Day 6 of Making Healthy Desserts: 1-minute Chocolate Mug Cake???? It’s gluten-free & vegan! If you aren’t coeliac/intolerant to gluten/IBS sufferer, you can of course use wheat flour in this☺️

Ingredients:
2 tablespoons all purpose gluten-free flour mix
1 tablespoon unsweetened cacao powder
1/4 teaspoon baking powder
1 tablespoon melted coconut oil
1 tablespoon maple syrup
3 tablespoons almond milk
1 piece of dark chocolate (I used 80% dark chocolate)

1. In a mug mix the dry ingredients together
2. Add the wet ingredients and stir until combined
3. Add the piece of dark chocolate to the center
4. Cook in the microwave for 40 - 60 seconds (800W). All microwaves are different, so the cooking time might differ. I recommend checking the cake after 40 seconds and then cooking longer if needed
5. Serve with some berries, for example! Enjoy!

Ingredients
Cake:
* 2 1/4 cups whole wheat flour (270 g)
* 3 teaspoons baking powder (*see note below)
* 1 teaspoon baking soda
* 3 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1 teaspoon sea salt
* 1/2 cup applesauce (125 g)
* 1 cup oat milk (250 ml) or any type of milk
* 2 teaspoons vanilla
* 1/3 cup honey (100 g) or 1/2 cup sugar
* 1/2 cup melted coconut oil (110 g) or any vegetable oil
* 2 cups grated carrots (2,5 - 3 medium carrots)
* 1/2 cup raisins and chopped walnuts
Frosting
* 2 tablespoons honey (43 g)
* 1 1/2 cup low-fat cream cheese (350 g)
Instructions
1. Preheat the oven to 350°F and grease a 7x11 baking pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
3. Pour into the bowl the applesauce, oat milk, vanilla, honey and oil.
4. Mix the mixture until just combined.
5. Fold in the carrots, raisins and walnuts.
6. Bake for 45 to 60 minutes or until a toothpick inserted comes out clean. Let cake cool completely before frosting!
7. Make the frosting: combine cream cheese and honey until very smooth, scraping down the sides occasionally.
8. Frost the cake and sprinkle with something.
9. Store frosted cake in the fridge.

HEALTHY CARROT CAKE RECIPE
(makes 12 large or 15 small squares)
Ingredients:
1.5 cups ground oats, or oat flour (150g)
1 cup spelt flour (125g)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
3 large eggs
1/3 cup + 2 tbsp maple syrup (100ml)
1/2 cup unsweetened applesauce (130g)
2 tbsp melted butter
1/2 cup Greek yogurt (125g)
1/2 cup chopped walnuts (65g)
2 cups grated carrots (250g)
1.5 cups Greek yogurt, strained (375g)
1 cup heavy cream (240ml)
3 tbsp honey
1 tsp vanilla extract
NUTRITIONAL INFO (per large square):
255 calories, fat 11.8g, carb 28.1g, protein 10.4g
Preparation:
Preheat the oven to 350F (180C). Line and coat a standard half sheet pan with cooking spray.
In a large mixing bowl, whisk together oat flour, spelt flour, baking powder, baking soda, salt and cinnamon until well combined.
Add the eggs, maple syrup, applesauce, melted butter and Greek yogurt into the same bowl of dry ingredients. Whisk until well combined, but avoid over-mixing the batter.
Stir in the grated carrots and chopped walnuts into the batter.
Pour the batter into the prepared sheet pan and smooth the top with a spatula.
Bake the cake for about 25 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool completely.
For the frosting, combine strained Greek yogurt, honey and vanilla extract in a mixing bowl. In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the Greek yogurt mixture.
Slice the cooled cake in half to form two layers. Spread a generous amount of frosting over the first layer, and then place the second layer on top. Cover the entire cake with the remaining frosting.
Chill the cake in the fridge for a few hours or overnight to allow the frosting to set.
Slice the chilled cake into 12-15 equal pieces and serve.
