How To make Baked Chicken Breasts with Almond Sauce
4 Skinless Boneless Chicken Breast Halves
*Note
Garlic Salt :
To Taste 1/8 C Icbinb-Light Melted, **Note
1 Tbsp Paprika
1 Tbsp Lemon Juice
1/3 Oz Canned Mushrooms :
Stems And Pcs
1/2 Tsp Worcestershire Sauce
1/4 C Sherry ***Note
1 Tsp Slivered Almonds :
****Note
1 Tsp Almond Extract -- ****Note
*NOTE: Original recipe used 4 whole chicken breasts **NOTE: Original recipe used 1/4 C melted butter ***NOTE: You can use nonfat chicken broth instead of the sherry ****NOTE: Original recipe used 1/4 C slivered almonds. ****NOTE: The original recipe did not use any almond extract...I used it to give it more of an almond flavor since I had cut out so much of the slivered almonds. I absolutely could not get the CFF any lower with the slivered almonds left in the recipe.
Salt both sides of chicken breast halves with garlic salt. Dip in melted butter to which paprika and lemon juice has been added. Place in shallow baking dish. Bake for 30 minutes at 350 deg F. Mix remaining ingredients listed and spoon over chicken breasts. Sprinkle with slivered almonds and continue baking for 30 additional minutes. Remove chicken; thicken sauce with 2 Tbsps. flour and stir in 1/4 cup fat free sour cream (I did not include these in the counts since I didn't use them - Reggie). Serve chicken breasts over rice.
*You can use boneless breasts and cut the cooking time to 15 minutes, add other ingredients and cook another 15 minutes, then thicken sauce and serve over rice.
The counts will be lower if you serve this over rice.
It is wonderful!! Very moist and has a great flavor.

This is How You Make Perfectly Cooked Chicken Breasts
Cooking perfect chicken breasts can be challenging but I’ve got an absolutely fool proof procedure that I’ve been using for years and it works every single time.
Understanding cooking techniques are the fundamental most important things when it comes to cooking and perfectly pan roasting this chicken falls under that umbrella.
Ingredients for this Recipe:
2 7-9 ounce boneless skinless chicken breasts
2 tablespoons olive oil
½ peeled small diced shallot
2 finely minced cloves of garlic
¼ cup chardonnay wine
2 cups chicken stock
1 tablespoon unsalted butter
1 teaspoon finely minced fresh thyme
sea salt and pepper to taste
Serves 2
Prep Time: 5 minutes
Cook Time: 15 minutes
Rest Time: 4 minutes
Procedures:
1. Preheat the oven to 375°.
2. Season the chicken breasts on both sides with salt and pepper.
3. Next, add a large frying pan to a burner over high heat and let sit for :20 to :30 seconds before adding in the olive oil.
4. Once the oil begins to lightly smoke add in the chicken breasts and immediately turn the heat down to medium-high. Note: If it is a hot burner then turn it down to medium.
5. Cook the chicken breasts in between 3 ½ to 4 minutes. Flip it over and add to the oven and cook for 10-12 minutes at 375°.
6. Remove from the oven and let rest on a cutting board for 2 to 4 minutes, it’s ok if it’s a few minutes longer.
7. Next, add the pan back to the cook top over medium heat and add in the shallots and garlic and saute for 2 to 3 minutes.
8. Deglaze with optional white wine and cook until it is almost completely absorbed.
9. Pour in the chicken stock and cook on high heat for 2 to 3 minutes.
10. Finish with butter, thyme, salt and pepper.
11. Serve the chicken with the pan sauce.
CHEF NOTES:
• I like to use either cast iron pans or stainless-steel pans since they are environmentally friendly and don’t give off any funky chemicals.
• It’s important to buy chicken breasts between 7 and 9 ounces in weight. Large 1-pound chicken breasts are not normal, and you should caution using them.
• Remember that just because food is removed from the heat, it does not stop cooking. Always add 1 to 2 minutes into your total cooking time to account for carry over cooking.
• If the oil is so hot that it is rolling smoke that means it’s burning and needs to be discarded.
• There should be no sign of raw pink chicken in the middle of the breast.

1 1/2 tsp chicken bouillon
1 tsp seasoned salt
1 tsp Poultry seasoning (badia southern blend )
1 tsp complete seasoning
1 tsp garlic powder
1 tsp onion powder
1 1/2 tsp smoked paprika
1/2 tsp black pepper
oil of your choice
2 cans cream of mushroom
1 cup water
1 tsp smoked paprika
1 medium size onion Chopped
1/2 green bell pepper Chopped
1/2 red bell pepper Chopped
