ham Mock Mac and Cheese Casserole (Low Carb)
This low-carb Ham Mock Mac and Cheese Casserole is from George Stella’s Good Carb Family Cookbook, but he's kindly shared it online and even on Facebook. It is amazing!! Seriously, whenever I need a cheese sauce for anything this will be my go to choice.
Cauliflower chunks take the place of macaroni, and thick chunks of diced ham make it a meaty meal. His recipe suggests the 8x8 inch pan makes 8 serves, which must be just using it as a side dish. With the ham in it, we treat it as a main meal, so we doubled it to get 4-6 serves. I'll give the original recipe below, but we doubled everything.
INGREDIENTS:
1 large head cauliflower, cut into small florets and pieces (about 675g or 23 oz)
3⁄4 cup heavy cream
4 oz / 113g cream cheese, cut into small pieces
1 1⁄2 teaspoons Dijon mustard
1⁄2 teaspoon kosher salt
1⁄4 teaspoon ground black pepper
1⁄8 teaspoon garlic powder
1-1⁄2 cups shredded cheddar cheese, plus 1⁄2 cup more for topping the casserole
6 oz / 170g baked ham, cubed
METHOD:
1. Preheat the oven to 375 degrees.
2. Cook the cauliflower in boiling, salted water for about 5 minutes until crisp-tender. Drain well, pat between layers of paper towels to dry and transfer to a greased baking dish.
3. Bring the cream to a simmer in a small saucepan and whisk in the cream cheese, mustard, salt, pepper and garlic powder until smooth.
4. Stir in 1 1⁄2 cups of the cheese and whisk for just a minute until the cheese melts. Remove from the heat and pour into the casserole dish, covering the cauliflower.
5. Sprinkle the cubed ham over all, top with the remaining 1⁄2 cup cheese and bake for about 15 minutes until browned and bubbly hot. Let cool for about 5 minutes before serving. Visit and Like us on Facebook: .
