We’re stuffing my easy apple pie filling and Wood River Creamery Original — a unique cheese that has the bold flavor of Cheddar combined with the butteriness of Gruyere — into a pre-made pie crust to make hand held pies that will surely satisfy both the sweet and savory lovers in your life.
Whether you’re making a dessert like these pies or YOUR favorite cheesy dish, all of Wood River Creamery cheeses are one-of-a-kind and can make any dish extra special, because of their awesome flavors and meltability.

Apple Cheddar Gruyere Hand Pies Recipe
Serves: 16 hand pies
Prep time: 30 minutes
Total time: 1 hour
Apple Filling
1 tablespoon unsalted butter
2 tablespoons apple juice, divided
1 teaspoon vanilla extract
2 cups apples, about 2 medium granny smith apples peeled and cubed
1/2 teaspoon cinnamon
1/4 cup brown sugar, packed
1/4 teaspoon salt
1/2 tablespoon cornstarch
Apple Cheddar Gruyere Hand Pies
2 (14.1 oz) boxes refrigerated pie dough, thawed according to package directions (1 box should contain 2 (9-inch) crusts)
8 oz Wood River Creamery Original Cheddar Gruyere cheese, shredded
1 large egg, lightly beaten
8 teaspoons coarse turbinado sugar
Apple Filling
Melt butter over medium heat in a medium sized sauce pan.
Stir in 1 tablespoon apple juice, vanilla, apples, cinnamon, brown sugar, and salt.
Bring to a simmer, then cook, stirring occasionally, for 5-10 minutes or until the apples have softened.
In a small bowl, whisk together cornstarch and remaining 1 tablespoon apple juice. Slowly stir into the apple mixture.
Continue simmering until the mixture has thickened (it should happen almost immediately). Set aside.
Apple Cheddar Gruyere Hand Pies
Preheat oven to 425 degrees F and line 2 rimmed baking sheets with silicone baking mats. Set aside.
Cut 4 (4.5 inch) rounds from each sheet of pie dough, place 8 onto each of the prepared baking sheet, then flatten each round slightly.
Place a heaping 1/2 tablespoon of apple pie filling into the center of each of the 16 rounds, then top each with 1/2 oz shredded Wood River Creamery Original Cheddar Gruyere cheese.
Use your finger to wet the outside of each pie round with water, then fold pie crust in half and press the two seams together.
Use a fork to gently press the seams together further.
Brush the tops with the beaten egg, then sprinkle each with 1/2 teaspoon coarse turbinado sugar.
Bake in preheated oven for 20 mins, or until golden brown.
Let cool for 5-10 minutes before eating!

My mom gets credit for this idea; she’s the one who first attempted it way back when I was kid. Although she didn’t leave a recipe for it, the memory of an apple pie made with this crust has stuck with me all these years. It was a pleasure working through the concept and making a number of pies along the way to get it just right.
We’re thinking you’ll have no problem making this straightforward pie dough recipe, and even first-time pie makers will find the process a breeze. Nice thing about the flaky, buttery crust is that you’ll be able to use it to make MOM’S APPLE PIE or any other pie that might taste better with a hit of cheese.

STARTING POINT
This photo of the ingredients needed to make this crust mirrors our ALL-BUTTER PIE CRUST, the one noticeable difference being the cheddar cheese. Remember when you go to make the dough that the butter needs to be cold when you begin. This will help keep the crust light and flaky.
COLD LIQUID
I always start with the wet ingredients when I make this pie dough. Don’t miss the key step of adding ice cubes after you've stirred together the water, egg and vinegar. That cold liquid really chills the butter and flour mixture when you bring the dough together.
CHEESE
Although I truly believe other cheeses may work in this recipe, I’ve only made it using cheddar. Getting this crust to work perfectly with MOM’S APPLE PIE was my goal, and now with this accomplished, let the experimentation begin. I’ll keep you posted on my upcoming best cheesy practices.
WRAP AND CHILL
It’s important to chill your pie dough for at least eight hours after making it. This gives the gluten a chance to relax before you roll out the dough to create your shell and crust. Once you’re ready to roll, try not to overwork it - this keeps those pockets of butter intact until they melt quickly in the hot oven, leaving you with a beautifully tender, flaky crust. That’s your goal.

My family always has had a special relation with pie: Pie is an excuse to serve and eat cheese. Whether it is apple, blueberry, or even pumpkin pie, my family loves to serve cheese, a good sharp cheese, with pie. And I have found that sharp cheese especially goes well with apple pie.
So for this recipe I am taking this love of having cheese with pie a step further. I include cheese in the filling and also on top of the crust. I find the tartness of the apple pairs very well with the sharpness of the cheese. So give it a try and see if you too love cheese with your apple pie.

CHEDDAR crust APPLE PIE | Thanksgiving Savory & Sweet Dessert | Kravings
Cheddar crust Apple Pie makes a perfect Thanksgiving savory & sweet dessert. Cheese and Apples are a match made in heaven and this combination of savory and sweet, make for a delicious and unique pie.

Here are the ingredients and steps to make this recipe!
Pie Dough
10 oz, 284 gms sifted all purpose flour
4 oz, 113 gms grated butter
120 ml ice cold water
1 cup grated cheese
1 tsp baking powder
1 tsp salt
Filling
4 – 5 apples (900 gms peeled and sliced)
1 tbsp brown suger
55gms, 2 oz, 1/2 stick butter
2 tbsps Cornstarch
Juice of a Lemon
¼ cup crushed Walnuts
Egg Wash
Add the flour, baking powder and salt
first followed by the butter and mix everything together till the flour is crumbly
Add the cheese
Add the water all at once and knead
Cover and chill in the fridge for 30 mins
Heat the butter and sugar together and cool
Peel, core and slice the apples and pour the cooled butter mixture, cornstarch, lemon juice and walnuts and mix
Divide the dough into two portions, one slightly larger and roll it out till it’s about .5mm thick
Butter your pie plate, and add the bottom of the pie crust and score it.
Re roll the rest of the dough and cut leaf shapes out of it
Pour in the apples
Add the leaves over the apples and pinch them to connect and brush with beaten egg
Bake in a 350 degree oven for 60 minutes
