How To make Sesame Beef with Asparagus
6 ounces shoulder steak, trimmed,
frozen 30
minutes to 1 hour 1/2 teaspoon baking soda
3 large cloves garlic, crushed plus :
2 tablespoons chopped
1 egg white
1/4 teaspoons salt
1 tablespoon sesame seeds
5 teaspoons sugar
1 teaspoon peanut oil plus 4 cups, -- for deep-frying
3/4 teaspoon cornstarch
2 tablespoons thin soy sauce
2 tablespoons Shao Hsing (Chinese rice wine) or dry sherry
2 teaspoons Chinese dark vinegar or balsamic vinegar
2 teaspoons sesame oil
1 teaspoon Chinese sesame paste :
(available in Asian groceries)
1/4 pound pencil-thin asparagus tips (4 inches)
1/2 small red bell pepper, very thinly sliced :
(about 1/3 cup)
4 dried red chili peppers
3 scallions, -- chopped
2 tablespoons chopped ginger
Slice steak into broad 1/8-inch thick strips, about 1 inch wide and 6 inches long. In a small bowl combine steak strips with baking soda, crushed garlic cloves and 1/4 cup cold water. Mix well and soak 5 hours.
Rinse steak slices and dry well on paper towels. In a small bowl mix together egg white and salt, stirring vigorously until egg white foams. Stir in sesame seeds, 1 teaspoon sugar, 1 teaspoon peanut oil and cornstarch. Add steak and toss to coat. Marinate 1/2 hour at room temperature. In another small bowl, combine thin soy sauce, Shao Hsing, remaining 4 teaspoons sugar, vinegar, sesame oil and sesame paste; set aside.
In a wok heat remaining 4 cups peanut oil over high heat to 375 degrees. Drain beef, pat dry then deep-fry 45 seconds, turning pieces several times with a metal spoon. Using a slotted spoon, remove beef and drain on paper towels. When oil returns to 375 degrees, deep-fry 15 seconds more, remove beef, and drain. Repeat deep-frying, 15 seconds, a third time. Remove beef and drain on clean paper towels. When oil returns to 375 degrees, deep-fry asparagus and red bell pepper 30 seconds. Drain on paper towels.
Drain off all but 1 tablespoon oil from wok and increase heat to high. Add chili peppers, scallions, chopped garlic and chopped ginger; stir-fry 1 minute. Add asparagus and red pepper; stir-fry 10 seconds and add beef. Stir in soy sauce mixture, bring to a boil and serve immediately with rice.

Sesame Beef Summer Salad

Sesame Beef Summer Salad
Serves 4 Prep & cooking 25 mins
1/3 cup (80ml) lime juice
1/3 cup (80ml) rice wine vinegar
2 tsp sesame oil
2 tsp finely grated ginger
750g Coles Australian No Added Hormones Beef Rump Steak, trimmed
4 cups (320g) shredded savoy cabbage
1 medium red onion, thinly sliced
2 medium Lebanese cucumbers, thinly sliced
1 medium carrot, peeled, cut into long matchsticks
1/2 cup mint leaves
1 cup (55g) bean sprouts
3/4 cup (120g) unsalted cashews, toasted
2 tbs shredded coconut
1/4 cup (20g) fried shallots
1. Combine lime juice, vinegar, oil and ginger in a screw-top jar. Shake well to combine. Pour 1 tbs lime juice mixture over the steak and turn to coat. Heat a barbecue grill or chargrill on medium. Cook the steak on the grill for 3-4 mins each side for medium or until cooked to your liking. Transfer to a plate. Cover and set aside for 5 mins to rest.
2. Combine the cabbage, onion, cucumber, carrot, mint and sprouts in a large serving bowl. Toss with the remaining lime juice mixture.
3. Slice the steak. Serve the salad with steak, cashews, coconut and shallots. Season with pepper to serve.
Serve with: lime wedges

SHAKING BEEF | BO LUC LAC⤵️
MARINADE
2 lbs beef, cubed. I used ribeye
A lot of minced garlic (like 10 cloves)
3 TBSP oyster sauce
2.5 TBSP low sodium soy sauce
1/2 tsp fish sauce
3 TBSP oil of choice- I used vegetable
2.5 TBSP sugar
1 tsp black pepper
ADDITIONAL INGREDIENTS
2 TBSP butter
3 bell peppers, any color
1. Combine all of your ingredients listed under marinade and marinate at least 10 mins at room temp (or over night but in the fridge)
2. Then on a skillet with some heat, cook/ sear your beef. About 1 minute each side (2 mins total). I cooked mine in 2 batches
3. In the same skillet after everything is seared, sauté onions for 2 minutes.
4. Then add bell peppers and cook for another 2 minutes
5. Then add your beef back in along with 2 TBSP salted butter. Cook until butter is half way melted. Then turn off heat & continue mixing untold butter is all the way melted
6. Serve with rice, fried egg, and salt, pepper lime dip
