How To make Jalapeno Beef Roll with Zucchini
3 md Zucchini
2 oz Monterey Jack cheese (with
Jalapeno pepper) 1 sm Onion
1 1/2 lb Ground beef
1/2 c Bread crumbs
3 tb Ketchup
Salt 1 tb Butter
About 35 minutes before serving,shred enough to measure 1 cup. Set remaining zucchini aside.Shred Monterey Jack cheese.In a medium bowl,grate onion.Add ground beef,bread crumbs,ketchup,and 1/2 tsp. salt.Mix well.On waxed paper,par ground beef mixture into a 11 x 8" rectangle. Sprinkle shredded zucchini and cheese over beef mixture. Starting on a long side,roll meat mixture around filling,jelly roll fashion,lifting wax paper to help shape roll.Press seam and sides to seal. Carefully,transfer beef roll,seam side down,to a 2 quart oblong baking dish.Microwave cook,covered with waxed paper on high 5 minutes.Then on medium (50%) 15 minutes.Let stand covered. Meanwhile,in a 10" round baking dish,melt butter on high 30 seconds.Add zucchini.Cook,covered with plastic wrap,on high 3 to 4 minutes,until just tender.Sprinkle with 3/4 tsp. salt after cooking. To serve,cut beef roll into 12 slices on serving platter.Spoon zucchini along side of meat,Makes 6 servings.

Bacon Wrapped Dates (my recipe):
1 Pound of Sliced Bacon - cut in thirds
2 Small Logs of Plain Goat Cheese
1 Package of Whole Dates (preferably pitted if you can find them)
If your dates have pits, remove those first. Split the date open with a knife. Add 1 tsp of goat cheese into each date. Cut your bacon in thirds. Wrap each date with bacon. Air fry for 8-10 minutes until bacon is completely cooked.
**BONUS** Homemade Guacamole:
5 Avocados, peeled & diced
1/4 Cup Cilantro, finely chopped
1/3 Onion, finely chopped
1 Tbsp Lime Juice
2 Roma Tomatoes
1/2 Tbsp Minced Garlic
Add all Avocados to a bowl and add all other ingredients in and mix with your mix & chop until desired consistency. Add salt to taste. Sprinkle chopped cilantro on top. Serve with salty chips.

Jalapeño Poppers in Air Fryer | Stuffed Jalapeno | No Oil | Air Fryer Recipe
A great appetizer or snack option for that occasional indulgence! This recipe turns out really great in the air fryer; I would say even better than deep-fried! But if you don't have an air fryer, you can always either bake these or just deep fry in oil. Give this recipe a try and let me know what you think!
LIST OF INGREDIENTS:
Jalapeños – About 7 (large)
Cream Cheese – 8 oz.
Shredded Sharp Cheddar Cheese – About ½ cup
Ground Black Pepper – ¾ tsp
Salt – ½ tsp
Smoked Paprika – ¾ tsp
Chickpea Flour (Besan) – 1 cup
Water – About ½ cup + as needed
Bread Crumbs (Panko is best) – 1½ cups
Nutritional Yeast – ¼ cup (Optional but highly recommend!)

Jalapeño Poppers!
Learn how to make these awesome jalapeno poppers stuffed with cream and shredded cheese and BACON!! Double breaded and deep fried, these are sure to be a hit for your family or next get together! Perfect appetizer for parties, the Super Bowl, football games or just as a snack for the kids.
What you'll need:
8 jalapeno peppers
8 oz cream cheese, softened
1/4 cup shredded co-jack cheese
4-5 slices bacon
2 eggs
1/4 cup milk
1/2 cup all-purpose flour
2 cups dry breadcrumbs
oil for frying
Start by frying the bacon. When nice and crispy, drain on paper towels and let cool.
To prep the peppers, cut in half lengthwise and scoop out the seeds and veins using a spoon. Use gloves for this is you have open sores or sensitive skin on your hands. Set aside.
In a medium bowl, combine the cream and shredded cheese. Add in crumbled bacon and stir to mix well. Put about 1 tablespoon of filling in each pepper half. Press down firmly into the pepper so there are no air pockets. Mound the filling up slightly. Continue with the rest of the pepper halves.
In a small bowl add the flour. In another bowl add the breadcrumbs. In a third bowl, combine the eggs and milk. Start the breading process by dipping the poppers into the egg, then the flour. Shake off excess flour and put back into the egg mixture. Let excess drip off and then dredge in the breadcrumbs. Set onto a plate and continue with the rest of the peppers. Let dry for about 10 minutes and then bread again by dipping into the egg again and back into the breadcrumbs. Again, let dry for 10 minutes before frying.
Heat oil in a heavy bottomed pan and heat over medium-high heat until oil reaches 350*F. When the oil is ready, slowly and carefully put a couple poppers into the oil and fry for 2-3 minutes or until golden brown. Remove to a paper towel lined plate to drain of excess oil. Serve with ranch dressing or your favorite dipping sauce. Makes 16 poppers. Enjoy!!
