plain yogurt, or sour cream or mayonaise
1/4
cup
lemon juice

teaspoon
worcestershire sauce

teaspoon
celery seed
2
teaspoon
hungarian sweet paprika
1
cl
garlic, minced
2
teaspoon
salt, optional
4
teaspoon
pepper
8
each
chicken breat, halves boneless skinless
2
cup
fine dry bread crumbs
Directions:
In a large bowl, combine first eight ingredients. Place chicken in mixture
and turn to coat. Cover and marinate overnight in the refrigerator. Remove
chicken from marinade; coat each piece with crumbs. Arrange on a shallow
baking pan. Bake, uncovered, at 350-degree for 45 minutes or until juices
run clear.

Chicken Supreme is one of the classics of French cookery, but the terminology can be confusing. A suprême of chicken refers to the breast, sometimes with the wingbone still attached. This is also known as 'airline chicken' because that's what airlines wanted 20 years ago. But there is also 'sauce suprême'. In this video recipe, I'll be using suprêmes of chicken with the skin on and wing bone attached, and drenching it in sauce suprême. This chicken supreme lives up to its name - deliciously tender chicken in a rich creamy sauce. But not only does it taste great, it's really easy to make too.

RECIPE
1/4 CUP FLOUR
2 1/2 TSP SALT
1 TSP PAPRIKA
6 WHOLE CHICKEN BREASTS, HALVED AND SKINNED
1/4 CUP BUTTER
1/3 CUP WATER
4 TSP CORNSTARCH
3 CUPS HALF AND HALF CREAM, DIVIDED
1/2 CUP COOKING SHERRY
2 TSP GRATED LEMON RIND
2/ TBSP LEMON JUICE
1 CUP GRATED SWISS CHEESE
1/2 CUP CHOPPED PARSLEY
COMBINE FLOUR, SALT AND PAPRIKA ON WAX PAPER AND COAT CHICKEN BREASTS. IN LARGE SKILLET MELT BUTTER AND LIGHTLY BROWN CHICKEN. ADD WATER AND SIMMER COVERED FOR 30 MINUTES OR UNTIL CHICKEN IS ALMOST TENDER. ARRANGE BREASTS IN 9 X 13 BAKING DISH. MIX CORNSTARCH AND 1/4 CUP CREAM AND STIR INTO DRIPPINGS IN SKILLET. STIR OVER LOW HEAT, GRADUALLY ADDING REMAINING CREAM, UNTIL THICKENED. ADD SHERRY, LEMON RIND AND JUICE. POUR SAUCE OVER CHICKEN AND BAKE COVERED AT 350* FOR 35 MIN. UNCOVER, SPRINKLE GRATED CHEESE AND PARSLEY OVER TOP AND CONTINUE TO BAKE UNTIL CHEESE BUBBLES. MAY BE FROZEN AFTER SAUCE IS ADDED IF BONELESS CHICKEN BREASTS ARE USED. SERVE HOT WITH RICE AND GREEN VEGETABLES.
