Today we’re talking ice cream cake, undeniably the perfect dessert. While this can mean several things (all ice cream, some with cake, Fudgy the Whale), here I start with a base layer of fluffy, tender chocolate cake, then a thick slab of mint chocolate chip ice cream (you can use your favorite but I will judge you if it’s not mint and chip) and topped with a dramatic swoosh of barely sweetened whipped cream. Come for the ice cream cake and stay for the bonus cake frosted with a decadent Salty Vanilla Frosting.

Chocolate Fudge Ice Cream Cake
Here is what you'll need!
CHOCOLATE FUDGE ICE CREAM CAKE
Serves 12
INGREDIENTS
Brownie Base
½ package of brownie mix
Corresponding ingredients according to box instructions (egg/oil/water)
Chocolate Mousse Ice Cream Layer
1 cup heavy whipping cream
2 bars dark chocolate, broken into small pieces (we used 72%)
3 egg yolks
3 beaten egg whites
¼ cup granulated sugar
Garnish
½ bar of white chocolate
toothpick
PREPARATION
1. Preheat the oven to 350°F/180°C.
2. In a large bowl, combine brownie mix, egg, oil, and water until creamy.
3. Pour the brownie batter into a parchment-lined springform pan.
4. Bake for 25-30 minutes, until center no longer wobbles.
5. Leave the brownie base in the pan to cool completely.
6. Whip the heavy cream until it makes soft peaks. Set aside.
7. Separate the eggs and beat the egg whites until blended.
8. Pour water into a saucepan about half-full, and bring to a gentle simmer.
9. Place a heat-safe bowl over the pot of simmering water. (The bowl should be bigger than the saucepan, so that the bottom of the bowl doesn’t come in contact with the simmering water.)
10. Add the chocolate pieces to the bowl and stir frequently until smooth (make sure the water isn’t boiling, or you can burn the chocolate). Set aside.
11. In a second heat-safe bowl, whisk the egg yolks until blended.
12. Just like with the chocolate, place the bowl with the egg mixture on top of the gently simmering water, whisking heavily for about 2 minutes until it has a lighter color and a creamy texture. Set aside.
13. Whisk granulated sugar into the egg mixture. Slowly stir in the melted chocolate.
14. Carefully fold in the egg whites and the whipped cream until blended.
15. Spread the chocolate mousse over the cooled brownie base in the springform pan.
16. In a glass bowl, microwave the white chocolate in 15 second increments and stir until melted.
17. Pour the white chocolate into a plastic bag, cut off the tip and drizzle white chocolate all over the cake.
18. Using a toothpick or skewer, swirl white chocolate into the mousse in small circular motions to make a marbled pattern.
19. Freeze overnight.
20. Enjoy!

This super easy copycat Dairy Queen ice cream cake is one of the best frozen desserts to enjoy in the summer! You can’t go wrong with layers of chocolate and vanilla ice cream, crunchy cookie, hot fudge sauce, and whipped cream.

