2 c FLOUR 1 ts BAKING SODA 1/2 ts SALT 1/2 c BUTTER 1 c SUGAR 2 EGGS 1/3 c MILK 1 ts LEMON JUIcE OR 1/2 ts VANILLA EXtrAcT 1/2 c CHOPPED NUTS; OPTIONAL. 2-3 ea VERY RIPE BANANAS; MASHED PREHEAT OVEN TO 350 cOMBINE FLOUR, BAKING SODA, AND SALT IN A BOWL cREAM THE BUTTER IN A MIXING BOWL GRADUALLY ADD THE SUGAR AND MIX TO WELL BLENDED ADD THE EGGS AND THE BANANA MIX UNTILL WELL BLENDED. cOMBINE THE MILK AND LEMON JUIcE IN A LARGE BOWL. ALTERNATELY MIX THE FLOUR MIXTURE INTO THE BANANA MIXTURE. ADD A LITTLE AT A TIME, BEGINNING AND ENDING WITH THE DRY INGREDIENTS. BLEND WELL AFTER EAcH ADDITION. ADD NUTS. TURN THE BATTER INTO A HEAVILY BUTTERED 9 X 5 X 3 INcH LOAF PAN. BAKE FOR ONE HOUR OR UNTIL brEAD IS GOLDEN AND SPRINGS BAcK WHEN TOUcHED. cOOL IN PAN FOR TEN MINUTES. TAKE brEAD OUT OF PAN AND cOOL cOMPLETELY.

Below is a more traditional Bahamian Potato Bread Recipe. It is not the version shown in the video.
INGREDIENTS ============ 1 large white sweet potato (approximately 2 lbs – 0.9kg) 1/4 cup (15g) finely shredded coconut 1/2 to 3/4 tin evaporated milk 1 large egg 3/4 teaspoon (4.3g) salt (or to taste) 1/2 teaspoon (1.1g) nutmeg 1/2 teaspoon (1.1g) cinnamon 3 tablespoons (approx. 42gm) salted butter (melted) (or vegetable oil) 1 1/4 cups sugar (155gm) 2 heaping tablespoons white wheat flour (16-18 grams)
INSTRUCTIONS ============= Heavily grease a loaf pan 12” x 6” x 3” (approx. 30.5 x 15 x 8cm) In a large mixing bowl, grate finely the sweet potato.
To the same bowl, add sugar, egg, coconut, melted butter or oil, salt, nutmeg, cinnamon (in no specific order).
Add milk. (For a firmer texture add 1/2 cup (125ml). If you prefer a moister bread add 3/4 cup (175ml).
Mix thoroughly. Add flour just until combined, and no flour is visible. Do not over mix.
Pour into baking pan and place in cold oven.
Turn on oven and set to 350º F (180º C, Gas Mark 4 (moderate) and bake until golden brown on top. (Approximately 1 1/2 hours). Test by inserting a toothpick or knife. It should come out clean. Remove from oven and let cool in the baking pan on a rack.
