How To make All In One Sausage And Zucchini Casserole

zucchini, cut into 1/2-inch cubes

garlic cloves, chopped

onion, sliced

long-grain rice

can whole tomatoes (14 1/2 ounce), chopped

teaspoon
fennel seed
1/2
teaspoon
red pepper flakes
1
tablespoon
basil, fresh, finely chopped
1
tablespoon
rosemary, fresh, finely chopped
1
pepper, freshly ground

cup
chicken broth OR stock
1
cup
parmesan cheese, freshly grated
Directions:
Preheat oven to 375 degrees. Heat the oil in a large 5 quart Dutch oven. Add the ground chuck and sausage. Brown. Drain and set aside.
In the Dutch oven in the oil, saute the zucchini, garlic, and onion until soft and translucent. Add the rice and cook until opaque, about 2 minutes. Add the tomatoes, fennel, red pepper flakes, basil, rosemary, salt, pepper, and chicken broth. Heat through until just to the boil. Stir in the meat.
Transfer to a rectangular baking dish. Top with the parmesan cheese and bake 1 hour. Top with additional parmesan cheese if desired, when served.
Maybe made 1 to 2 days ahead. The casserole freezes. Defrost and reheat.

Easy to make Sausage and Zucchini Casserole recipe!
Ingredients:
Minced Italian sausage (1 Pound)
Zucchini (1)
Cherry Tomatoes (1/2 Cup)
Salt and Pepper (1/2 Teaspoon Each)
Shell Pasta
Shredded Cheese (Gruyere and Cheddar) (1 Cup Each)
Parsley (For Garnish)
Directions:
1. In a non stick skillet, cook the minced sausage on medium heat for about 5-7 minutes or until it becomes crumbly.
2. Shred one large zucchini and add to the sausage.
3. Chop cherry tomatoes in half and add to the sausage mix. Cook everything together for another 3 minutes.
4. Cook shell pasta for about 12 minutes or until al dente.
5. Combine the pasta and the sausage mix in a deep casserole/lasagna baking dish.
6. Shred the cheese and add to the baking dish.
7. Set the casserole in the oven 350º for 20 minutes.
8. Take it out of the oven and garnish with fresh chopped parsley.

We love growing tromboncino squash. Its essentially an Italian vining zucchini and its delicious, however, using them can be a bit intimidating for some because its such a large vegetable when you harvest it. This zucchini and sausage pasta is a great way to use part of a tromboncino or any variety of zucchini.
Ingredients:
1 pound Italian sausage
2 zucchinis
salt, pepper and garlic powder to taste
1 to 1 1/2 cups heavy cream
3/4 to 1 cup Parmesan cheese
1 pound pasta of your choice

Low Carb Skillet Sausage and Zucchini Recipe
Low carb, minimal clean up, and ready in under 30 minutes, this is a slam dunk healthy recipe anyone can make.
4 chicken sausages, fully cooked and sliced
2 medium zucchini, sliced
6 cloves garlic
1 medium onion, diced
1 red bell pepper, diced
2 roma tomatoes, diced
1/2 cup low-sodium chicken broth
1 tbsp ground cumin
1 tbsp dried basil
1 tbsp dried minced onion
1 tbsp freshly ground pepper
2 tbsp butter
1 tbsp olive oil
Salt and pepper to taste
Preheat the oven to 375 degrees. Take a chefs knife and lie flat against a garlic clove. Carefully press down until the clove slightly collapses. Remove outside skin and place the garlic cloves on a foil wrapped baking sheet.
Drizzle olive oil over the garlic and add dried onion and dried basil. Wrap garlic in foil and place in the oven for 40-45 minutes.
Let the garlic cool for 5-10 minutes and then take the chef knife and mince the roasted garlic. Set aside.
Melt butter in a large skillet and add the cooked sausage, browning slightly. Add onion and cook for another 5 minutes.
Add zucchini, red bell pepper, tomatoes, roasted garlic, chicken broth, cumin, and ground pepper and bring to a simmer. Stir every couple minutes until the chicken broth and water from the zucchini has evaporated, or until the outside of the zucchini is tender but the middle is still a little firm, about 10-15 minutes.
Remove from heat and allow the skillet to cool for at least 5 minutes before serving over a bed of rice, cauliflower rice, or on its own. Enjoy!
