Prosciutto Wrapped Asparagus Ingredients
Makes 20, Serves 6 to 8
20 asparagus, stems trimmed by banding, it will snap
10 prosciutto
1/4 cup 25g grated parmigiano
Zest from 1 fresh lemon
Pinch of black pepper
1 Tbs olive oil
Easy Asparagus Appetizer | BEST Way to Cook Asparagus
This Easy Asparagus Appetizer, my mom’s Asparagus Canapés, will wow your guests! They are very simple to put together. Once baked, these have a buttery, toasty exterior and a creamy, tangy interior that is so unique and absolutely delicious. I’m also showing you the BEST way to cook asparagus quickly and perfectly every time—broil it!
Asparagus Canapés (full recipe)
20 asparagus spears
Olive oil, salt, pepper
20 slices of white sandwich bread
4 oz. blue cheese
8 oz. cream cheese, softened
1 egg, beaten
2 sticks of unsalted butter, melted and cooled slightly
Wash, dry, and trim the stems of your asparagus spears. Place the asparagus on a baking sheet and drizzle with about 2 Tbsp. of olive oil. Season with salt and pepper. Toss with your hands to coat then spread out into a single layer. Broil on HIGH for about 6-8 minutes, or until tender, shaking the pan halfway through. Remove to cool.
Using a serrated knife, cut the crusts off of the sandwich bread. Using a rolling pin, gently flatten each slice of bread. Mix the blue cheese, cream cheese, and egg together in a bowl until incorporated and fairly smooth. Spread about 1 Tbsp. of the cheese mixture on each slice of bread. Place 1 asparagus spear at the edge of 1 slice of bread and roll up into a log shape, securing with a toothpick. Dunk each log into the melted butter, coating evenly on all sides (I used a spoon to help!). Place on a parchment lined baking sheet. Freeze for 15 minutes. Preheat oven to 400 degrees. Once the logs have firmed up, remove the toothpicks and slice into thirds (my bread was pretty small, so I just halved mine). At this point you can put the asparagus appetizers into a freezer ziplock bag and freeze them until you want to bake them. If preparing them right away, place the appetizers back onto the baking sheet and bake at 400 degrees for about 15 minutes. They should be golden, crisp, and sizzling! Allow to cool slightly. ENJOY!
