Applesauce Oatmeal Raisin Cookies

preheat oven to 375
spray cookie sheet with non stick spray.
In a mixing bowl mix these ingredients together.
1 1/2 cups All Purpose Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
In another bowl mix these ingredients together.
2 TBSP Butter
1/2 cup Sugar
1/2 cup Brown Sugar
then add
1 large Egg
1 cup Applesauce
and 1 tsp Vanilla
now add this into the flour mixture and mix it all together.
Now stir in
1 1/3 cups Quick cooking Oats
3/4 cup Raisins
stir to combine.
Now using a cookie scoop or a TBSP
drop onto prepared cookie sheet and place about 2 inches apart and bake for 10 to 12 minutes.
let them cool off from a few minutes before removing from cookie sheet and the place them on a cooling rack to cool completely. Enjoy
Vegan oatmeal cookies, applesauce & rainy day
On this rainy day, I’ll be making chewy vegan oatmeal cookies and delicious homemade applesauce. Oatmeal cookies are delicious when eaten as a snack or eaten as a breakfast cookie. Oatmeal cookies are high in fiber and they are very filling. This recipe makes about 20 cookies. In addition, I also made creamy applesauce. Applesauce goes really well with oatmeal cookies.

Vegan oatmeal cookies
Ingredients
3 cups rolled oats
½ cup brown sugar
¾ cup coconut oil (or any other mild-flavored oil)
⅓ cup almond milk (or any other plant-based milk/ or water)
1 cup finely chopped almonds (or any other nuts or seeds you like)
** If you choose to omit the nuts and seeds, you can replace them with ½ cup oats, or even with raisins and dried fruits
¾ cup all-purpose flour
2 teaspoons vanilla essence
1-2 teaspoons cinnamon
½ teaspoon ground nutmeg
½ teaspoon baking soda
½ teaspoon salt
Directions
o In a mixing bowl, whisk brown sugar and oil.
o Add vanilla essence and flour mixed with baking soda and salt.
o Add chopped nuts or seeds.
o Add cinnamon and nutmeg.
o Keep mixing and then gradually add rolled oats.
o Add almond milk or water to cookie mixture.
o If mixture is too wet to mold, you can put in fridge for ten minutes to solidify dough a bit.
o Form oats dough into flattened balls (pressing firmly) and arrange on baking tray.
o I bake in electric oven at 160°C for 15 minutes until edges are golden brown.

Homemade applesauce
Ingredients
4-5 apples (any variety will do)
½ cup water
A dash of salt
2-3 cinnamon sticks (or you can use ground cinnamon as well)
Optional: A squeeze of lemon or lime
Optional: Add sugar to your liking
Directions
o Wash your apples and chop them into small pieces.
o Add your chopped apples into a pot or saucepan.
o Sprinkle with a bit of salt and add cinnamon sticks (or ground cinnamon).
o Add water enough to cover the apples and put on stove.
o Boil on medium-low heat stirring from time to time.
o Once apples are soft, turn off heat.
o Let apples cool down a bit. Remove cinnamon sticks and add a squeeze of lime.
o Blend until smooth. If you want it extra smooth, you can pass applesauce through a sieve.
* Applesauce can be served chilled or warm.
