How To make Asparagus Beef Roll Ups
1 pound piece beef tenderloin -- (center-cut)
3 tablespoons coarse cracked black pepper
Kosher salt Olive oil for searing 20 spears of asparagus,
blanched until tender
Horseradish mayonnaise: 1 tablespoon prepared grated horseradish
1/2 cup mayonnaise, :
slightly thin
1 tablespoon chopped fresh chives
Salt and pepper
Heat the oil in a large saute pan. Season the entire beef tender with kosher salt and pepper. Sear the beef on all sides until very brown. Meanwhile, make the mayonnaise. In a small bowl combine the horseradish, mayonnaise, and chives. Season with salt and pepper and set aside. Remove the meat from the pan and allow to cool completely. Using a very sharp knife, slice the beef into 10 thin slices. Season with salt and pepper. Spread a thin layer of mayonnaise on one side of the beef and lay 2 spears of asparagus in the center of each piece of beef. Roll the beef up over the asparagus. Arrange on a plate and drizzle with additional mayonnaise.

20 asparagus, stems trimmed by banding, it will snap
10 prosciutto
1/4 cup 25g grated parmigiano
Zest from 1 fresh lemon

It’s a coming Christmas and some people are trying to eat healthier so I wanted to share my inexpensive but healthy delicious and cute beef roll-ups but you don’t have to be on a diet to enjoy these. I love them and nope, I’m not on any special diet.
Beef Roll Ups. This is an absolutely delicious recipe and quick to make too.
If you’re wondering what to make for dinner, or perhaps you have some friends or family over for a dinner party, then these beef roll ups are perfect for serving! You can prepare ahead and simply cook minutes before you need to serve.
The main thing with using beef for this beef roll ups recipe is to choose a tender cut of beef, such as sirloin. If you’re worried your beef slices won’t be tender, just use a meat hammer and bash the slices on both sides to tenderise them a little more.
Japanese grocery stores (as well as Korean and Chinese grocery stores) always carry thinly sliced beef and pork. We use these thinly sliced meats for hot pot and some main dishes.
My tutorial above is for pork and beef. If you prefer to use chicken, I suggest pounding the chicken breast so they’re super thin.
These steak roll-ups may look hard to make, but they are simple and they cook up in a blast. They’re perfect for date night dinner with the bae and a nice cocktail, perfect for summer bbq’s, picnics, and parties. If you’re like me then you’ll make them anytime. To make these quickly, purchase your choice of thin steaks or you check with your butcher, who should be able to cut them thin for you. You will also need toothpicks or kitchen twine to secure the roll-ups.