INGREDIENTS
Ice Cream Layer
1 quart chocolate ice cream
1 quart vanilla ice cream, (I used vanilla bean)
Cookie Layer
20 crushed chocolate sandwich cookies, (with the cream center)
4 tablespoons salted sweet cream butter, melted
Hot Fudge Layer
1 (11.75-ounce) jar hot fudge topping
Whipped Cream Frosting Layer
2 cups cold heavy cream
1¼ cups powdered sugar
1½ teaspoons clear vanilla flavoring
Colorful sprinkles, (optional garnish)
INSTRUCTIONS
Line a 9-inch springform pan with plastic wrap. Set it aside.
Heat the oven to 350°F. Line a 10×15-inch baking sheet with parchment paper. Set it aside.
Add the crushed chocolate sandwich cookies to a small mixing bowl.
Stir in the melted butter until completely combined.
Evenly spread the coated cookie crumbs on the lined baking sheet. Bake for 7 to 8 minutes. Remove from the oven and allow the cookie crumbs to cool completely.
While the cookie crumbs are baking, remove the chocolate ice cream from the freezer and allow it to thaw. This will make spreading the ice cream into the pan much easier.
Once the ice cream has thawed for 15 to 20 minutes, evenly spread the layer of chocolate ice cream into the bottom of the springform pan in an even layer. Place it back in the freezer for 30 minutes to 1 hour.
Just before you are ready for the hot fudge layer, remove the lid to the hot fudge and place it in the microwave for 20 to 25 seconds. This will soften the hot fudge, making it easier to spread on top of the chocolate ice cream layer.
Using either a silicone spatula or an offset spatula, evenly spread the hot fudge over the top of the chocolate ice cream layer.
Evenly sprinkle the baked cookie crumbs over the top of the fudge layer.
Return to the freezer for 1 hour.
About 15 to 20 minutes before you are ready to spread the vanilla ice cream layer, remove the vanilla ice cream from the freezer to thaw slightly.
Remove the springform pan from the freezer, and evenly spread the vanilla ice cream on top of the cookie layer. Return the springform pan to the freezer for 4 to 6 hours, or overnight.
Around 30 minutes before you are ready to “frost” the ice cream cake, if you are using a stand mixer, place the metal bowl in the freezer. If you are using a handheld mixer, place your mixing bowl, preferably a metal mixing bowl, in the freezer for 30 minutes.
Remove the bowl from the freezer, add the heavy cream, powdered sugar, and clear vanilla flavoring. Beat on medium, just until the powdered sugar is incorporated, then beat on high until stiff peaks form, about 3 to 4 minutes.
Separate out 1 cup of whipped cream frosting and place in either a decorator’s piping bag fitted with a large star tip.
You will need to work quickly, especially if the weather is warm. Remove the ice cream cake from the freezer.
Remove the outer edges of the springform pan. Using either a cake lifter or a large sturdy spatula, remove the plastic wrap and place the ice cream cake on either a serving platter or a round decorator's board.
Using either a silicone spatula or an offset spatula, quickly frost the sides and top of the ice cream cake.
Using even pressure, holding the decorator's piping bag a ½ inch above the edge of the top of the cake, pipe either a shell pattern or swirl pattern around the edge of the ice cream cake.
Evenly sprinkle the colorful sprinkles on the top of the ice cream cake.
Place the cake back into the freezer until you are ready to serve.

Ingredients:
Prepare Brownie layer:
-Boiling water
-Compound chocolate 180g
-Makhan (Butter) 180g
-Maida (All-purpose flour) 1 & ½ Cup
-Cocoa powder ¼ Cup
-Namak (Salt) ¼ tsp
-Baking powder 1 & ½ tsp
-Instant coffee 1 tsp
-Bareek cheeni (Caster sugar) ½ Cup
-Vanilla essence 1 tsp
-Olper’s milk ¾ Cup
Prepare Whipped Cream Layer:
-Ice cubes
-Olper’s Cream chilled 250ml
-Icing sugar ¼ Cup
-Vanilla essence ½ tsp
Prepare Chocolate Ganache:
-Compound chocolate 100g
-Olper’s Cream 100ml
-Compound chocolate
Directions:
Prepare Brownie Layer:
-On a double boiler,place a bowl,add compound chocolate,butter and mix well until chocolate melts.
-Remove from double boiler,place a sifter,add all-purpose flour,cocoa powder,salt,baking powder, instant coffee & sift all dry ingredients together.
-Add caster sugar,vanilla essence & whisk well.
-Add milk & whisk well.
-On greased baking dish (7 x 10 inch) lined with butter paper,pour prepared batter and spread evenly.
-Bake in preheated oven at 180C for 20-22 minutes or until skewer comes out clean.
-Take out from oven & baking dish,place on a wire rack & let it cool.
Prepare Whipped Cream Layer:
-In a large bowl,add ice cubes & place another bowl over it,add cream & beat well.
-Add icing sugar,vanilla essence & beat until stiff peaks form & transfer to a piping bag.
Prepare Chocolate Ganache:
-In a jug,add compound chocolate,cream & microwave for 40-60 seconds then mix well & set aside.
-On a serving dish,place chocolate brownie,add prepared olper’s whipped cream & spread evenly.
-Add chocolate ganache & spread evenly.
-Garnish with grated compound chocolate & refrigerate until chilled.

-Large bowl mein ice cubes dal dein aur upper sa ek aur bowl rakh dein aur cream dal ker ache tarhan beat ker lein.
-Icing sugar ar vanilla essence dal dein aur stiff peaks form hunay tak ache tarhan beat ker lein aur piping bag mein dal dein.
Prepare Whipped Cream Layer:
-Jug mein compound chocolate aur cream dal ker 40-60 seconds kliya microwave ker lein phir ache tarhan mix karein & side per rakh dein.
-Serving dish mein chocolate brownie rakh ker tayyar olper’s whipped cream dal ker evenly pheela lein.
-Chocolate ganache dal ker evenly pheela lein.
-Grated compound chocolate sa garnish karein aur & thanda ho janay tak refrigerate ker lein.
