How To make Austrian Cheesecake
CRUST:
Shortbread CHEESECAKE:
2 c Cottage or Farmer Cheese
1/2 c Sugar Granulated
5 Eggs :
Large, Separated
1/2 c Milk
1/2 ts Lemon Rind Grated
1 t Vanilla Extract
3/4 c Unbleached Flour :
Sifted
1/4 c Confectioners' Sugar
3 tb Golden Raisins -- FinelyChopped
Preheat the oven to 300 degrees F. Press the cheese through a sieve. In a large mixing bowl, beat together the cheese and sugar until light. Add the egg yolks, one at a time, beating well after each addition, then add the milk, lemon rind, and vanilla. Stir in the flour and blend until smooth. In another large mixing bowl, beat the egg whites until they form soft peaks, then gradually add the confectioners' sugar beating until they form stiff peaks. Fold the whites into the cheese mixture. Gently stir in the raisin bits, then pour the mixture into the prepared crust. Bake for 55 minutes or until the center appears firm. Let the cake cool in the oven for 15 minutes, then allow to cool to room temperature.

dry yeast - 7 g, cottage cheese - 250 g,
chicken eggs - 1 pc., vanilla sugar - 1 pc.,
raisins - 2 tbsp.l.,

Polish Style Cheesecake Baked The Basque Way
I Have a love-hate relationship with the polish cheesecake, after eating cheesecakes all around the world. the cheesecake that I first taste in Poland was really dry and not as creamy and most as some other cheesecakes...and I hated eating it. but over the years I learnt that the real reason for that is not because of the recipe. the cheesecakes in most bakeries are frozen and not eaten fresh and yes I have seen this in bakeries ... a difference between a fresh and an old cheesecake is night and day. I'm also a huge fan of the basque burnt cheesecake so I used the polish traditional recipe and cooked it the basque way.. with the moist creamy inside of a new york cheesecake
You can use any of the seasonal or your favourite fruits to garnish or eat it just like that.

3g Salt
2 g Baking Powder
100 g Butter (Room Temperature)
75 g Sugar Powder
75 g Sour Cream
2 Egg Yolks
1/2 Zest of Lemon
1/2 Zest of Orange ( Both Optional)

515 g Cream Cheese ( Full fat)
15 g Flour
50 g Sugar ( add more if you like it sweeter)
3 Eggs
2 Egg Yolks
