CAKE:
1/3 c Puritan Oil
3/4 c Sugar
2 Eggs
3/4 c All-purpose Flour
1/2 ts Baking Powder
1/4 ts Salt
1/4 ts Baking Soda
1/4 ts Nutmeg
1/4 ts Ground Ginger
1 c Finely Chopped Peeled Apple
TOPPING:
2 tb Sugar
2 tb Finely Chopped Walnuts
1/2 ts Cinnamon
Heat oven to 350`F. FOR CAKE, combine oil and sugar in large bowl at medium speed of electric mixer. Add eggs. Beat well. Combine next 6 ingredients. Add to oil mixture. Beat until just blended. Stir in apples. Spread evenly in ungreased 9 x 9 x 2-inch pan.
FOR TOPPING, combine sugar, nuts, and cinnamon. Sprinkle over batter. Bake at 350`F for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cut into 3 x 2-1/4-inch rectangles. How to make the fluffiest apple cake ever!INGREDIENTS
5 eggs, separated;
200g (1 ½ cup) all-purpose flour;
150g (⅔ cup) sugar;
80g (⅓ cup) butter, melted;
100ml (⅓ cup+2 tbsp) apple juice;
2 apples, sliced;
16g (1 tbsp) baking powder;
Powdered sugar for serving.
METHOD
Beat egg yolks with sugar until pale, add melted butter and apple juice.
In a separate bowl whisk flour with baking powder.
Add dry ingredients into the liquids and mix to combine.
Beat egg whites until stiff peaks form.
Fold them in and pour the batter into a 16 cm baking pal. Top with apple slices.
Bake at 160C/320F for 1 hour. Let cool down before slicing and dust with powdered sugar.

*** The recipe: (baking pan size: 20cm / 8 inches)
2 / eggs
65g / granulated sugar (4+1/2 tablespoons)
8g / vanilla sugar ( 1/2 tablespoon)
A pinch of salt
Mix well
100ml / milk (1/2cup - 1 tablespoons )
40ml / vegetable oil ( 3 tablespoons)
80g / all-purpose flour (1/2 cup)
10g / baking powder ( 1,5 tablespoons)
Mix well
1 teaspoon / orange zest
3-4 / sweet apples
Pour into the batter and mix well!
Bake in the preheated oven at 180 ° C / (356 ° F) for 50-55 minutes!

Why You Should Cool Your Sponge Cakes Upside Down
Chiffon Cake (yield: two 8-in round layers)
1.75 c (210g) cake flour, sifted
1.5 tsp baking powder
1/2 tsp fine salt
3/4 c (150g) sugar
1/2 c (100g) vegetable oil
6 egg yolks
1/2 c (113g) water
1.5 tsp vanilla
6 egg whites
pinch of cream of tartar
1/2 c (100g) sugar
1. Whisk together the oil, yolks, water, and vanilla in a mixing bowl.
2. Add cake flour, baking powder, salt, and first sugar and whisk to combine.
3. In the bowl of a mixer, whisk the egg whites with a pinch of cream of tartar until frothy. Add the second sugar one tablespoon at a time and continue to mix on medium-high speed until medium peaks form.
4. Gently fold the meringue into the first mixture.
5. Evenly distribute the cake batter between two 8-in cake pans that have been prepared with only a circle of parchment paper on the bottom (no grease!)
6. Bake at 350F for 30-35 minutes or until golden brown and a toothpick comes out clean.
7. Remove from the oven and let the cakes cool upside down on a sheet of parchment.
8. Once completely cool, remove the cakes from the pan.
