How To make Cran Apple Streusel Bread
1 lb Loaf frozen bread dough, or
-1 loaf homemade Wt 1 cn Cinnamon apple pie filling
-(21 oz) 1 c Cranberries, fresh or
-frozen, whole 1 tb Orange juice
1 tb Grated orange
-peel(zest)colored part only 1 ts Lemon juice
1 ts Apple pie spice
Streusel Topping 1/4 c Milk (approx)
3/4 c Walnuts, chopped, divided
-use Glaze, optional 1/4 c Flour, all purpose
1/4 c Sugar
2 tb Brown sugar
1/2 ts Cinnamon, ground
1/4 c Butter, softened
This recipe is shaped like a wreath or individual loaves for gift giving. Cranberries, fresh fruit, nuts and spices combine bright color and a refreshing flavor for a holiday favorite. A nutty streusel topping and a sweet hint of glaze complete the picture. Preliminaries; Thaw frozen bread dough until pliable according to package directions. Fifteen minutes prior to baking, preheat oven to 350 degrees. In a large bowl, mix apple pie filling with cranberries, orange juice, orange peel, lemon juice and apple pie spice. Set aside. Prepare Streusel topping (recipe follows). Cut loaf into 3 even pieces. On a lightly floured work surface roll out each piece of dough into a 8 by 7 inch rectangle. Cut the dough with kitchen shears to obtain the correct measurement if needed. Place on baking sheet. Make 2 inch long cuts at 1 inch intervals on both of the 7 inch sides of dough rectangle. Spread 1 cup of cran-apple mixture lengthwise down center third of dough. Top filling with 1/4 cup walnuts. Fold strips diagonally over filling, overlapping strips to give a braided look. Brush dough strips with a little milk and 1/4 cup streusel mix. Repeat with remaining 2 pieces of dough. Let rise for 30 minutes in warm place. bake in preheated 350 degree oven for 25 to 30 minutes, covering with aluminum foil after 20 minutes to prevent over-browning. Remove bread from baking sheet to cool. Bread may be drizzled with glaze, if desired (recipe follows) GLAZE; Mix 1/4 cup powdered sugar with 1 tsp milk; stir until blended. StrEUSEL TOPPING Procedure; In a medium bowl combine flour, sugars and cinnamon; stir until well mixed. Cut in butter using a pastry cutter until butter is the size of small peas. Cranberry - Apple Streusel Bread
Streusel:
(Makes enough streusel for 2 loaves)
8 tablespoons butter, melted
1/3 cup granulated sugar
1/3 cup dark brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground cardamon
¼ teaspoon salt
1 ¾ cup all purpose flour
In a bowl, whisk together the sugars, cinnamon, allspice cardamon and salt. Add in the melted butter and whisk again to combine.
Add in the flour and mix until crumbs form. Place in refrigerator for 15-20 minutes.
Batter:
1 cup apples, peeled, cored and diced
1 cup fresh or frozen cranberries, coarsely chopped
Zest of 1 orange
2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon salt
3 tablespoons of butter or shortening
¾ cup orange juice
1 egg, well beaten
Preheat oven to 350 degrees F. In a bowl mix together the flour, sugar, baking powder, baking soda and salt.
Add in the butter and mix until small, pea size lumps form.
Stir in the beaten egg, orange juice and zest. Mix just to combine and moisten the ingredients. Fold in the apples and cranberries.
Spoon into a well-greased loaf pan and bake for 60 minutes. Let cool for 30 minutes before removing from pan.
Drizzle with glaze and let glaze set for 10 minutes.
Glaze:
1 cup powdered sugar
1 teaspoon vanilla extract
2 teaspoons water
In a small bowl combine the sugar, vanilla and water. Whisk together until smooth. If the glaze is too thick to drizzle add in another teaspoon water until desired consistency for drizzling is achieved.
*Baker’s Goop
(homemade pan release)
1 cup all purpose flour
1 cup shortening
1 cup oil
Place all ingredients in a mixing bowl and mix until smooth
Pour into a jar with air tight lid
Store in refrigerator until ready to use
With a pastry brush dip into goop and apply a thin coat onto your cake pans before baking.

4. Heat apples, sugar, orange zest, orange juice, corn starch & lemon juice until almost tender
5. Add cranberries
6. Cook until apples are soft. Allow mixture to cool completely on a lined baking sheet
7. Combine flour, sugar & cold butter for the topping. Fill thawed pie shell & top with crumble
8. Bake for 40 minutes or until fruit is bubbly and topping is golden
3. Allow pie to cool completely before serving
10. Enjoy!
