How To make Applesauce Bran Muffins
1 1/4 c ALL PURPOSE FLOUR
3 ts BAKING POWDER
1/4 ts SALT
2 tb SUGAR
1 c WHOLE brAN CEREAL
1 ea LARGE EGG
1/3 c MILK
2/3 c APPLESAUCE
1/4 c BUTTER, MELTED
Stir together flour, baking powder, salt, sugar and bran cereal. In another bowl beat egg well and then add milk, applesauce, and melted butter. Mix the egg mixture and flour mixture just until they are well blended. Divide the batter among 12 greased muffin tin cups. Each cup should be about 2/3 full. Bake at 400 degrees F for about 20 minutes. You can test to see if the muffins are done by sticking a toothpick into the center of them. If the toothpick comes out clean, the muffins are done. Otherwise, let them bake for another 5 minutes and try again.

INGREDIENTS
1 ⅔ cups (250 g) all-purpose flour
¾ cup (75 g) oat bran
¾ cup (50 g) wheat bran
1 Tbsp (9 g) baking powder
1 tsp (5 g) baking soda
½ tsp (1.5 g) ground cinnamon
¼ tsp (0.75 g) ground nutmeg
1 cup (250 mL) applesauce
½ cup (125 mL) maple syrup
¼ cup (60 mL) vegetable oil
2 large eggs
1 cup (150 g) raisins
DIRECTIONS
1. Preheat the oven to 375 ºF (190 ºC). Line mini muffin tins with paper liners.
2. In a large mixing bowl, stir together the flour, oat bran, wheat bran, baking powder, baking soda, cinnamon and nutmeg.
3. In a separate bowl, whisk together the applesauce, maple syrup, oil and eggs. Add this to the flour mixture and stir until evenly blended. Stir in the raisins. Scoop or spoon the batter into the prepared mini muffin tins and bake for about 12-14 minutes, until a tester inserted in the centre comes out clean. Cool the muffins in the tin for 10 minutes, then turn them out to cool completely.

Specials Applesauce Spice Bran Muffins
Bran Muffin Bites | Power Foods for Healthy Kids
Ingredients:
• 1 cup water, or 1 cup apple juice
• 2 cups All-Bran cereal
• 1/4 cup canola or olive oil
• 1/4 cup applesauce, unsweetened
• 1 cup sugar
• 2 large eggs
• 2 containers plain Greek yogurt (5 oz each)
• 2 1/2 tsp baking soda
• 1 1/2 cup flour, whole wheat
• 1 cup flour, all-purpose
• 1 ½ teaspoons cinnamon
• 1/2 teaspoon salt
• 1 cup All-Bran cereal
• Optional, large grain raw or Turbinado sugar to finish tops
Directions:
1. Preheat oven to 400 degrees F.
2. Boil 1 cup of water or juice.
3. Mix boiling water or juice and 2 cups All Bran cereal together in a bowl. Set aside.
4. Mix together oil, sugar, applesauce and eggs. Add yogurt and mix well.
5. Mix oil-applesauce-egg-yogurt mixture into cereal-liquid mix set aside earlier.
6. Using a separate bowl or paper plate, mix together dry ingredients: baking soda, flours, and salt.
7. Mix dry ingredients into liquid All Bran and water/juice mixture.
8. Lastly, add 1 cup of dry All Bran cereal. Mix until blended.
9. Spray a mini-muffin or regular muffin tin with non-stick spray.
10. Fill each tin 3/4 of the way full of batter. Using an ice cream scoop with a quick release handle speeds filling tins and helps muffins come out more uniform in size and look.
11. Bake for 10-12 minutes for mini muffins and 13-15 minutes for regular size muffins or until the muffins bounce back.
12. For a nice optional finish with a bit of added taste, take muffins out of oven half-way through baking time and dust lightly with large grain raw sugar. Return to oven to finish baking.
