INGREDIENTS:
4 cod fillets (6–8 oz. each)
1 tsp. salt
1/2 tsp. black pepper
1 cup buttermilk
1/2 cup garlic-herb seasoned bread crumbs
1/2 cup sliced almonds, chopped
1/4 cup grated Parmesan cheese
1/4 cup vegetable oil
EASY STEP-BY-STEP INSTRUCTIONS:
1. Sprinkle each cod fillet evenly with the salt and pepper. Place the fillets in an ungreased 13- x 9-inch baking dish. Pour the buttermilk over the fillets. Combine the bread crumbs, almonds and Parmesan in a shallow dish. Mix well.
2. Heat a large nonstick skillet over medium-high heat. Add the oil. Heat until the oil is hot, but not smoking.
3. Dip each cod fillet into the bread crumb mixture, pressing the coating firmly into the surface of the fillets.
4. Place the cod fillets in the skillet. Cook until golden, 3–4 minutes. Carefully turn the fillets over. Cook until the cod is done, 3–5 minutes longer.

Almond Crusted Snapper
This fish dish is sure to impress even non-fish lovers. Magnificently simple and packed with flavour, this snapper is coated in a scrumptious herby, butter toasted almond crust and served with roasted cabbage wedges. Make dinner easier by preparing the almond topping in advance!
Serves: 4 Prep time: 5 minutes Cooking time: 35 minutes

INGREDIENTS
2 tsp paprika
½ cabbage, sliced into 3cm wedges
1 cup almonds, roughly chopped
2 cloves garlic, minced
1 Tbsp fresh thyme leaves
2 Tbsp fresh parsley, roughly chopped
4 snapper fillets
METHOD
Preheat your oven to 180ºC fan bake.
In a small bowl, mix together a generous drizzle of olive oil, paprika, salt and pepper. Place cabbage wedges on a lined baking tray, then pour the paprika mixture over the top. Bake in the oven for 20-25 minutes, or until tender and the edges are browned and crispy, turning halfway through.
Meanwhile, bring a frying pan to medium heat with a knob of butter. Toast the almonds for a few minutes or until lightly browned, then transfer to a bowl. Allow to cool slightly before stirring in the garlic, thyme, parsley, salt and pepper.
Place snapper fillets onto a lined baking tray and lightly brush with oil or melted butter. Season with salt and pepper, then gently press the almond topping onto each fillet. Place in the oven to bake for 8-10 minutes or until cooked through.
Serve the fish alongside the roasted cabbage wedges and enjoy.
Top tip: Make a buttermilk dressing for your deliciously roasted cabbage, by mixing 150g of buttermilk with the zest and juice of one lemon, a few tablespoons of olive oil, salt and pepper. Drizzle over a generous amount just before serving.

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.
